2 tablespoons butter
2 yellow onions, sliced
4 skinless, boneless chicken breast halves
4 Borden® Gouda Cheese Slices, or more as needed
1 (4.75 ounce) package seasoned coating mix for chicken

Steps:

  • Melt butter in a skillet over medium-low heat. Add onions and saute until golden brown, stirring frequently. Continue cooking over medium-low heat until onions turn deeper brown, 35 to 45 minutes. If they start to burn, reduce heat. When completely caramelized, remove skillet from heat.
  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.
  • Cut a pocket into the side of each chicken breast. Evenly stuff pockets with 1 or 2 slices of Gouda cheese (depending on size of breast) and 1 tablespoon caramelized onions.
  • Place seasoned coating mix in a shallow dish. Evenly dip each chicken breast in coating mix and place on prepared baking sheet.
  • Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 cup bread crumbs
1 (1 ounce) package dry French onion soup mix
⅓ cup mayonnaise
1 tablespoon garlic paste
4 skinless, boneless chicken breasts

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Mix bread crumbs and dry soup mix together in a bowl.
  • Mix mayonnaise and garlic paste together in a separate bowl. Microwave on high to thin out consistency, 20 to 30 seconds.
  • Brush chicken breasts with the mayonnaise mixture. Cover with the crumb mixture. Place on a baking sheet.
  • Bake on the middle rack of the preheated oven until chicken is no longer pink in the center and juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

4 boneless, skinless chicken-breast halves
Onion Jam
Salt and freshly ground black pepper
1/2 cup dry white wine
1 3/4 cups Homemade Chicken Stock, or low-sodium canned chicken broth, skimmed of fat
2 tablespoons balsamic vinegar
Olive-oil cooking spray

Steps:

  • Place each piece of chicken between two 12-inch squares of plastic wrap. Using a meat pounder, pound to a 1/4-inch thickness.
  • Spread 1/4 cup onion jam over each breast, and fold breast in half. Season both sides with salt and pepper.
  • Coat a saute pan with cooking spray, and set over medium-high heat. Place chicken in pan; cook until golden on bottom, about 2 minutes. Turn, and cook until the other side is golden, about 3 minutes.
  • Add wine, and cook 1 minute. Add stock; reduce heat to medium. Cover; cook until chicken has cooked through, 5 to 6 minutes. Transfer the chicken to a plate.
  • Add balsamic vinegar to pan; turn heat to high. Reduce liquid to 1/2 cup, 7 to 10 minutes. Drizzle sauce over chicken, and serve.

2 tablespoons packed brown sugar
2 teaspoons chili powder
1 teaspoon smoked paprika
1 teaspoon mustard powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 1/4 pounds chicken cutlets (4 to 6)
Kosher salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
4 slices thick-cut bacon, chopped
2 onions, chopped
1 teaspoon chopped fresh thyme
3 tablespoons bourbon
Kosher salt and freshly ground black pepper
2 tablespoons packed brown sugar
1/3 cup apple cider vinegar
1 teaspoon Worcestershire sauce

Steps:

  • Make the chicken: Preheat a grill to medium high and oil the grates. Combine the brown sugar, chili powder, smoked paprika, mustard powder, garlic powder and cayenne in a small bowl.
  • Place the chicken between 2 sheets of plastic wrap and pound with a heavy skillet or the flat side of a meat mallet until an even 1/2-inch thickness. Rub the chicken with the sugar mixture; set aside while you make the onion-bacon jam.
  • Make the onion-bacon jam: Heat the olive oil in a medium dutch oven over medium heat. Add the bacon and cook until crisp, 5 to 7 minutes. Remove to paper towels. Pour out all but about 2 tablespoons fat, then add the onions and cook over low heat, stirring, until caramelized, 20 to 25 minutes. Stir in the thyme and bourbon; simmer 1 minute. Season with salt and black pepper. Stir in the bacon, brown sugar, cider vinegar, Worcestershire sauce and 1/4 cup water; simmer 2 more minutes.
  • Season the chicken with salt and black pepper and grill until browned and well marked, 2 to 3 minutes. Flip and grill until the chicken is cooked through, about 2 more minutes.
  • Top the chicken with the onion-bacon jam.

3 large Spanish onions
2 tablespoons sugar
2 tablespoons balsamic vinegar
Olive-oil cooking spray

Steps:

  • Cut onions in half lengthwise; peel. Cut off ends; cut lengthwise into 1/4-inch-thick pieces.
  • Coat a 13-inch skillet with cooking spray, and set over medium heat. Add onions, and cover. Cook, stirring occasionally, until softened and translucent, about 15 minutes.
  • Add sugar; re-cover. Cook, stirring occasionally, until onions are deep golden, 20 to 30 minutes. Add 1/4 cup water; stir with a wooden spoon to dislodge any brown bits.
  • Cover, and cook until dark brown, 20 to 30 minutes. Add balsamic vinegar and another 1/4 cup water. Continue cooking until liquid has been absorbed, about 10 minutes. Transfer to a bowl to cool. Store, refrigerated, in an airtight container up to 1 week.

1 kg chicken breast
1/2 cup flour
paprika, to taste
ground ginger, to taste
freshly ground black pepper, to taste
1 tablespoon brown sugar
olive oil (for frying)
2 medium onions, coarsely cut up
1/4 cup balsamic vinegar
1 cup water
4 tablespoons brown sugar

Steps:

  • Cut up the chicken into chunks, larger than bite size but not too large.
  • Mix the flour with the paprika, ginger, black pepper and 1 tablespoon brown sugar.
  • Coat the chicken with the flour mixture.
  • Fry the chicken in the olive oil in one layer, turning to brown both sides.
  • You may have to do this in batches, removing the browned chicken to a separate plate.
  • Add some fresh oil to the pot (you can leave in what's in there).
  • Fry the onions, constantly stirring, until caramelized.
  • Add the vinegar (stand back, the vapors can really get you).
  • Then add the water.
  • Keep cooking until the sauce is reduced to a jammy consistency.
  • Add the brown sugar and stir until dissolved.
  • Add the fried chicken pieces and stir to completely coat and heat through.
  • Serve with some plain rice or couscous.
