- Preheat oven to 350 degrees F. In an extra-large bowl, stir together chicken, celery, carrots, sweet pepper, mushrooms, almonds, and pimiento. Add soup to chicken mixture; mix well.
- Transfer chicken mixture to an ungreased 3-quart rectangular baking dish. Bake, covered, for 45 minutes. Sprinkle with chow mein noodles. Bake, uncovered, for 5 to 10 minutes more or until heated through. Makes 8 servings.

- In a small bowl, combine the cornstarch, broth, soy sauce, salt and ginger until smooth; set aside., In a large skillet or wok, stir-fry the mushrooms, celery, onion, pepper and carrot in oil for 5 minutes. Add garlic; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. CHICKEN CHOW MEIN CASSEROLE
Delicious and simple, a real family favorite. This is a great comfort food casserole. I sometimes buy whole chickens that have already been roasted at the grocery store when they have them on special. It cuts down on the time in case you don't have already cooked chicken. Also, I serve this with white rice and more chow mein noodles on the side and frozen egg rolls when I find them on sale.

- Saute onion and celery in butter.
- Add soup, broth, soy sauce, hot pepper sauce and pepper. Stir in chicken and simmer 5 minutes.

CHICKEN CHOW MEIN CASSEROLE
This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

- Preheat the oven to 375F. Lightly spray the inside of a 9 by 13-inch casserole dish with cooking spray.
- Add the butter to a large, deep skillet over medium heat. Once melted, add the celery, carrot, red bell pepper, and onion, and turn the heat up to high. Cook, stirring constantly until the vegetables are starting to soften, about 3 to 5 minutes.
- Turn the heat back down to medium. Add the garlic and cook 30 seconds, stirring constantly.
- Add the condensed cream of chicken soup, milk, soy sauce, and black pepper. Stir to combine.
