CHERRY PARTY AMBROSIA

Cherry Party Ambrosia image

I am not big on ambrosia usually, but this stuff is great. It turns out pink because of the cherries, so it is great for Christmas, Valentines, girl's tea parties, etc. Serve in clear footed dishes, and it makes it extra pretty. Not too sure of can/container sizes, just use the regular size Cool Whip, pineapple, etc. Since this is ambrosia you can play with the ingredients a bit,but we really thought this was the perfect balance.

MARASCHINO CHERRY AMBROSIA

Maraschino Cherry Ambrosia image

This ambrosia is truly worthy of the gods...it goes well with nectar. j/k I bring this to to many gatherings & have learned to bring copies of the recipe to put next to the bowl. Its ridiculously easy to make. If you're not a maraschino cherry fan, just leave them out.

Time 15m

Number Of Ingredients 10

20 oz can crushed pineapple [drained]
15 oz fruit cocktail, in heavy syrup [delmonte brand works best]
16 oz sour cream
32 oz 2 bags [16 oz each] shredded coconut
21 oz 2 bags [10.5 each] miniature marshmallows
2 lb 2 jars [1 lb each] maraschino cherries in heavy syrup
1 c heavy whipping cream
powdered sugar to taste
vanilla to taste
15 oz canned mandarin oranges [drained]

Steps:

  • 1. Drain pineapple & mandarin oranges very well. Place in something large to mix. I use my large crock pot or my turkey pan.
  • 2. Add fruit cocktail & heavy syrup.
  • 3. Add syrup from maraschino cherries. Cut cherries in half and add to mixture.
  • 4. Add sour cream.
  • 5. Add shredded coconut.
  • 6. Add mini-marshmallows.
  • 7. In seperate mixing bowl, make whipping cream: heavy whipping cream powdered sugar [to taste] vanilla [to taste] Use mixer. Mix until it hardens and forms whipped cream. Be patient. It WILL happen... Fold whipped cream into mixture.
  • 8. Chill in refrigerator at least 4 hours. The longer it chills the better the tastes will combine.
  • 9. Get a large bowl, a spoon & go into a private place so people won't see your eyes roll in pleasure or hear you moan with delight. LOL
  • 10. Enjoy!

CHRISTMAS AMBROSIA

Christmas Ambrosia image

My mom always served this colorful, refreshing salad/dessert at Christmastime. Wouldn't be Christmas without it! I don't know where the recipe came from, but we're a southern family, so perhaps it's a southern tradition, I'm not really sure.

WESTFäLISCHE GöTTERSPEISE (WESTFALIAN AMBROSIA)

Westfälische Götterspeise (Westfalian Ambrosia) image

A very regional, a very typical, and a very unique dessert in the region of Westfalia (Northrhine Westfalia, Germany). One ingredient is essential: pumpernickel - a very dark but still moist rye bread. The westfalian ambrosia is based on curd, whipped cream and this very special ingredient pumpernickel. Sounds different, but I love this treat.

Categories     Dessert

Time 2h25m

Yield 4-5 serving(s)

Number Of Ingredients 15

1 lb sour cherry (pitted)
1 tablespoon sugar
2 tablespoons cognac
lemon peel (about 2 inches)
1/2 lb Quark
2 tablespoons sour cream
1/2 lb whipping cream
3 -4 slices pumpernickel bread (to make 1/4 pounds)
2 ounces meringues (bought one, see note)
2 ounces hazelnuts, coarsely chopped
2 ounces sugar
2 teaspoons vanilla extract
2 tablespoons grated chocolate
4 cherries
hazelnuts

Steps:

  • Put cherries, sugar and lemon peel into pot, bring to a single boil and cook over low heat for 5 minutes.
  • Take from heat, let cool slightly and add cognac. Divide cherries and fluid into 4 serving glasses. Pack the cherries, so that they make a dense layer. Cover with cling film and put into the fridge.
  • Toast the pumpernickel in the oven until it completely dry and slightly roasted. Take out of the oven and let cool completely. Chop the pumpernickel finely (I use the food processor). Add the very coarsely chopped hazel nuts and set aside.
  • In a bowl mix quark, sour cream, sugar and vanilla extract until smooth.
  • Chop the meringue very coarsely and add to the quark mixture. Mix carefully with a spoon.
  • Add the pumpernickel mixture and mix with a spoon.
  • Beat the whipping cream until stiff. Add to the quark mixture and fold in carefully. Do not overmix it.
  • Divide quark mixture into the four serving glasses, cover again and chill it for about 2 hours in the fridge.
  • To serve: take out of the fridge, sprinkle with some chocolate, add a few hazel nuts and a cherry.
  • NOTE on serving: you can premix the cherry layer with the cream layer. It looks not as fancy as the layered serving, but it taste as good as the layered one.
  • NOTE: you can store this dessert for one day in the fridge. It is even better the next day.
  • NOTE: you can use preserved cherries. But then don't cook the cherries. Cook only the fluid as described above. To thicken the fluid you can add cornstarch. Dilute 1 tsp in a bit of cold water and then add this mixture to the cooking fluid.
  • NOTE on meringue: you can sub the meringue here by "dry" cookies or butter cookies.
