HOMEMADE BERRY SYRUP RECIPE
This Mixed Berry Syrup is a perfectly delicious topping for pancakes, waffles, French toast, ice cream and so much more. It adds a serious blast of flavor to every bite, and only takes about 10 minutes to make.

Steps:
- In a medium-sized saucepan, combine the berries, sugar and water. Bring the mixture to a boil, then mash and stir with a potato masher while boiling for 2 minutes, or until the berries are soft and plump.
- If you don't like seeds or chunks in your syrup, strain the syrup through cheesecloth to remove the seeds then return to a clean saucepan.
- In a small bowl, combine the cornstarch and cold water and stir until the cornstarch is completely dissolved, then stir into the berry mixture along with the lemon juice and bring to a boil. Boil for 1 minute, or until the mixture thickens slightly.
- Remove the syrup from the heat and let it cool for a few minutes before serving on pancakes, waffles, French toast, or ice cream. Enjoy!

- In a saucepan over medium heat, bring the cherries, blueberries, apple juice, and stevia to a boil
- Lower the heat and simmer for about 10 minutes, until fruit is soft
- In a small bowl, dissolve arrowroot powder in water, stirring until thoroughly combined
- Raise heat to high, add arrowroot mixture to fruit, and cook, whisking constantly, until the mixture thickens and becomes glossy, about 1 minute
- Let sauce cool and thicken for 10 minutes before serving
- Use right away or store in a glass jar in the refrigerator for up to 3 days

GRAPEFRUIT SYRUP FOR SODASTREAM
My hubby is a Grapefruit fan and requested this version of syrup to replicate one of his favorite name brand sodas. This is a non-diet version, but still not overly sweet.

- Slice Grapefruit into 1/4 inch rounds. (Discard ends and any slices that have too much pith.).
- Place all ingredients in a saute pan and bring to a boil.
- Boil gently for 5 minutes, stirring intermittently. (I used a fork to make sure the fruit slices were stirred around evenly and changed them up from top to bottom a bit to ensure all were cooked into the mix thoroughly.).
- Remove from heat and remove grapefruit slices, squeezing gently to get out most of the juice.
- Mix 1/2 Cup of the syrup with 1 Liter of carbonated water.
- Store remaining syrup in bottle or airtight container.

- In a medium pan, heat the Turbinado sugar and 1/4 cup water over medium high heat until carmelized.
- Cut and squeeze one lemon.
- Split the vanilla bean or use the vanilla extract.
- Remove pan from stove and add 2 cups water and the lemon juice. Add vanilla bean and seeds, return pan to the heat and bring to a boil.
- Remove from heat and allow to stand for 1 hour.
- Pour syrup into an airtight container. Store in the refrigerator.
- Add syrup to taste to carbonated water.

- Wash, stem, and crush fruit in saucepan.
- Heat to boiling and simmer about 10 minutes.
- Pour hot fruit through colander or strainer to remove seeds, then again through cheesecloth or a jelly bag.
- Discard pulp.
- The yield of juice should be about 5 cups.
- Combine juice with sugar and boil in large saucepan for 1 minute.
- Skim off foam.
- it is ready to serve or to can in 1/2 pint jars.
