BUBBA'S JAMBALAYA
Easy Southern classic, with chicken, sausage, ham, and shrimp.

Steps:
- Heat a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon pieces with a slotted spoon, and set aside. Add celery, bell pepper, and onion to the bacon drippings, and cook until tender.
- Add the ham, chicken and sausage to the pot, and pour in the tomatoes, beef broth and chicken broth. Season with thyme and Cajun seasoning. Bring to a boil, and add the rice. Bring to a boil, then turn the heat to low, cover, and simmer for about 20 minutes, until the rice is tender.
- Stir in the shrimp and bacon just before serving, and heat through. If you use uncooked shrimp, let it cook for about 5 minutes before serving.

Steps:
- Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Saute sausage until browned. Remove with slotted spoon, and set aside. Add 1 tablespoon peanut oil, and saute chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside.
- In the same pot, saute onion, bell pepper, celery and garlic until tender. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire sauce and file powder. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally.
- Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed.

BUBBA HOT DOGS
My son Brandon (aka:Bubba) wanted a special hot dog when he was little once while Granny Peg was in Idaho in 1988 when his little sister was born. Well, our quick thinking granny goes to the fridge and grabs the hot dogs, some left-over mashed potatoes and the grated cheese. And the rest is Burns family history, the Bubba dog was born. They are a STAPLE with our hot dog eating children and grandchildren. I was going to share them with Oscar Mayer weinermobile folks when I won a visit for our town last year, BUT they came while I was in Vegas, so I will share it on justapinch.com instead. :)

Steps:
- Preheat oven to 350 degrees. Slit hot dogs down the center, DO NOT cut them in half, lay them on a foil lined cookie sheet with the split side up.
- Cover the hot dog with the mashed potatoes and sprinkle with grated cheese and salt and pepper.
- Pop them in the oven until cheese is brown and the potatoes and hot dog are heated through. 10-15 mins. Enjoy. :)
BUBBE'S CHICKEN SOUP
Steps:
- In 12-quart heavy pot, combine chicken and enough water to cover, about 8 quarts. Bring to boil, skimming froth. Add onions, carrots, celery, parsnips, sweet potato, and dill, and simmer, partially covered, 3 hours.
- Pour stock through fine-mesh strainer into large bowl, reserving chicken and discarding remaining solids. Refrigerate stock, covered, until completely cool, then skim fat from surface. When chicken is cool enough to handle, remove skin and bones, shred meat, and refrigerate until ready to use.
- In 8-quart heavy pot over moderately high heat, bring stock to a boil. Add salt, pepper, and noodles. Reduce heat and simmer, covered, 4 minutes. Add carrots and celery, and continue simmering until noodles are tender, about 4 minutes. Add shredded chicken and simmer until heated through. Serve hot.
PAULA DEEN'S UNCLE BUBBA'S WINGS
Paula's younger brother, Earl "Bubba" Hiers, is the wing man in the family. He serves about 200 pounds of them every week at Uncle Bubba's Oyster House in Savannah. Paula put her own spin on Bubba's recipe, adding two sauces a Thai inspired dip and a spicy butter. I found ths recipe in the January/February 2010 Food Network Magazine. Please note: Cooking/prep time does not include 24 hour marinating time.

- Prepare the wings: Combine the hot sauce, Cajun seasoning, cayenne and garlic powder in a large bowl and mix well. Add the wings and toss. Cover and refrigerate 24 hours.
- Heat about 2 inches of oil in a deep fryer or deep-sided pot until a deep-fry thermometer registers 350°. Remove the wings from the marinade and drain off excess moisture. Carefully add the wings to the hot oil in batches the oil may splatter) and cook until crisp, about 10 minutes.
- Make the sauces: Whisk the butter and hot sauce in a bowl. Mix the chili sauce and soy sauce in another bowl. Serve with the wings.
BUBBE'S CHICKEN SOUP
This is an "honest to goodness Jewish chicken soup" recipe that has been in my family for years. It is guaranteed to cure whatever ails you, and it is delicious on a cold night. You may use some of the boiled chicken for a chicken salad (check my other recipes) or put it all back into the soup. My mother says it's best when made with a kosher chicken, but I've fooled her on that. Enjoy!

Steps:
- Wash and skin chicken, and place in large soup pot.
- Cover with water and simmer in covered pot for two hours, skimming foam from top of pot.
- Remove and reserve chicken.
- Add vegetables, simmer for another hour.
- Add salt and pepper to taste.
- Some people like to remove the vegetables and strain the soup, but I like to leave them in.
- Chill overnight and scrape fat from surface.
- Reheat and add reserved shredded chicken.
- Serve with noodles or matzoh balls.
