CHERRY MALTED COOKIES (PILLSBURY BAKE-OFF WINNER)



Cherry Malted Cookies (Pillsbury Bake-Off Winner) image

From the 1953 Pillsbury Bake-off Cookbook (4th Grand National). You can replace some or all of the shortening with unsalted butter. If using plain malted milk powder, add 2 tablespoons unsweetened cocoa. For a variation, add 1 cup chopped black walnuts.

1 1/2 cups flour (spoon & sweep)
2/3 cup brown sugar, firmly packed
1/2 cup instant malted milk powder, chocolate flavor
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1 egg
1/2 cup shortening
1 teaspoon vanilla
2 tablespoons maraschino cherry syrup
1/4 cup chopped maraschino cherry, drained

Steps:

  • Adjust oven rack to middle position, preheat to 375°F, and line two baking sheets with parchment. In a medium bowl, combine flour, brown sugar, malted milk powder, salt, cinnamon, and baking soda.
  • In a large bowl, if using a hand mixer, or in the bowl of a stand mixer fitted with a paddle attachment, beat butter and sugar until soft and light, about 1-2 minutes. Add egg and continue beating until smooth, then add vanilla and cherry syrup and beat a minute more, pausing to scrape down the sides of the bowl as needed. Resume mixing on low, add flour, brown sugar, malted milk powder, salt, cinnamon, and baking soda. When fully incorporated, stir in chopped cherries.
  • Drop by rounded teaspoons onto prepared baking sheets. Bake cookies one sheet at a time until puffed and just set around the edges, but still soft in the middle, about 12 minutes. Cool directly on the baking sheet until firm, then transfer to wire rack to cool.

This hearty casserole bread was a prize winner in the 23rd Bake-Off contest in the early 70's. The moist and chewy bread is even better the second day! *Cooking time(passive time) includes time for bread to rise twice.

2 1/2 cups all-purpose flour
4 ounces shredded cheddar cheese
2 teaspoons sugar
1 1/2 teaspoons salt
1 (1/4 ounce) package active dry yeast
3/4 cup milk
1/2 cup margarine or 1/2 cup butter
3 eggs

Steps:

  • Generously grease 1 1/2 or 2 quart casserole dish or 9x5" loaf pan.
  • Lightly spoon flour into measuring cup; level off.
  • In large bowl, combine 1 1/2 cups flour, cheese, sugar,salt and yeast; blend well.
  • In small saucepan, heat milk and margarine until very warm (120 to 130 degrees F.).
  • Add warm liquid and eggs to flour mixture.
  • Blend at low speed until moistened; beat 3 minutes at medium speed.
  • By hand, stir in remaining 1 cup flour.
  • Cover loosely with plastic wrap and cloth towel.
  • Let rise in warm place (80 to 85 degrees F.) until light and doubled in size, about 45-60 minutes.
  • Stir down dough to remove all air bubbles. Turn into prepared casserole dish.
  • Cover; let rise in warm place until ight and doubled in size, 20-25 minutes.
  • Heat oven to 350 degrees.
  • Uncover dough.
  • Bake 40-45 minutes or until deep golden brown.
  • Remove from casserole dish immediately; cool on wire rack.

1 (13 7/8 ounce) can pillsbury pizza crusts
2 teaspoons sesame seeds
6 slices bacon, cut into 1-inch pieces
1/4 cup mayonnaise
1/2 teaspoon grated lemon peel
1 cup shredded monterey jack cheese
1 teaspoon dried basil
1/4 lb cooked turkey slice, cut into 1-inch strips
1 -2 small tomatoes, thinly sliced
1/2 cup shredded swiss cheese

Steps:

  • Heat oven to 425º. Lightly spray 12" pizza pan or 9x13 pan. Unroll dough and place on pan. Press out to form crust. Sprinkle sesame seeds evenly over dough. Bake 10-12 min or light golden brown.
  • Meanwhile, cook bacon over medium heat until crisp. Drain. In small bowl mix mayo and lemon peel until blended,
  • Spread mayo over crust. Top with jack cheese, basil, turkey, bacon, and tomatoes. Sprinkle with the swiss.
  • Bake 7-9 min or cheese is melted and crust has browned.

1 package devil's food cake mix
1 (21 ounce) can cherry pie filling
2 large eggs
1 teaspoon almond extract

Steps:

  • Place rack in center of the oven and preheat to 350degrees.
  • Lightly mist a 13x9 inch baking pan with vegetable oil spray.
  • Set pan aside.
  • Place all ingredients into large mixing bowl and beat with electric mixer on low for 1 minute.
  • Stop the machine and scrape down the sides of the bowl with a rubber spatula.
  • Increase speed to medium and beat for 2 minutes more.
  • The batter should look thick and well blended.
  • Pour the batter into the prepared pan, smoothing the top with a spatula.
  • Place the pan in the oven.
  • Bake the cake for 30-35 minutes.
  • Remove the pan from the oven and place it on a wire rack to cool.
  • Serve with a chocolate glaze or frosting.
