Time 40m

Number Of Ingredients 11

750 g chicken thighs ((approximately 8 thighs) )
6 strips streaky bacon (chopped)
2 medium leeks (finely chopped)
2 garlic cloves (crushed)
1 tsp fresh thyme ((or ½tsp dried thyme) )
2-3 tsp Dijon mustard
½ cup white wine
1-2 tsp lemon juice
1½ cups cream
½ cup chicken stock
salt and pepper (to taste )

Steps:

  • Preheat the oven to 200°C/390°F.
  • Pat the chicken dry with paper towels then season generously with salt.
  • Place the chicken, skin-side down, in a large, deep pan or braised.
  • Place the pan over medium-high heat and allow the chicken to brown, rendering its fat, for 8-10 minutes. Flip over and cook for another 5 minutes then remove from the pan.
  • In the same pan, add the bacon and cook for a few minutes until it's starting to crisp.
  • Add the leeks and cook for another 2-3 minutes until the leeks are starting to soften.
  • Add the garlic, thyme and mustard and cook for a minute.
  • Pour in the white wine and lemon juice and allow to reduce for a few minutes.
  • Pour in the cream and chicken stock and season with salt and pepper. Bring to a simmer and cook for 5 minutes.
  • Add the chicken back to the sauce then place in a preheated oven and allow to bake for 15 minutes until the chicken is cooked through and the sauce has reduced slightly.
  • Taste and adjust seasoning by adding more salt, pepper and lemon.
  • Serve the chicken and sauce over rice or mashed potatoes.

ONE-POT CHICKEN & BACON STEW

One-pot chicken & bacon stew image

Cook a batch of this delicious family favourite and you'll always have a satisfying meal to hand

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 1h50m

Number Of Ingredients 14

3 tbsp olive oil
16 chicken pieces on the bone (about 3kg/6lb 8oz in total)
140g smoked bacon, chopped or lardons or cubetti di pancetta
4 medium carrots, thickly sliced
2 onions, roughly chopped
2 tbsp plain flour
1 tbsp tomato purée
75ml white wine or cider vinegar
1l chicken stock
2 bay leaves
4 tbsp double cream or crème fraîche
600g small new potatoes, halved
12 large white mushrooms, quartered
chopped herbs, such as parsley, tarragon or chives

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a large flameproof casserole with a lid. Fry the chicken pieces in batches for 5 mins on each side until well browned, then transfer to a plate. Sizzle the bacon in the casserole for a few mins until beginning to crisp. Stir in the carrots and onions, then cook for 5 mins until starting to soften. Stir in the flour and tomato purée and cook for 1 min more. Finally, splash in the vinegar and stir well.
  • Pour in the stock and bring to a simmer. Add the bay, cream and seasoning. Slide in the chicken pieces and scatter over the potatoes, turning everything over a few times so that the potatoes are immersed in the sauce. Put the lid on and place in the oven. After 40 mins, remove from the oven and stir in the mushrooms. Cover again and cook in the oven for 10 mins more until the chicken is cooked through and tender but not completely falling off the bone. You can now turn off the heat, and chill and freeze some or all of it (see freezing tips, below). If eating straight away, cook for 10 mins more, then sprinkle over the herbs and serve.

MUSTARD CHICKEN & LEEK ONE-POT

Mustard chicken & leek one-pot image

Place chicken thighs, potatoes and leeks in a casserole pot with a mustard and crème fraîche sauce to make this easy, low-calorie dinner for four

Provided by Anna Glover

Categories     Dinner

Time 45m

Number Of Ingredients 10

2 tsp olive oil
4 chicken thighs
2 large or 3 medium leeks, washed, trimmed and thickly sliced
4 large potatoes, chopped into 3cm cubes, or 600g new potatoes, halved
600ml low-salt chicken stock
½ small bunch of thyme
2 tbsp Dijon or wholegrain mustard
125ml reduced-fat crème fraîche
320g frozen peas or broad beans
1 tbsp plain flour (optional)

Steps:

  • Heat the oil in a wide casserole dish over a medium-high heat, and season the chicken all over. Cook the chicken on all sides until the skin is crisp and golden brown (they don't need to be cooked through at this point). Transfer to a plate.
  • Discard all of the fat in the pan except about 1 tsp, and fry the leeks for 5-6 mins until starting to turn bright green and tender. Add a splash of water if the leeks are beginning to turn golden. Scoop out and set aside with the chicken.
  • Tip the potatoes into the pan, then pour over the chicken stock and nestle in the thyme. Cook, uncovered, over a high heat for 10 mins, then reduce the heat to medium. Stir in the mustard, crème fraîche, peas and leeks. Nestle the chicken back into the pan, so it's mostly covered by the sauce.
  • Put on the lid and cook for about 20-25 mins until the chicken is cooked through and the potatoes are tender. If you prefer a thicker sauce, mix the flour in a small bowl with 2 tbsp cold water. Stir into the sauce and simmer with the lid off for 2-3 mins more until the sauce thickens. Grind over some black pepper to serve.
