A homemade dry rub recipe is the secret ingredient to amazing BBQ. Making your own couldn't be easier. Especially when you start with 5 of the best dry rub recipes we could find.

2 tablespoon kosher salt
3 tablespoons firmly packed dark brown sugar
1 1/2 tablespoons paprika
2 teaspoons Italian seasoning
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dry mustard
1 1/2 teaspoons ground cumin
1/2 - 1 teaspoon cayenne pepper
1 teaspoon freshly ground black pepper

Steps:

  • Combine the spices and herbs in a medium bowl and mix well.
  • Transfer the dry rub to an air-tight container. The rub can be stored in a cool, dry place for 6 months. When the weather is warm, I like to store it in the freezer in a ziptop freezer bag.
  • To use, generously sprinkle meats and veggies before cooking.

2 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon celery seed (ground)
1 teaspoon paprika (sweet Hungarian)
1 teaspoon dry mustard
1 teaspoon ground black pepper
1 teaspoon ground bay leaf
1/4 teaspoon ground allspice
1/4 teaspoon ground ginger
1/4 teaspoon grated nutmeg
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon

Steps:

  • In a small mixing bowl, stir together salt, cayenne pepper, celery seed, paprika , mustard , black pepper, bay leaf, allspice , ginger , nutmeg , cardamom, and cinnamon until well combined.
  • Store this seasoning mix in a tightly covered container at cool room temperature in a cool, dark place. While it is best to use this Chesapeake Bay seasoning mix within a month to retain freshness, it will keep for several months if it is stored correctly.

1 cup flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
20 chicken wings or 20 chicken drumsticks
1/2 cup butter or 1/2 cup light butter
1/2 cup hot sauce
1/4 teaspoon black pepper
1/4 teaspoon garlic powder

Steps:

  • Combine flour, salt, cayenne pepper, and paprika in bowl.
  • Coat chicken pieces in dry mixture.
  • Reserve leftover mixture.
  • Refrigerate coated chicken at least 1 hour.
  • Coat chicken in leftover flour mixture.
  • In a saucepan, heat butter, hot sauce, pepper, and garlic powder just until butter melts, then keep warm.
  • Deep fry chicken, 10 pieces at a time, in 375 degree oil for 13 minutes.
  • Drain chicken on paper towels.
  • Immediately place chicken in Tupperware bowl.
  • Pour half the hot sauce mixture over chicken (first 10 pieces).
  • Cover and toss to coat.
  • Repeat with second batch of chicken.
  • Wings can be frozen and reheated in 400 degree oven for 10 minutes.
  • NOTES : Use ranch or blue cheese dressing as a dip for these fabulous wings.
