BREAKFAST NACHOS

8 homemade or thawed frozen waffles, cut into triangles (like tortilla chips)
1 pound breakfast sausage, casings removed and meat crumbled
1 tablespoon olive oil
6 large eggs
Kosher salt and freshly ground black pepper
1 tablespoon maple syrup
2 cups shredded sharp Cheddar
1 avocado, thinly sliced
1/2 cup quartered cherry tomatoes
3 scallions, white and light green parts only, thinly sliced
1 jalapeno, thinly sliced
1/4 cup chopped fresh cilantro
Hot sauce, for serving, optional
Sour cream, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the waffle triangles on a rimmed baking sheet and bake for 5 to 7 minutes to dry out a bit. Remove from the oven and turn on the broiler.
  • Cook the sausage in a large nonstick skillet over medium-high heat, breaking up any big chunks with the back of a wooden spoon, until browned and cooked through, about 5 minutes.
  • Heat another large nonstick skillet over medium heat. Swirl in the olive oil. Crack the eggs into individual bowls. Add the eggs side by side in the pan. Cook until the outer edges turn opaque, about 1 minute, then cover, lower the heat and cook for 4 minutes. If you want a medium yolk, cook for 5 minutes. Season with salt and pepper to taste.
  • Top the waffles with the sausage, drizzle with the maple syrup and cover with the cheese. Cook under the broiler until the cheese has melted completely, about 2 minutes.
  • Top the nachos with the cooked eggs, avocado slices, tomatoes, scallions, jalapeno and cilantro. Serve with hot sauce if desired and garnish with sour cream.

Crispy and succulent dark meat chicken combines with fried waffles for the classic combo, then it's turned up with cheddar, sour cream, and scallions and a drizzle of hot maple syrup. If you thought chicken and waffles couldn't get any better, think again.

2 cups buttermilk
3 teaspoons black pepper, divided
1 teaspoon kosher salt, plus more to taste
4 boneless, skinless chicken thighs, cubed
1 ½ cups maple syrup
2 tablespoons vinegar based hot sauce
2 cups canola oil, for frying
1 ½ cups all purpose flour
½ teaspoon chili powder
½ teaspoon paprika
½ teaspoon garlic powder
3 large eggs
14 frozen waffles, cut into quarters
3 oz shredded cheddar cheese
½ cup sour cream
2 tablespoons scallions, chopped

Steps:

  • In a large bowl, combine the buttermilk, 1 teaspoon of salt, and 1 teaspoon of black pepper. Place the chicken in the buttermilk mixture and toss to coat, then cover and marinate in the refrigerator for 1-2 hours, up to overnight.
  • Make the spicy maple syrup: In a small saucepan over medium heat, combine the maple syrup and hot sauce. Bring to a simmer, then cook for about 5 minutes, or until fragrant. Remove the pan from the heat and let cool. Set aside until ready to serve, or store in an airtight container in the refrigerator for up to 1 month.
  • Heat the oil in a large heavy-bottomed pot until it reaches 325°F (170°C). Line 2 baking sheets with paper towels and set nearby.
  • Working in batches, fry the quartered waffles in the hot oil for about 30 seconds on each side, or until golden brown. Transfer to a paper towel-lined baking sheet and season with salt.
  • In a large bowl, combine the flour, remaining 2 teaspoons of black pepper, chili powder, paprika, and garlic powder. In a medium bowl, beat the eggs well.
  • Set a wire rack inside a baking sheet.
  • Remove the chicken from the refrigerator and, working in batches, coat the chicken in the flour mixture, then in the eggs, then in the flour again. Place on the wire rack.
  • Working in batches, fry the chicken in the hot oil for 2-3 minutes, or until golden brown on the outside. Season with additional salt if desired. Transfer to a paper towel-lined baking sheet to drain.
  • Turn the oven to broil.
  • Arrange the fried waffles on a baking sheet, overlapping slightly. Top with the chicken and cheddar cheese.
  • Broil for 1-2 minutes, or until the cheese is bubbling. Watch carefully so it does not burn.
  • Drizzle the nachos with ½ cup (120 ML) of the spicy maple syrup, dollop on the sour cream, and scatter the scallions over the top. Serve with the remaining spicy maple syrup alongside

