1 cup packed brown sugar
1/4 cup sugar
1 large egg, room temperature
2 tablespoons honey
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
1-1/2 cups quick-cooking oats
1-1/4 cups Rice Krispies
1 cup chopped nuts
Optional: Raisins or semisweet chocolate chips (1 cup each)

Steps:

  • Preheat oven to 350°. Cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg, honey and vanilla. Whisk together flour, cinnamon, baking powder and salt; gradually beat into creamed mixture. Stir in oats, Rice Krispies, nuts and, if desired, raisins or chocolate chips. , Press into a greased 13x9-in. pan. Bake until light brown, 25-30 minutes. Cool on a wire rack. Cut into bars.

2 ½ cups rice cereal
½ cup brown sugar
½ cup coconut oil
½ cup honey
½ teaspoon salt
½ teaspoon vanilla
½ cup chocolate chips
½ cup dried apple, dried
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ cup sliced almond
½ cup dried cherry
½ cup peanut butter
½ cup pretzels, crushed
½ cup chocolate candy

Steps:

  • In a large mixing bowl, combine the oats, rice cereal, coconut oil, honey, brown sugar, salt, and vanilla until evenly mixed.
  • For chocolate chip, take ¼ of the oats mix and combine with chocolate chips. Stir until mixed.
  • Move the mixture to a small baking dish.
  • For Apple Cinnamon, take ¼ of the oats mix and combine with dried apples, cinnamon, and nutmeg. Stir until mixed.
  • Move the mixture to a small baking dish.
  • For Cherry Almond, take ¼ of the oats mix and combine with almonds and cherries. Stir until mixed.
  • Move the mixture to a small baking dish.
  • For Peanut Butter Crunch, take ¼ of the oats mix and combine with pretzels, peanut butter, and chocolate candies. Stir until mixed.
  • Move the mixture to a small baking dish.
  • Bake each bar mixture at 350°F (175°C) for 5-8 minutes.
  • Let granola cool and then cut into desired bar shape.

1/2 cup (1 stick) unsalted butter, cut into pieces, plus more, softened, for pan
4 1/2 cups old-fashioned (rolled) oats
1/3 cup light-brown sugar
1/4 cup all-purpose flour
1 teaspoon baking soda
1/2 cup coarsely chopped pecans (2 ounces)
1/2 cup golden raisins
1/2 cup semisweet chocolate chips
1/2 cup sunflower seeds
1/2 cup wheat germ
1/2 cup dried apricots (3 1/4 ounces)
1/2 cup honey

Steps:

  • Preheat oven to 325 degrees. Butter a 9-by-13-inch baking pan; line bottom with parchment paper, and butter parchment. Set aside. In a large bowl, mix together the oats, brown sugar, flour, and baking soda. Stir in the pecans, raisins, chocolate chips, sunflower seeds, and wheat germ, and set aside.
  • Place apricots in the bowl of a food processor fitted with the metal blade, and process until smooth, about 60 seconds. Add the butter, and process until smooth. With the machine running, add honey through the feed tube, processing until smooth. Transfer apricot mixture to bowl with oat mixture, and fold until thoroughly combined.
  • Transfer mixture to prepared pan. Using a rubber spatula, press it firmly into bottom and edges of pan, and level the surface. Place in oven, and bake until golden, about 30 minutes. Transfer pan to a wire rack, and let cool completely.
  • Invert onto a baking sheet, and lift to remove pan; peel off parchment paper. Reinvert onto a cutting board, and cut into 24 bars, each about 1 1/4 by 3 inches. Bars can be wrapped in waxed paper and stored in airtight containers at room temperature up to 2 weeks.

They make a perfect on-the-go snack; a much healthier alternative to chips or cookies, especially for kids (Great for lunch boxes!)

1 cup firmly packed brown sugar
1/4-1/2 cup butter or 1/4-1/2 cup margarine, softened
1/4 cup sugar
2 tablespoons honey
1/2 teaspoon vanilla
1 large egg
1 cup all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups crisp rice cereal (Rice Krispies)
1 cup chopped almonds

Steps:

  • Preheat oven to 350° and lightly grease or spray 9 x 13 pan.

My family has now stopped buying Kashi® and chewy bars because we love these so much. These are gluten-free when made with rice flour and appear to be professionally made thanks to the small spoonful of corn syrup that keeps everything tightly combined and gives the bars a nice shine. Have fun experimenting with different combinations of nuts, dried fruits, and toppings! Almond butter works well, too!

Steps:

  • In a large bowl, combine oats, sugar, oat flour, salt and cinnamon; mix well. Stir in apricots, cherries, coconut, pecans and sunflower kernels; set aside., In another bowl, whisk together honey, butter, corn syrup, vanilla and water. Add the honey mixture to the fruit mixture; mix until crumbly. Pat into a lightly greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until golden brown on the edges. Cool in pan for 5 minutes., While still warm, cut into bars. Remove bars to a wire rack to cook completely. 2/3 cup crunchy peanut butter
1/2 cup butter, cubed

1 cup semi-sweet chocolate chips
1/2 cup flaked coconut
1/2 cup sunflower seeds
1/2 cup peanuts, chopped

2 tablespoons wheat germ
2 tablespoons sesame seeds

Steps:

  • In a large bowl, mix together the oats, rice cereal, chocolate chips, coconut, sunflowers, peanuts, raisins, wheat germ, and sesame seeds.
  • In a large microwave-safe bowl, combine the marshmallows, peanut butter, butter, corn syrup and vanilla.
  • Microwave the marshmallow mixture at 70% power for 2-3 minutes, stirring often until well-blended.
  • Quicky stir the dry ingredients in to the marshmallow mixture. You'll have to work quickly as the mix will get gooey fast.
  • Spread into a greased 13-in. X 9-in. X 2-in. baking pan. To flatten the granola bars, I spray the BOTTOM of a second baking pan with cooking spray, nest this second pan on top of the pan with the mix and press down hard.
  • Bake at 350 degrees F. for 15-20 minutes.
  • Cool and cut into 24 bars.
