CHERRY MALLOW DESSERT
For a swift sweet treat, Carol Heppner spreads a homemade graham cracker crust with canned pie filling, then tops it with a fun marshmallow and whipped cream layer. "Try it with blueberry pie filling instead," recommends the Caronport, Saskatchewan cook.

- Set aside 1 tablespoon graham cracker crumbs for topping. Place the remaining crumbs in a bowl; stir in butter until combined. Press into a greased 9-in. square baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool completely., Spread pie filling over crust. Fold marshmallows into the whipped cream; spread over filling. Sprinkle with the reserved crumbs. Refrigerate for at least 6 hours.

CHERRY MARSHMALLOWS
My first taste of a homemade marshmallow was in France. With all of the fancy desserts available that day, I only went back for more marshmallows. There's just something about these pillowy puffs of sugary deliciousness that turns them into a gourmet treat. And talk about delicious! Try these next time you make smores, add one to your cup of hot cocoa, or include some in your holiday cookie tins. Store in an airtight container at room temperature for up to 2 weeks.

Steps:
- Generously butter the bottom and sides of an 11x7-inch glass baking dish and sprinkle with 1 tablespoon powdered sugar.
- Add 1/2 cup cold water to the bowl of a stand mixer and add unflavored gelatin. Set aside to soften.
- Combine remaining 1/2 cup water, sugar, corn syrup, cherry gelatin, and almond extract in a large saucepan over medium heat. Stir constantly until sugar and gelatin are dissolved. Heat the mixture to boiling, then reduce heat to medium-low. Cook, without stirring, until a candy thermometer immersed in the mixture reads 240 degrees F (115 degrees C), about 30 minutes. Watch carefully that syrup doesn't boil over; reduce heat if necessary.
- Slowly pour syrup into the softened gelatin in the stand mixer bowl. Beat on low speed, then increase to medium-high and beat until marshmallow mixture has tripled in size. Pour into the prepared baking dish and smooth the top using a rubber spatula. Set marshmallow mixture aside and let stand, uncovered, 8 hours to overnight.
- Dust a large cutting board with about 1 tablespoon powdered sugar. Loosen sides of marshmallow mixture from the baking dish, lift out onto the cutting board, and rub additional powdered sugar on top. Spray a sharp knife with cooking spray and cut marshmallows into 1-inch squares, 11 rows by 7 rows.
- Toss marshmallows in a large bowl with remaining confectioners' sugar. Shake off excess sugar and transfer marshmallows to an airtight container.

- 1. STEP ONE: Preheat Oven @ 350 degrees Step one Ingredients; Mix in Medium Bowl. Set aside 1 cup The remaining Mixture Press in 9 X 13 baking dish. Bake for 5 Minutes.
- 2. Step Two: Whip cream in a small bowl until stiff. Fold in Vanilla. Spread over the Crumb Mixture above.
- 3. Step 3: Sprinkle Mini Marshmallows over step 2, Whipped Cream.
- 4. Step 4: Cover Step 3 (Mini Marshmallows) with Pie Filling. Sprinkle reserved Cup of Crumb Mixture over Pie Filling. Press down Lightly. Chill several Hrs or Over Night. Serves 8-10 in 9 x 13 dish. Kitchen Helper tip: you can use any of your Favorite Pie Fillings; Raspberry, Blueberry, Etc. instead of Cherry.
MARSHMALLOW FLUFF SURPRISE DESSERT BY FREDA
Just Learned This recipe Came from the StageCoach in CookBook, and also from a restaurant in Columbia, Calif, & The Owner's grandfather's Diary dated back to 1934-1935. Needs to Chill and set for several Hrs. NO COOKING Required. No Baking. only 5 ingredients. Serves about 6 servings

- 1. Soak the Marshmallows overnight in the Cherry Juice.
- 2. Whip cream, then Add to Marshmallow Mixture, with the Pineapple and nuts. Chill Several Hrs. (4 hrs at least) Serve in Dessert Dishes. (OPTIONAL) Top with a Marashino Cherry with a stem, and a Sprinkle of Chopped Nuts.

- 1. Preheat Oven to 325. Grease 13" X 9" Pan Mix 1 C sugar and Butter together Beat @ Med Speed with Mixer, until creamed. ADD; Sour Cream, Eggs, and Vanilla. Continue beating till mixed well.
- 2. Reduce Speed to Low, and add dry Ingredients; 2 C flour, Baking Pdr, Soda, & Salt. Beat till well mixed
- 3. Spread 1/2 the batter in the bottom of GREASED pan. Spoon Cherry Pie Filling over batter. Spoon remaiing batter over Cherry filling carefully spreading.
- 4. Topping: Stir together dry ingredients, Flour, Sugar, Nuts, Cinnamin, then Cut in the 3 TBS butter, until it resembles coarse crumbs. Sprinkle thi topping over the batter. BAKE @ 325 45-50 min. till toothpick comes out clean, and the topping is a dark golden Brown. ENJOY this Yummy Coffee Cake on me.

- 1. Dissolve Jello in the Boiling Water. Add: drained Pineapple & Cherry Pie Filling, Pour into a 9X9 Square Pan. Chill until Set.
- 2. Whip Cream till stiff. In seperate small Bowl, Mix and Blend Cream Cheese @ room temp, Add; Marshmallow Cream. (Should be Creamy, with no lumps) FOLD into the Whip cream.