One 22-ounce bag waffle fries
1 cup black beans, rinsed and drained
4 slices cooked bacon, cut into 2-inch pieces
8 ounces Monterey Jack cheese, grated (2 cups)
Nonstick cooking spray, for the skillet
4 large eggs, lightly whisked
Kosher salt and freshly ground black pepper
2 ripe avocados, halved, pitted and peeled
2 cloves garlic, minced
1 tablespoon fresh lime juice (from about 1/2 lime)
1 plum tomato, diced
1/2 serrano chile, seeded, deveined and minced
2 tablespoons chopped fresh cilantro
1/2 red onion, thinly sliced
2 scallions, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F.
  • Cook the waffle fries according to the package instructions on a parchment-lined baking sheet.
  • Remove the fries from the oven and top with the black beans, bacon and cheese. Return to the oven until the cheese melts and is bubbling, about 5 minutes.
  • Meanwhile, heat a medium nonstick skillet over medium heat. Spray the skillet with nonstick cooking spray. Pour the eggs into the hot skillet. Cook, stirring occasionally, until the eggs are just cooked and opaque yellow, 2 to 3 minutes. Season with salt and pepper.
  • While the eggs are cooking, make the guacamole. Combine the avocados, garlic, lime juice and salt and pepper to taste in a mixing bowl and mash with a fork until chunky. Add the tomato, serrano and cilantro and mix well.
  • Remove the fries from the oven and top with the red onion, scallions and cooked eggs. Dollop dabs of guacamole evenly around the nachos. Serve immediately.

2 cooked chicken breasts , shredded into small pieces
6 spring onions , thinly sliced
140g red leicester cheese, grated
1 small jar red or green sliced pickled jalapeño peppers
small bunch coriander , leaves roughly chopped
your choice of salsa , hot pepper sauce (like Chipolte Tabasco), crème fraîche, guacamole or extra jalapeños, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Layer up the tortilla chips in an ovenproof dish or baking tray with the chopped chicken, spring onions, cheese and pickled jalapeños. Bake for 8 mins or until the cheese is melted.
  • To serve, sprinkle with the coriander and eat with your favourite accompaniments.

Chicken and waffles meets nachos with this hearty breakfast or brunch dish. Homemade cheddar waffles topped with a basic cheese sauce, popcorn chicken, bacon, scallions, jalapeño and a fried egg.

1/2 cup unsalted butter, melted and cooled
3 large eggs
1 1/2 cups buttermilk
1 teaspoon vanilla
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup shredded cheddar cheese
1/4 cup sliced fresh scallions
1 medium jalapeno, diced
2 cups frozen popcorn chicken
2 tablespoons unsalted butter
2 tablespoons flour
1 1/2 cups whole milk
1 teaspoon whole grain mustard
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 cup shredded cheddar cheese
1/4 cup sliced fresh scallions
4 slices crispy bacon, chopped
1 small jalapeno, sliced
4 fried eggs

Steps:

  • To make the waffles, whisk together the butter, eggs, milk and vanilla until well combined. Set aside.
  • In a large bowl, stir together the flour, baking powder, baking soda and salt. Add in the wet ingredients and stir until just combined. Fold in the cheese, scallions, and jalapeño. Pour 1/3 cup batter into each cavity of a preheated waffle iron. Cook until golden brown and crispy, according to your iron's directions. Transfer the cooked waffles to a wire rack set over a baking sheet, to prevent from getting soggy while you continue cooking the rest.
  • Cook the popcorn chicken on a baking sheet in a preheated 350 degree F oven until crispy, about 15 to 20 minutes.
  • Place a saucepan over medium-high heat along with the butter. Once melted, whisk in the flour and cook for about 30 seconds. Slowly whisk in the milk and cook, stirring constantly, until the mixture has thickened, about 5 to 8 minutes. Season with mustard, salt, pepper, and cayenne. Remove from heat, and stir in the cheese until melted through.
  • To assemble the nachos, cut the waffles into pieces and arrange onto one large platter or about two plates. Pour the cheese sauce over the waffle pieces and top with popcorn chicken, scallions, bacon, jalapeño and fried eggs. Serve immediately and enjoy!

  • To make waffles: Heat oven to 150 degrees. Sift flour, baking powder and salt into a large bowl; set aside. In a separate bowl, combine eggs and egg yolk, whisk until yolks are broken. Pour in the milk while continuing to whisk the eggs. Next slowly pour in the butter while whisking and continue to do so until mixture is well combined. Pour egg mixture into flour mixture and using a sturdy spatula or wooden spoon, fold the mixture until flour streaks are no longer visible
  • Fill heated waffle iron with batter and cook until waffles are golden brown (time will vary according to individual waffle iron). Transfer waffles to wire rack in the oven to stay warm while the remaining batter is cooked.
  • To make cheese sauce: Place butter in a medium skillet over medium heat and cook until butter is browned and fragrant, about 3-4 minutes. Stir in flour and cook for another 2-3 minutes. Pour in milk and turn up the heat to medium high. Cook and stir until mixture comes to a simmer and thickens. Stir in cheese and cook until just melted. Take pan off of heat, and stir until cheese is completely melted and combined.
  • To assemble: Quarter waffles and cover bottom of plate. Pour three-quarters of the cheese sauce on top and layer with bacon and popcorn chicken. Drizzle remaining cheese on top of chicken and finish with Sriracha and scallions. Serve immediately.
