BASIC BRINE FOR SMOKING MEAT

Basic Brine for Smoking Meat image

This is a very basic brine recipe for preparing meats and fish for smoking. Add any personal taste preferences to the brine for additional flavor enhancement. I like to add white wine, soy sauce, and various herbs and spices. Anything that you like will work, so experiment at will.

¼ cup kosher salt
¼ cup packed brown sugar
4 cups water

Steps:

  • In a medium bowl, combine the salt, sugar and water. Whisk vigorously until all the salt and sugar is dissolved. Then pour this mixture over the meat, poultry, or fish that you are preparing. CHICKEN BRINE FOR SMOKING

Chicken Brine for Smoking image

I like to use this Brine for Chicken before I smoke it. A lot of brines call for Sugar, which I feel makes the meat a little too sweet. Using a brine makes a world of difference in how moist the chicken is after smoking. The brine makes the chicken more moist, the optional ingredients add flavor.

Time 11m

Yield 4 serving(s)

Number Of Ingredients 6

1/2 gallon water
1/2 cup salt (They normally say kosher salt, I can't taste the difference)
1 -3 sprig rosemary (optional)
4 -5 garlic cloves (optional)
1 diced jalapeno (optional)
1 tablespoon peppercorn (optional)

Steps:

  • Put water, salt, and optional ingredients in a pot and bring to a boil. As soon as it starts turn off the heat. stir to make sure the salt is fully disolved.
  • Cool the Brine.
  • Add the chicken and Brine in the fridge for 12 to 24 hours. It is if the bird is fully covered by the brine. If this isn't possible, turn occasionally.
  • 1/2 hour before putting in the smoker, take chicken out of the brine and allot it to drip dry. I put it on a cooling rack, on top of a high sided cookie sheet. Make sure the cat's don't sample it.
  • Rub with a Rub.
  • Smoke it at a temp between 200 degrees F and 225 degrees F. A lower temperature will add more smoke flavor and tenderness but take longer.
  • After between 3 and 6 hours (depends on the size, depends on the temp) the Chicken should reach 165. Pull from the smoker.
  • Wrap in Foil and let rest for a minimum of 15 minutes. When I have a longer wait I put it in a cooler to stay warm.

Brined Smoked Chicken image

Soak your birds in this brine for yummy smoked chicken. Well wrapped and refrigerated leftovers will keep for 3 to 5 days.

Provided by LargePete

Categories     Meat and Poultry Recipes     Chicken     Whole Chicken Recipes

Time 6h20m

Yield 12

Number Of Ingredients 10

1 gallon water
1 ¼ pounds salt
⅔ cup white sugar
¾ cup soy sauce
1 teaspoon dried tarragon
1 teaspoon dried thyme
1 teaspoon ground black pepper
2 (3 1/2) pound whole chickens
kitchen twine
¼ cup olive oil

Steps:

  • Pour water into a large, non-aluminum container; add salt and sugar and stir to dissolve. Add soy sauce, tarragon, thyme, and pepper. Place chickens in the brine and weigh them down with a heavy plate so they stay submerged. Brine at room temperature for 2 hours, or in the refrigerator, 8 hours to overnight.
  • Remove chickens from brine, wash, and pat dry. Reserve brine. Tie the legs together of each chicken using kitchen twine.
  • Prepare a water smoker for cooking by preheating to 200 to 250 degrees F (93 to 120 degrees C). Fill the water pan with hot water and half of the reserved brine. Place chickens, breast side up, on the grill racks. Add wood chips according to manufacturer's directions. Cover.
  • Smoke chickens until no longer pink at the bone and the juices run clear, about 4 hours, brushing chickens with olive oil every 2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove from the smoker and let rest for 10 minutes. Carve and serve.

BRINED AND SMOKED CHICKEN THIGHS

Brined and Smoked Chicken Thighs image

Very juicy, tender, and flavorful smoked chicken thighs. My skins got mostly crispy in the smoker. The smoke intensity is mild and the applewood flavor comes through nicely.

