Cherry Tomato Sauce With Lemon image

A recipe taken in Coup de Pouce, September 2004. Posted for ZWT4. This sauce is perfect with chicken or fish croquettes. Also on pasta or pork chops.

Number Of Ingredients 9

2 tablespoons olive oil
1 garlic clove, finely chopped
1/2 cup fresh parsley, chopped
1/2 teaspoon salt
1/2 teaspoon fresh black pepper
2 cups cherry tomatoes, halved
1/2 teaspoon lemon zest, grated
1/4 teaspoon sugar
2 tablespoons fresh lemon juice

Steps:

  • In a skillet, heat oil at medium-low heat. Add garlic, half of the parsley, salt and pepper and cook, while stirring, for about 2 minutes or until garlic begins to smell.
  • Add cherry tomatoes, lemon zest and sugar and keep on cooking at medium-high heat, stirring, for about 2 minutes or until cherry tomatoes have softened. Add lemon juice and remaining of parsley and stir.

This is a delicious sauce served over pasta or chicken breasts and so quick to put together. If your cherry tomatoes are quite sweet, you can get away with not adding the pinch of sugar. You decide! Enjoy!

2 tablespoons olive oil
1 clove garlic, minced
1/2 cup copped fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups cherry tomatoes, halved
1/2 teaspoon grated fresh lemon rind
1 pinch sugar
2 tablespoons lemon juice

Steps:

  • In skillet, heat oil over medium low heat.
  • Cook garlic, half the parsley and the salt and pepper til fragrant, about 2 minutes.
  • Add tomatoes, lemon rind and sugar.
  • Saute over medium-hig heat until tomatoes are softened, about 5 minutes.
  • Mix in lemon juice and remaining parsley.
  • Makes 1 cup.

With just a few ingredients you can easily make tomato sauce using cherry tomatoes. Cherry tomatoes infused with fresh garlic and Italian seasonings make this cherry tomato sauce perfect for pasta, on top of roasted vegetables, or with a side of artisan bread.

3 tablespoons olive oil
3 garlic cloves minced
2 pints cherry tomatoes
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 tablespoon Italian seasoning
fresh basil, (to garnish and extra flavor)

Steps:

  • In a large skillet over medium-high heat, add the oil and heat through for about one minute.
  • Add the garlic and cook for 1 minute until fragrant and softened.
  • Add the tomatoes, salt, pepper, Italian seasoning, and fresh basil if you desire.
  • Cook and stir sauce the sauce for 10-15 minutes. Allow the sauce to simmer on medium-low heat until the tomatoes burst.
  • Mash the tomatoes using a mashing utensil until desired consistency. You can also use the back of a fork to mash the tomatoes.
  • Garnish with fresh basil. Serve over pasta, with a side of bread, or add meat.

Another Sara Moulton recipe that will be made with some of the MANY cherry tomatoes that have come out of my garden!!

6 garlic cloves, peeled and sliced
1 medium onion, cut into 8 pieces
1/4 cup olive oil
3 pints cherry tomatoes, rinsed
salt and pepper

Steps:

  • Puree the garlic in a food processor fitted with the chopping blade.
  • Add onion and pulse 3-4 times, until finely chopped.
  • Heat oil in a large skillet over high heat until hot.
  • Reduce heat to medium and add the onion and garlic.
  • Cook, stirring occasionally, until they are softened, about 5 minute.
  • Meanwhile, place 1 pint of the cherry tomatoes in the food processor bowl and pulse 3-4 times, until coarsely chopped.
  • Transfer to a bowl and repeat with the remaining 2 pints of tomatoes.
  • Add the chopped tomatoes to the onion and simmer, stirring frequently, until they form a sauce, about 15-20 minute.
  • Add salt and pepper to taste and serve with your favorite pasta or gnocchi.

Sauteed Fish With Lemon Butter and Cherry Tomatoes image

We loved this buttery, flavorful sauce and it makes the fish so pretty, too. (I saw something like this on Irish Food Trails some time ago and have recreated it as closely as I could recall. The measurements are all estimated.)

4 fish fillets (any firm, white fish -I used whiting)
2 tablespoons olive oil
salt and pepper
1 lemon, juiced
2 tablespoons butter
8 -10 cherry tomatoes, halved

Steps:

  • Sautee the fish in the olive oil over medium heat until cooked through, adding salt and pepper to taste. This will take 1-4 minutes per side. Remove to a plate.
  • Make a sauce by adding a good dollop of butter and the juice of a lemon to the pan. Stir it around, loosening all the crispy bits in the bottom of the pan and allowing it to thicken a bit.
  • Add a handful of cherry tomatoes, halved and cook just until they are warmed through and begin to break down, adding their juices to the sauce.
  • Top the plated fish with the gorgeous orange, buttery, lemony sauce you just made and the tomatoes and eat it up.

2 tablespoons olive oil, divided
2 pints cherry or grape tomatoes
Salt and pepper
2 garlic cloves, minced
1 tablespoon minced fresh basil

Steps:

  • Heat 1 Tb. olive oil in a 12-inch skillet over medium-high flame until it just starts to smoke. Add tomatoes, and season with salt and pepper. Saute, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Stir in the garlic and continue to shake the pan until garlic is fragrant. Off heat, stir in the basil and remaining 1 Tb. olive oil, then serve.
