SWEET MAPLE AND DRIED CHERRY GLAZE - RED LOBSTER
I've eaten both shrimp, salmon and chicken with this glaze on it both at Red Lobster and at home thanks to this recipe from the Red Lobster website. I really enjoy this glaze thanks to being so interchangable with so many different meats. I hope you enjoy!

Steps:
- Combine syrup, soy sauce, water and cherries in small sauce pot over medium heat.
- Squeeze juice from half lemon in mixture and stir well.
- Once mixture is heated, begin adding ¼ cup of sugar and stir until complete dissolved. Taste glaze for sweetness. As different maple syrups will have different levels of sweetness, it might be necessary to add additional sugar.
- Once glaze is sweet enough, remove from heat and refrigerate. When completely cool, cover and store chilled.
- Use at room temperature as glaze for grilled fresh fish.

Use pure maple syrup, not pancake syrup for this perfect fall glaze. Pancake syrups have other sweeteners and you want pure maple flavor. Serve with wild rice.

- To make Maple Apple Chicken: Cut 2 large apples into 8 chunks each. Place the chunks around the chicken, Brush the hot glaze over the chicken and drizzle it over the apples. Bake as directed below.
- Preheat the oven to 350 degrees F. Lightly coat a 13 by 9-inch pan with nonstick cooking spray. Place the chicken in the pan. Stir the maple syrup, apple juice, butter, shallot, and rosemary together in small saucepan and place over high heat. Bring to a boil, then lower the heat to maintain a gentle boil. Boil for 8 to 10 minutes, stirring frequently. The mixture will thicken.
- Brush the hot mixture over the chicken. Bake until the chicken is hot and the glaze is bubbly, about 20 minutes, basting 2 or 3 times.
CHERRY HAM GLAZE
This cherry ham glaze give any ham a delicious, sweet, and slightly tart taste. I glazed a ham for Thanksgiving with this, and my company couldn't get enough of it. I was out of ham by the next day!

- Stir together water, vinegar, corn syrup, preserves, cinnamon, cloves, and nutmeg in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low and simmer for 2 minutes.

- Place ham on a rack in large roasting pan. Bake, uncovered, at 325° for 3 hours., In a small saucepan, combine the brown sugar, cornstarch and mustard. Stir in cherry juice until smooth. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Spoon over ham. Bake 20-30 minutes longer or until a thermometer reads 140°. DH saw an advertisement and thought this sounded good. I did some digging and found a recipe that I could modify. Serve with rice to absorb the wonderful sauce.

- Make the glaze by bringing the cherry juice to a simmer in a non-reactive saucepan and reduce to 1/2 cup.
- Add the remaining ingredients; bring to a quick boil, reduce temperature and simmer for 10 minutes. Remove cinnamon stick and stir in vanilla.
- Cool to room temperature and then chill.
- Preheat grill on highest setting; rub the salmon with oil; season with salt and black pepper.
- Divide the glaze using half to baste the salmon while cooking and the other half to drizzle over the salmon when serving.
- Before cooking the salmon, place the 1/3 cup cherry juice and dry tart cherries in a small saucepan, bring to a boil, turn off heat, cover and allow to stand to reconstitute while the fish cooks.
- Place the salmon on the grate and turn down the flame to the medium setting; baste the salmon with the glaze and grill for approximately 6 minutes on each side or until it flakes easily.
- Drizzle the salmon with the cherry glaze and top with reconstituted cherries.
