Easy chicken casserole that the children will love. Can be made ahead of time and frozen. Great for leftovers.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Boil chicken until cooked through (no longer pink inside), about 20-30 minutes. Chop into bite size pieces and place in a 9x13 inch baking dish.
- Combine soup, sour cream, onion (optional) and mushrooms (optional). Pour mixture over chicken and top with crumbled crackers. Cover and bake at 350 degrees F (175 degrees C) for 30 minutes (or freeze for baking at another time).

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a pot of water to a boil. Add chicken breast and continue to boil until no longer pink in the center, 15 to 20 minutes.
- While chicken boils, bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain.
- Heat oil in a skillet over medium-high heat. Saute mushrooms, basil, and garlic in the skillet for about 5 minutes.
- Drain and chop chicken. Heat soup in another pot over low heat until warm, about 5 minutes. Add chicken, garlic mixture, milk, salt, and pepper.
- Melt butter and add to drained pasta along with the soup mixture. Mix together, put into a casserole dish, and top with Parmesan cheese.
- Bake in the preheated oven until melted and bubbly, about 20 minutes.

CHICKEN CASSEROLE BASE
This base is divided into 3 portions which can be frozen for up to 3 months. It's used as the base for Mustard and Bacon Casserole, Green Curry and Moroccan Style Casserole (all recipes posted here on Zaar). All you do when you arrive home tired from work is add the extra ingredients to the thawed base and you have a great meal for 4 in 20 minutes! What could be easier than that!

Steps:
- Heat the oil in a large pan and brown the chicken in batches until it's all done.
- Set chicken aside.
- Add onions and garlic to pan and cook until onions are lightly browned.
- Stir in flour and cook, stirring, until browned.
- Gradually stir in the stock and add the bay leaves.
- Return chicken to the pan.
- Simmer, covered, for 45 minutes.
- Remove the bay leaves and cool so you can skim off any fat.
- Divide the mixture into 3 portions.
- They can be frozen for up to 3 months.
- They are used as the base for Mustard and Bacon Casserole, Green Curry and Moroccan Style Casserole (all recipes posted here on Zaar).
- All you do is thaw a portion of Chicken casserole base, add the extra ingredients and you have a fantastic fresh meal in 20 minutes!