Provided by John Somerall

Categories     Smoked Foods

Time 10h35m

Yield 8

Number Of Ingredients 12

6 cups water
1 cup dark brown sugar
1 cup kosher salt
2 tablespoons whole black peppercorns
4 large cloves garlic, mashed
2 large bay leaves
4 (5 inch) sprigs fresh rosemary
1 medium lemon, sliced and seeds removed
8 (8 ounce) bone-in, skin-on chicken thighs
applewood chunks, for smoking
2 teaspoons ground black pepper
1 teaspoon kosher salt

Steps:

  • Whisk together water, brown sugar, 1 cup kosher salt, black peppercorns, garlic cloves, and bay leaves in a large saucepan until sugar and salt dissolve. Turn heat to medium-high and bring to a boil.
  • Carefully pour brine mixture into a large heat-proof container and stir in rosemary sprigs and lemon slices. Place in the refrigerator until completely chilled, about 2 hours.
  • Add chicken thighs to the chilled brine. Place a small plate on top of chicken thighs to ensure they stay submerged, then cover container with a lid or plastic wrap. Refrigerate chicken thighs in brine for at least 6 hours, or up to 24 hours.
  • Open the bottom vent of a grill completely. Light a charcoal chimney starter filled with briquettes. When briquettes are covered with gray ash, pour them onto bottom grate of the grill, and then push to 1 side of the grill. Place 3 to 4 applewood chunks on top of hot coals. Coat top grate with oil; place on grill. Cover and insert an instant-read thermometer into a vent in the lid; maintain a temperature between 225 and 250 degrees F (107 and 120 degrees C) for 15 to 20 minutes.
  • Remove chicken thighs from brine and pat dry with paper towels, removing as much moisture on the surface of the thighs as possible. Sprinkle evenly with black pepper and remaining 1 teaspoon salt.
  • Place chicken thighs on the preheated grill, skin-side up, over the side without coals. Cover and smoke until a thermometer inserted in thickest portion registers 165 degrees F (74 degrees C), about 1 hour 45 minutes to 2 hours.
  • Transfer chicken thighs to a large plate or platter and let rest for 10 minutes before serving.

  • This recipe takes longer than other smoked chicken recipes because you will need to brine the chicken for about 12 hours before you want to start cooking. To start the brining process, boil the water in a large pot that can hold the water and chicken. Add your sugar and salt so these ingredients can be dissolved and then let the water cool down or add ice so you do not cook the chicken in the brine mixture. Then add the rest of your brine ingredients and the whole chicken to the pot and set it in your refrigerator for 10 hours. The brine liquid has to be at a temperature lower than 40 degrees Fahrenheit in order to work properly. Learn more about how to brine a chicken >
  • Next, soak wood chips in water for an hour to two but no longer than two hours. Soaking these wood chips will allow them to smolder and smoke for a long period of time instead of lighting on fire and quickly burning up. You can use any type of wood smoking chips you like, but we recommend a mixture of hickory and mesquite woods.
  • You will want to light your charcoal smoker about 30 minutes before you want to start cooking the brined chicken. You will know when the charcoal is ready when all of the coals turn to a glowing white hot color.
  • While you are waiting for the charcoal to set up, mix all of the smoked chicken rub recipe ingredients together. Then fully coat the chicken inside and outside with the rub seasoning. You can separate the skin and the breast of the chicken by pushing your fingers in between them. Then, you can stuff the seasoning down right on top of the chicken breast meat to add another layer of flavor to your brine smoked chicken.

  • Brine the chicken. Make the chicken brine by dissolving the Tabasco sauce, kosher salt and brown sugar in 1 gallon of water. Once dissolved, submerge the chicken in the brine and refrigerate for at least 8 hours, or overnight. Weigh down your chicken with a plate, if necessary, to keep the whole bird submerged.
  • Fire up the smoker. When you’re ready to cook, preheat your smoker according to manufacturer’s instructions to 225 degrees F. I recommend mild hardwoods like maple or pecan with this chicken.
  • Prep the chicken. While the smoker is preheating, remove the chicken from the brine and pat dry. Rub with Tabasco sauce and season liberally with the BBQ seasoning. Stuff the cavity of the chicken with lemon, onion, and thyme. Tie the legs together.
  • Smoke the brined chicken. Place the brined and seasoned chicken in your smoker and smoke for 2 1/2 to 3 hours or until an instant read thermometer reads 160 degrees F when inserted into the thickest part of the breast.
