SPINACH RISOTTO WITH TALEGGIO

Spinach Risotto With Taleggio image

This recipe, based on the nettle risotto from River Café in London, substitutes spinach, which is easier to find and less perilous to work with. It's best made with mature, crinkly spinach, which has a more robustly mineral flavor than delicate baby leaves, but use whichever you can get. The melting taleggio makes the rice supremely creamy, and adds a funky earthiness. Note that it's easiest to remove the rind and cut the cheese into cubes when it's straight-from-the-fridge cold, then let it come to room temperature as you cook the rice. If you'd like to use an equal quantity of nettles here instead of spinach, you can.

Time 45m

Yield 6 servings

Number Of Ingredients 10

8 ounces cold taleggio
10 ounces/8 packed cups spinach, any thick stems removed
6 tablespoons unsalted butter
1 medium red onion, finely diced
3 cups finely diced celery
2 garlic cloves, finely grated or minced
1 1/2 cup Arborio rice
1 teaspoon fine sea salt, more as needed
3/4 cup dry white wine
3 1/2 cups good vegetable or chicken stock

Steps:

  • Cut the rind off the taleggio and discard. Dice the cheese into 1/2-inch pieces. Set aside at room temperature as you prepare the rice.
  • Line a colander with a clean dish towel and place spinach inside. Heat about 8 cups of water until boiling, then pour over spinach; the spinach will wilt. Let spinach sit until cool enough to handle, then use the dish towel to squeeze out the water. Transfer spinach to a food processor and blend with 1 tablespoon butter until smooth. (You'll end up with about 1 cup of purée.) Reserve.
  • Melt remaining 5 tablespoons butter in a large skillet over medium heat. Stir in onion, celery and garlic; cook until translucent, about 7 minutes. Stir in rice and 1 teaspoon salt, and cook until toasted and golden, about 5 minutes.
  • Stir in wine and cook until it's absorbed, about 3 minutes. Stir in stock, about 1/2 cup at a time, stirring often but not necessarily continuously, until the stock is finished and the rice is cooked through but not mushy, 15 to 20 minutes.
  • Stir in spinach purée, then taste and add more salt, if needed. Add taleggio and stir to melt. Serve immediately.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

6 1/2 cups low-sodium chicken broth
1 sprig rosemary
2 tablespoons extra-virgin olive oil
1 4-ounce package diced pancetta
12 ounces sliced wild mushrooms (about 4 cups)
1/2 onion, diced
1 1/2 cups arborio rice
1 cup dry white wine
2 tablespoons unsalted butter
3/4 cup grated parmesan cheese (about 1 1/2 ounces)
2 tablespoons chopped fresh chives, plus more for topping
Kosher salt and freshly ground pepper

Steps:

  • Warm the chicken broth and rosemary in a saucepan over medium heat; set aside. Heat 1 tablespoon olive oil in a large Dutch oven or pot over medium-high heat. Add the pancetta and cook until crisp, 4 to 5 minutes; remove to a plate with a slotted spoon. Add the mushrooms to the pot and cook until slightly browned, 3 to 4 minutes. Remove to the plate; set aside.
  • Add the remaining 1 tablespoon olive oil to the pot; add the onion and cook until softened, about 4 minutes. Add the rice and toast, stirring, 2 to 3 minutes. Stir in the wine and cook, scraping up any browned bits, until the wine is absorbed, 3 to 5 minutes.
  • Add 3 cups warm broth and bring to a simmer. Cook, stirring, until most of the liquid is absorbed, 8 to 10 minutes. Add 3 more cups broth; return to a simmer and cook, stirring, until the rice is just tender, about 13 minutes.
  • Remove the pot from the heat; stir in the pancetta, mushrooms, butter, cheese and chives. Stir in more hot broth if the risotto is too thick; season with salt and pepper. Top with more chives.

PANCETTA AND LEEK RISOTTO FOR TWO

Pancetta and Leek Risotto for Two image

You can't improve upon the classic stovetop risotto technique for a perfect hearty meal for two. We loaded this dish with tender leeks, crispy pancetta and baby spinach, giving this bowl a familiar flavor yet extra special appeal.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 2 servings

Number Of Ingredients 12

3 cups low-sodium chicken broth
1 teaspoon olive oil
4 ounces finely diced pancetta (about 3/4 cup)
2 cloves garlic, minced
1 small leek, white and light green parts only, halved lengthwise and thinly sliced
Kosher salt and freshly ground black pepper
3/4 cup arborio rice
1 tablespoon unsalted butter
1 dried bay leaf
1/2 cup dry white wine
2 cups lightly packed baby spinach
1/4 cup finely grated Parmesan, plus more for serving

Steps:

