QUICK SWEET AND SOUR HAM

- Drain pineapple, reserving juice and pineapple chunks. In a bowl, combine the brown sugar, cornstarch and ginger. Stir in the water, vinegar and reserved juice until smooth; set aside., In a large nonstick skillet, saute the ham, green pepper and onion in hot oil over medium-high heat for 3 minutes or until ham is lightly browned and vegetable are crisp-tender. Stir reserved pineapple chunks into skillet; heat through. Stir juice mixture. Gradually stir into skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve over rice.

- 1. pre heat oven to 325*
- 2. Place ham, fat side up, on rack in shallow roasting pan, using toothpicks, place both cans of pineapple rings on the top and sides of the ham, place cherries in the middle of the pineapple rings using toothpicks as well. Cover with lid or tinfoil, and bake at 325* for about 18 minutes per pound, until meat thermometer reaches 160°.
- 3. Combine glaze ingredients in saucepan; bring to a boil and boil for about 2 minutes (be careful not to let it boil over). About 20 minutes before the ham is done, spoon about half of the glaze over top of ham, then about 10 minutes before done, spread remaining glaze over ham.

Ham Gravy: 3 Cups of Ham drippings 2 Tbsp of Cornstarch 1/2 c water Heat over meduim-high heat, a pan of drippings to a boil, in a small bowl whisk cornstarch and water until smooth, once drippings begin to boil, whisk in mixture, whisking thoroughly until gravy is thick, remove from heat and serve over mash potatoes. FRUITY SWEET AND SOUR SAUCE
This is the light pink and fruity tasting sweet and sour sauce that they serve in Chinese restaurants. The maraschino cherry juice makes the difference; don't ever throw it away again! Serve warm as a dipping sauce, or over meat as a sweet and sour sauce.

- Add reserved pineapple juice (from pineapple chunks) to a large glass measuring cup. Add enough water to equal 1 1/2 cups. Whisk in the brown sugar, red pepper, ginger, vinegar, soy sauce and cornstarch until smooth. Set aside.
- In a large saute pan, cook the ham, garlic and peppers over medium high heat until just tender. Add the drained pineapple chunks and cook a few minutes longer. Stir in the pineapple juice mixture and bring to a boil.
- Continue to simmer, stirring often, until everything is heated through and the vegetables reach desired tenderness. Just before serving, stir in green onions. Season with salt and pepper, to taste. Serve over hot cooked rice and sprinkle with chopped cashews.
