RESTAURANT STYLE SPAGHETTI SAUCE WITH SAUSAGE

Restaurant Style Spaghetti Sauce with Sausage image

It's easy to make restaurant-style Spaghetti Sauce using just a few ingredients. Adding sausage makes the sauce even more flavorful, but if you don't eat meat its okay to leave it out. This is the recipe I used throughout my long restaurant career.

Provided by Chef Dennis Littley

Categories     Sauce

Number Of Ingredients 9

4 cloves fresh garlic (chopped)
120 ounces crushed tomato ((four 28-32 ounce cans) San Marzano if possible)
2 pounds sweet Italian sausage
2 bunches fresh basil (finely chopped)
1 medium onion (diced)
1/2 cup olive oil
1 tbsp sea salt (or more to taste)
1/2 tsp black pepper (or more to taste)
1 tbsp sugar (optional)

Steps:

  • In a large heated skillet or saucepot add olive oil and sausage. Saute sausage on both sides until it browns.
  • When the sausage has browned add the diced onion and chopped garlic. Continue cooking until the onions are translucent, but do not allow them to burn!
  • Add crushed tomatoes, rinse cans with just a little water and add to the sauce (if crushed tomatoes are not available use whole tomatoes and crush by hand or with an immersion blender).
  • add chopped basil, sea salt and black pepper to taste (don't over season, you can always add more later). If you choose to add sugar now is the time to add it.
  • After your sauce has reached a boil, reduce the heat to simmer and continue to cook for at least two hours. If you've got the time let it simmer for 4-6 hours for an amazingly rich tomato sauce.

THE BEST HOMEMADE CHICAGO PIZZA SAUCE EVER!

The Best Homemade Chicago Pizza Sauce Ever! image

Being from Chicago, I've tasted a lot of different pizza sauces. (Pizza capital of the world!) Everyone that's had my pizza says they love my sauce. Try it once. You'll be hooked!! The best thing about this sauce is that you don't have to cook it!

Time 2m

Yield 2 Large or One deep dish, 2 serving(s)

Number Of Ingredients 9

1 (32 ounce) can tomato puree (I like Walmart's or Contadina)
1 teaspoon oregano
1 teaspoon basil
1 teaspoon thyme
1 teaspoon marjoram
1 teaspoon garlic powder
1 teaspoon pepper
salt (To taste)
1 teaspoon sugar

Steps:

  • Stir all well. I use a whisk. Let sit for "a couple-two-tree" hours. What could be easier? You can use this for pasta sauce too with some meatballs and sausage. I put the raw meat in and gently simmer it for an hour or so. It gives the sauce a hearty flavor. You gotta try this one!

CHICAGO-STYLE ITALIAN SPAGHETTI SAUCE

Chicago-Style Italian Spaghetti Sauce image

My mom always called this Chicago-style but I'm not sure why. All I know is it's a crowd pleaser! When people at church know it's my spaghetti, we get a big turnout every time.

Categories     Pasta

Time 3h30m

Number Of Ingredients 14

2 Tbsp oil
1 medium onion, chopped
1 medium bell pepper, chopped (any color)
1 lb ground chuck
1 lb italian sausage, sweet
1 clove garlic, minced (or more to taste)
24 oz mushrooms, canned (chop if desired)
36 oz tomato paste
72 oz tomato juice
6 Tbsp sugar
1 tsp salt
1 tsp pepper
1 tsp basil
1 tsp oregano

Steps:

  • 1. If you purchased link sausage, remove the sausage from its casing before you start the cooking process.
  • 2. In a large stock pot, saute together the chopped onion, bell pepper and garlic along with the ground chuck and italian sausage. Once the meat has been browned, drain the excess fat off.
  • 3. To the meat add the remainder of your ingredients. Cook covered over low heat for a good three hours, stirring often.
  • 4. If you would rather make a meatless sauce, just eliminate the chuck and sausage. If you would rather use meatballs and pieces of link sausage, add them after the first hour of cooking.
  • 5. FREEZES REALLY WELL! I usually take a Sunday and make a quadruple batch so I always have some in my freezer. Also makes great sauce for baked ziti and lasagne.
