CHICKEN FETTUCCINE ALFREDO
Classic and easy to make, this version of Alfredo doesn't use flour to thicken the sauce. Instead, it relies on a slight simmer and a heavy dose of cheese.

- Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
- Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
- Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
- Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
- Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.

- Preheat oven to 350 degrees. Mix bread crumbs, garlic powder, paprika, onion powder and black pepper in a shallow container. Beat egg in a separate bowl. Dip chicken in egg and then dip in the breadcrumbs coating each side. Place chicken on a lined cookie sheet and bake for 40 minutes. Cool chicken.
- Freezing Directions:
- Place chicken on a baking sheet and flash freeze. When frozen place it in a gallon freezer bag or container. Place Alfredo sauce in a small freezer container or sandwich bag. Place sauce bag inside chicken bag or container. Seal, label and freeze.
- Serving Directions:.
- Thaw ingredients. Preheat oven to 350 degrees. Coat a 9 x 13 baking dish with cooking spray. Place chicken in baking dish and cover with Alfredo sauce. Cover with aluminum foil. Bake for 20 minutes or until dish is hot and bubbly. In the meantime, cook spaghetti according to the package directions. Serve chicken on top of spaghetti.

CHICKEN BROCCOLI ALFREDO OAMC

This was the most moist chicken of the dump meals that I have had in the past 5 meals. I ran this for 3 1/2 hours. I checked as it cooked. The house smelt like broccoli the entire time.

- Chop chicken, place in bag, remove excess air and freeze.
- Defrost in fridge over night.
- Crock Pot Method.
- If your family would like you can mix all ingredients (minus pasta) in a medium size crock pot.
- cook on low for 3-4 hours.
- cook noodles last 10-20 minutes of crock pot time.
- serve over noodles.
- Skillet Method.
- In 1-2 Tb oil cook chicken pieces, steam broccoli and cook noodles. Serve together or separate.

Steps:
- Mix chicken, cream cheese, chives, milk, and salt in a medium bowl (mixing with hands works best) to make filling, and store in a 1 qt freezer bag.
- Put crouton crumbs in another 1 qt bag, attach it to bag of chicken filling, and freeze.
- Refrigerate crescent rolls.
- To prepare for serving, thaw chicken mixture.
- Preheat oven to 350°F.
- Unroll crescent rolls.
- Each tube will contain 4 rectangles of dough with a diagonal perforation.
- Press dough along each perforation so the rectangle halves will not separate.
- Place about 1/4 cup of the chicken mixture into the center of each rectangle.
- Fold dough over the filling, and pinch the edges to seal tightly.
- Dip each packet in melted margarine, and coat with crouton crumbs.
- Place packets on a baking sheet.
- Bake for 20 minutes or until golden brown.
- Packets are good either hot or cold.

- Heat the olive oil in a non-stick frying pan over a medium high heat. Add the chicken thighs and fry for around 10 mins, turning half way, until they are golden brown and cooked through. Set aside to cool a little, then use two forks to shred.
- Bring a pan of salted water to the boil and add the pasta, cook for 1 minute less that package instructions. Whilst the pasta is cooking, add the butter to the frying pan over a medium heat, scraping the bottom a little to get any of the browned bits. Tip in the cream along with the nutmeg and bring to a simmer. Add the chicken back to the pan.
- Once the pasta is cooked, use tongs to transfer the pasta straight from the water into the frying pan with the cream mixture. Sprinkle most of the parmesan over and use the tongs to toss it all together, adding a splash of the pasta water if it looks a little stiff. Season well, then tip into bowls. Top with the remaining parmesan, a scattering of parsley, and black pepper.

OAMC CHICKEN ALFREDO PIZZA
This is my modified version of the recipe taken from the cookbook Don't Panic Dinner's in the Freezer. The original version calls for bacon and green onions, but I don't personally care for these ingredients. If you like, you may add 1/2 pound bacon, cooked and cut into 1/2 in. pieces and 6 green onions sliced diagonally, including tops. Enjoy!

- For sauce: Melt butter in saucepan or skillet; Add cream and bring to a boil. Simmer 5 minutes, stirring continuously. Add Parmesan cheese, salt and pepper. Turn off heat.
- For pizza: Roll out dough to form crust; you may want to use a round cardboard covered with plastic.
- Spread Alfredo sauce evenly over crust.
- Arrange spinach leaves over sauce.
- Add chicken and sprinkle with cheeses.
- Freeze, covering pizza with plastic wrap and heavy foil.
- Serving Day: Place frozen pizza on pizza stone or baking pan and thaw. Preaheat oven to 450 degrees. Bake 15 minutes or until bubbly.
