CHIA SEED PROTEIN BITES

I keep these little bites on hand in my refrigerator and grab them for breakfast or a snack when I'm in a hurry. We have a lot of food allergies in our family and I like to keep healthy snacks around that everyone can eat. This recipe has no gluten, eggs, dairy or corn, so it's the perfect go-to treat in our house. -Tanja Miller, Peoria, Arizona

Yield about 2-1/2 dozen.

Number Of Ingredients 7

1-1/2 cups quick-cooking oats
1/2 cup almond butter or creamy peanut butter
1/2 cup chia seeds
1/2 cup honey
1/4 cup vanilla or chocolate protein powder
1/4 cup unsweetened shredded coconut
Additional unsweetened shredded coconut, optional

Steps:

  • In a large bowl, combine the first 6 ingredients. Refrigerate 1 hour or until firm enough to roll. Shape into 1-1/2-in. balls. Roll in additional coconut if desired. Store in the refrigerator.

1 cup old-fashioned oats
½ cup peanut butter
½ cup ground flax seed
½ cup chocolate chips
⅓ cup honey
1 tablespoon chia seeds
1 teaspoon vanilla extract

Steps:

  • Combine oats, peanut butter, ground flax seed, chocolate chips, honey, chia seeds, and vanilla extract together in a bowl. Cover and chill dough in the refrigerator 30 minutes.
  • Remove dough from refrigerator; roll into balls, about 1 inch in diameter.

Number Of Ingredients 7

2 cups old-fashioned rolled oats
1 cup extra-crunchy peanut butter
1/2 cup raw honey
1/2 cup mini chocolate chips
1/2 cup dried cranberries
1/2 cup sunflower seeds
2 tablespoons flax seed

Steps:

  • In a food processor, pulse the oats, peanut butter, honey, chocolate chips, cranberries, sunflower seeds and flax seeds until fully combined. Cover and refrigerate for 30 minutes.
  • Line a baking sheet with waxed paper. Form balls from the mixture (about 1 1/2 tablespoons each) and place them on the baking sheet. Refrigerate for 30 minutes before serving.