  • Warm the chicken broth in a small saucepan over medium-low heat. Cover and keep warm while you make the risotto.
  • Heat the oil in a medium saucepan over medium-high heat. Add the pancetta and cook, stirring occasionally, until browned and crisp, about 4 minutes. Use a slotted spoon to remove the pancetta to a paper-towel lined plate.
  • Remove all but 2 tablespoons of the rendered fat from the saucepan, then add the garlic, leek, a pinch of salt and several grinds of pepper. Cook, stirring occasionally, until the leek is tender and softened, 3 to 4 minutes. Add the rice, butter and bay leaf. Cook, stirring, until the rice is toasted, smells nutty and turns a light golden brown, about 4 minutes. Pour in the wine and simmer, stirring occasionally, until it is completely absorbed, 2 to 3 minutes.
  • Ladle 1/2 cup of the warm stock into the rice and cook, stirring gently without stopping, until the rice has absorbed the liquid, 2 to 3 minutes (you will know it's time to add more stock when you move the rice aside and no liquid pools in the center). Repeat this process, adding more stock a ladleful at a time, until the rice is al dente, 15 to 17 minutes. Discard the bay leaf.
  • Stir in the baby spinach, Parmesan, half of the reserved pancetta, 1/2 teaspoon salt and a couple grinds of pepper. Stir until the spinach is wilted and everything is evenly combined. Taste and adjust the seasoning with salt and pepper. Spoon into 2 dinner bowls and top with the remaining pancetta and a sprinkle of Parmesan.

PASTA WITH CHICKEN, RISOTTO-STYLE

Pasta with Chicken, Risotto-Style image

Provided by Food Network

Time 20m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons olive oil, plus more as needed
1 shallot or small onion, chopped
3 cloves garlic, minced
2 cups crimini, shiitake or button mushrooms, cleaned, trimmed and sliced
8 ounces gemelli or penne cut pasta or long pasta broken into bits
Salt and freshly ground black pepper
1/2 cup dry white wine or water
3 to 4 cups chicken or vegetable stock
2 boneless chicken thighs, diced
Chopped fresh parsley, optional
Freshly grated parmesan, optional

Steps:

  • Put 2 tablespoons olive oil in a large, deep skillet over medium heat. When hot, add shallot, garlic, and mushrooms. Cook, stirring occasionally, until mushrooms soften and begin to brown on edges, about 10 minutes. Add pasta and cook, stirring occasionally, until it is glossy and coated with oil, 2 to 3 minutes. Add a little salt and pepper, then wine. Stir and let liquid bubble away.
  • Ladle stock into skillet 1/2 cup or so at a time, stirring after each addition, and every minute or so. When liquid is just about evaporated, add more. Mixture should be neither soupy nor dry. Keep heat at medium and stir frequently.
  • Begin tasting pasta 10 minutes after you add it; you want it to be tender but with a tiny bit of crunch. When pasta is about 3 to 4 minutes away from being done, add chicken and stir to combine. Continue to cook until chicken is done, it will be white on inside when cut and pasta is how you like it.
  • Taste, adjust seasoning, garnish with parsley and parmesan if using, and serve.

PEA AND PANCETTA RISOTTO

Pea and Pancetta Risotto image

A simple risotto with a budget-friendly ingredients list!

Provided by edwardsc

Time 1h

Yield Serves 2

Number Of Ingredients 8

1 clove of garlic, finely chopped
1/2 an onion, finely chopped
100g Pancetta cubes
1x 250ml cup of rice
1 chicken stock cube
Approx 700ml boiling water
1tbsp oregano
Approx 150g peas (frozen are fine)

Steps:

  • Gently fry the onions and garlic in a little olive oil until almost translucent. Add the pancetta and fry for a further 2 minutes or so until cooked.
  • Add the rice to the pan, and fry until the grains are translucent at the edges, stirring the ingredients well all the time.
  • Make up approx. 700ml of chicken stock with 1 stock cube. Add a ladle or two of stock to the pan and stir well. Lower the heat and let the stock be absorbed into the rice. Stir the risotto regularly, and gradually add the stock 1 ladle at a time allowing each to be absorbed until the rice is cooked. You may not need all the stock - I use about 650ml. If you need a little more, hot water can be added.
  • While the rice is cooking, cook the peas, drain and set to one side.
  • When the rice is soft and tastes right to you, stir the peas through the risotto.
  • Serve warm with black pepper and a little drizzle of olive oil.

  • First make the soffritto as a base for the risotto. Peel and finely chop the onion and carrots, and finely chop the celery too. Fry them in the olive oil over a low heat with the garlic, rosemary and pancetta in a large heavy-based pan for around 10 minutes, until the vegetables are soft.
  • Meanwhile, season the chicken and, in another pan, fry it in the sunflower oil until lightly golden. Transfer the chicken to the soffritto, discarding the oil. Add the wine, cook for 2 minutes, then pour in 1 litre of stock. Bring to the boil; cook, covered, for 10 minutes.
  • Add the rice and stir. Continue to cook; stir regularly. As the stock is absorbed, add more to loosen it. You want a flowing, creamy consistency – this will take around 25-30 minutes. As soon as the rice and chicken are cooked, take the pan off the heat. Mix in the Parmesan and butter. Cover; set aside for a few minutes. Serve in warm bowls.
