CHERRY TORTE
This is my dad's favorite dessert. My grandma used to make it for her family. Whenever we'd have it at their house my grandpa would eat the cherries for me. Now dad does. Lately though I've split the recipe into two dishes and made one with the cherries and one with just a little of the filling for my nephew and I.

CHERRY TORTE CAKE
This is a delicious cake, that is very moist and is perfect for any occasion. My mom often brings this when she's invited to a party. It's also a great cake for a brunch as it looks similar to a coffee cake.

Steps:
- Mix oil and sugar together with mixer.
- Beat in 1 egg at a time until light and fluffy.
- Add remaining ingredients and mix well.
- Grease jelly roll pan (10 1/2 x 15 1/2).
- Pour 2/3 of the batter in pan.
- Spoon entire can of cherry pie filling over the batter in pan, then gently swirl through with a knife.
- Pour remaining batter over and gently swirl through with a knife.
- Bake 35-45 minutes at 350 degrees.
- Cool until warm, and then drizzle with a powdered sugar glaze (1 cup powdered sugar and a tbl. or so of milk, blended well with fork).

- Set aside 1/4 cup crushed cookies for topping. In a large bowl, combine remaining cookies and butter; spread into a 13-in. x 9-in. dish. Set aside. , In a large bowl, combine the whipped topping mixes, milk and vanilla; beat on low speed until blended. Beat on high for 4 minutes or until thickened and stiff peaks form. Add cream cheese; beat until smooth. , Spread over crust; top with pie filling. Sprinkle with reserved cookies. Cover and refrigerate for 12-24 hours before serving.

Steps:
- Mix cake mix with egg whites, oil, and water. 4 egg whites are 1/2 a cup you could use egg beaters egg whites
- Add almond extract to batter.
- Remove 1/3 of the batter to another bowl; stir in 10 to12 drops red food coloring.( i used cherry juice ).
- Spoon pink and white batters alternately into two greased and floured 9x1-1/2 inch cake pans.
- Cut though batter with a knife to marble.
- Bake in 350 degree Fahrenheit oven for 25 to 30 minutes.
- Remove from pans.
- Stir together pie filling and grated orange peel.
- In another bowl mix Cool Whip with 8 to 10 drops red food coloring.
- Place one cake on a serving plate.
- Make a border of whipping topping on edge 1 inch wide and 1/2 inch tall; fill with 1/2 the cherry pie filling mixture.
- Top with second layer.
- Make another border of whipped topping; fill with remaining cherry pie filling mixture on top.
- Frost sides with remaining topping.
- Chill 3 hours.

- Prepare cake mixes according to the box instructions. I made 3 8×8 layers and did 6 cupcakes. If you want a taller cake, make 4 layers.
- Open one can of cherries, and mash with a potato masher. It will look sort of like a jam. With a large bread knife slice the layers in half. Spread a spoonful of cherries on the bottom layer, the layer above it will get whipped frosting on the BOTTOM of the layer. Keep alternating.
- Take a spoon or a rubber spatula and tidy up the sides. Place cake and frosting in the refrigerator for about 20 minutes. Pull out and “fill in” the sides where the layers are with frosting then do an all-over “crumb coat layer.” Put it back in the refrigerator for about 15 minutes.

- Preheat the oven to 350°F and butter the inside of a 9-inch springform pan. Cream together the butter and 1 cup sugar in a medium bowl until light and fluffy. You can use an electric mixer, but I find a wooden spoon and a little elbow grease to the job just fine. Add in the eggs, one at a time, making sure each is fully incorporated. Sift in the flour, baking powder and salt, then mix until just combined.
- Spread the batter into the pan and smooth the top. Combine the husk cherries,1 tablespoon sugar, lemon juice and cinnamon in a small bowl, then pour over top. Use the back of a spoon or your fingers to gently press the fruit into the batter.
- Bake for about 45 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean (of batter, that is, fruit pulp is cool. ) Allow the cake to cool on a rack for at least 30 minutes prior to cutting. Serve warm. The cake is also excellent served cold after chilling in the fridge overnight.
