CHICKEN AND SHRIMP A LA ITALIANO
I got this recipe from one of those recipe share chains. It quickly became a family favorite.

Steps:
- 1. Peel and clean shrimp, cut into bite-sized pieces. Cut chicken into bite-sized pieces.
- 2. Combine salt, red pepper flakes, black pepper, oregano and bay leaf. Sprinkle half of mixture over shrimp, and half over chicken.
- 3. In large frying pan, melt margarine. Add chicken and saute until it turns color; scoop out meat, leaving margarine. Add shrimp to same pan and saute until pink; scoop out shrimp.
- 4. Add garlic, onion, bell pepper and celery in remaining margarine. Saute until tender. Add Worcestershire sauce, lemon juice and tomatoes. Return meats to pan and simmer about 3 minutes or until heated through.
- 5. Serve over cooked spaghetti, fusilli, linguini or rice.
CHICKEN AND SHRIMP WITH PANCETTA CHIMICHURRI

- Preheat a grill pan or preheat a gas or charcoal grill.
- Season the chicken and shrimp with the dried oregano, salt and pepper. Drizzle with olive oil. Grill the chicken for 5 to 6 minutes each side until cooked through. Grill the shrimp for 1 to 2 minutes on each side until pink and cooked through.
- In a small skillet, heat the olive oil over medium-high heat. Add the pancetta and cook, stirring constantly until browned, about 6 to 8 minutes. Drain on paper towels. Set aside.
- In the bowl of a food processor, combine the garlic, parsley, oregano, vinegar, extra-virgin olive oil, and lemon juice. Pulse until smooth. Season with salt and pepper, to taste.
- Slice the chicken diagonally and arrange on a large serving platter with the shrimp. Drizzle with the chimichurri and sprinkle with the pancetta.
CHICKEN AND SHRIMP CARBONARA
My wife and I went to that popular Italian-American restaurant chain for dinner recently, and I had their shrimp and chicken carbonara. It was absolutely delicious and I thought, 'What the heck, I'll try making this at home.' I found a few recipes online, but none grabbed me. After studying several recipes, I came up with this recipe on my own. It's fairly simple to make, and my wife said it was better than the original.

Steps:
- Heat 1 tablespoon olive oil in a pan over medium-high heat. Cook and stir chicken with 1 tablespoon garlic and 1 tablespoon Italian seasoning, until cooked through, 6 to 8 minutes. Transfer chicken to a bowl and set aside.
- Heat 1 tablespoon garlic and 1 tablespoon olive oil in the same pan. Fry shrimp until red on the outside and white on the inside, 6 to 8 minutes. Place with the chicken.
- Bring a large pot of water to a boil and add remaining 2 tablespoons olive oil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes. Drain.
- Add bacon to the pan; cook until just crispy, not crunchy, about 6 minutes. Drain on 2 paper towels. Saute onion in the bacon grease until translucent, about 5 minutes.
- While onion is sauteeing, mix cream, Parmesan cheese, egg yolks, salt, pepper, and remaining Italian seasoning together in a bowl.
- Pour wine into the pan with the onions. Increase heat and bring to a boil. Cook until wine is mostly evaporated, about 2 minutes. Add the creamy egg mixture and reduce heat. Simmer until sauce begins to thicken, 3 to 5 minutes. Add the chicken and shrimp; mix to coat. Serve on top of pasta.

- In a Dutch oven, cook fettuccine according to package directions, adding asparagus during the last 3 minutes. , Meanwhile, sprinkle chicken with garlic salt. In a large skillet, heat oil over medium heat. Add chicken; cook until chicken is no longer pink, 8-10 minutes., Stir in shrimp and cream; cook, covered, until shrimp turn pink, 2-3 minutes. Stir in lemon zest, lemon juice, salt and pepper. Drain fettuccine and return to pan. Add sauce; toss to coat.

This dish is great and easy for an everyday family dinner and great, easy and fancy enough for company. You can mix and match with chicken or seafood or both combined. Serve with a salad and your choice of warm bread. I've gotton many compliments on this one! If you want some leftovers, double this recipe for dinner serving of 4.

- Cook pasta.
- Cook chicken, onion& garlic in hot oil until no longer pink.
- Drain and return to pan.
- Stir in undrained tomatoes, sauce& seasonings.
- Bring to a boil, simmer uncovered until thickened (about 10 min.) Slowly add cream and stir constantly.
- Serve over pasta.
- You can garnish with black pepper and green onions.

- Heat 1 tablespoon oil in a large skillet over medium high heat. Saute mushrooms until golden; remove from skillet with a slotted spoon and set aside.
- Add another 2 tablespoons oil to skillet. Saute onion, garlic and shrimp until opaque. Remove from skillet and add to mushrooms.
- In a shallow dish or bowl mix 2 tablespoons flour with 3/4 teaspoon salt. Dredge chicken in flour to coat. Add 1 tablespoon oil to skillet and saute chicken in oil for 3 to 5 minutes or until no longer pink. Add chicken to mushroom/shrimp mixture.
- Heat 1 tablespoon oil in skillet and stir in 1 tablespoon flour. Cook about 30 seconds, stirring constantly, until brown. Stir in wine, 1/2 teaspoon salt and water. Boil for 1 minute.
- Reduce heat to medium low and return shrimp and chicken mixture to skillet. Simmer for about 10 minutes, season with pepper and serve.
