STREUSEL-TOPPED FRUIT BRUNCH CAKE

2 cups Wheat Chex™ cereal
1 1/2 cups orange juice
1/4 cup canola oil
1 egg, slightly beaten
2 small bananas, thinly sliced
1 cup all-purpose flour
1/2 cup whole wheat flour
3/4 cup granulated sugar
1/2 cup raisins, if desired
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup Wheat Chex™ cereal
1/2 cup chopped nuts, if desired
1/3 cup packed brown sugar
1/4 cup all-purpose flour
2 tablespoons butter or margarine, softened
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 9-inch square pan with shortening or cooking spray. In large bowl, mix 2 cups cereal and the orange juice; let stand about 2 minutes or until cereal is soft.
  • Stir oil, egg and bananas into cereal mixture. Stir in remaining cake ingredients. Spread in pan.
  • Bake 35 to 40 minutes or until top springs back when touched lightly in center. Meanwhile, place 1/2 cup cereal in resealable food-storage plastic bag or between sheets of waxed paper; coarsely crush with rolling pin. In small bowl, mix crushed cereal and remaining topping ingredients until crumbly.
  • When cake is done, set oven control to broil. Sprinkle topping evenly over warm cake. Broil with top about 5 inches from heat for 1 to 2 minutes or until bubbly (watch carefully to avoid burning).

Then I HIGHLY recommend running into the kitchen and throwing this amazing little snack together! It?s is CRAZY addicting . . . so you might want to double the batch!

5 cups Chex cereal (I used Rice Chex, but Corn Chex would work great!)
10 ounces (5 squares) vanilla flavored Almond Bark
1 1/2 cups Funfetti cake mix
1/2 cup powdered sugar
1 teaspoon vegetable shortening

Steps:

  • Melt Almond Bark according to package directions, adding vegetable shortening to thin it out.
  • Pour the cereal into a large bowl and drizzle the melted Almond Bark over the cereal.
  • Mix gently with a large spoon or spatula. Dump the cake mix and powdered sugar onto the cereal and mix gently with large spoon until all the cereal is evenly coated.
  • Enjoy!

I got this recipe from Chex.com. They suggest topping it with s struesel topping, but I think it is fine without it.

2 cups Wheat Chex or 2 cups multi-bran Chex cereal
1 cup orange juice
1/4 cup vegetable oil
1 egg
2 small bananas, thinly sliced
1 1/2 cups flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup raisins (optional)

Steps:

  • Grease square pan, 8x8x2 inches.
  • Stir together cereal and orange juice in large bowl.
  • let stand about 2 minutes or until cereal is soft.
  • Stir in oil, egg and bananas.
  • Stir in flour, sugar, raisins, baking soda, cinnamon and salt and then pour into pan.
  • Bake about 45 minutes at 350 until top springs back when touched lightly in center.

Combine vanilla cake mix with Chex cereal, vanilla baking chips and sprinkles for a tasty and colorful snack.

9 cups Rice Chex™ cereal
1 cup white vanilla baking chips (6 oz)
1/4 cup butter, cut into pieces
1 teaspoon vanilla
1 cup Betty Crocker™ Super Moist™ vanilla cake mix
1/2 cup powdered sugar
3 tablespoons assorted Betty Crocker™ Decorating Decors candy sprinkles

Steps:

  • Heat oven to 250°F. In large bowl, place cereal; set aside.
  • In small microwavable bowl, microwave white chips and butter uncovered on High 30 seconds; stir. Continue to microwave in 30-second increments until chips and butter are softened and can be stirred smooth. Stir in vanilla.
  • Drizzle mixture over cereal; toss until well coated. Sprinkle dry cake mix, powdered sugar and sprinkles over cereal; toss until well coated. Spread in single layer in 15x10-inch pan or large cookie sheet.
  • Bake uncovered 30 minutes, stirring after 15 minutes. Cool about 15 minutes. Store tightly covered at room temperature.
