This white cake pairs well with all sorts of frostings and fillings, but the chocolate frosting in this recipe is one of my favorites. Pressed for time? Add 1/2 tsp. of almond extract to a white cake mix instead. -Diane Shipley, Mentor, Ohio

CHOCOLATE FROSTING:
1 cup (6 ounces) semisweet chocolate chips
1/2 cup half-and-half cream
1/4 cup butter, cubed
2-1/2 cups sifted confectioners' sugar
CAKE:
4 egg whites
1/2 cup shortening
1-1/2 cups sugar, divided
1 teaspoon vanilla extract
1 teaspoon almond extract
2-1/2 cups cake flour
3 teaspoons baking powder
1 teaspoon salt
1 cup plus 2 tablespoons whole milk
CUSTARD:
1/3 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
3/4 cup whole milk
1 egg, lightly beaten
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 cup chopped almonds, toasted
OPTIONAL DECORATIONS:
Recipe for Christmas Lights Cookies or decorated cookies of your choice
Green frosting

Steps:

  • For frosting, in a small saucepan, heat chocolate chips, cream and butter over medium-low heat, stirring until blended. Transfer to a large bowl; gradually beat in confectioners' sugar until smooth. Cool to room temperature, stirring occasionally. Transfer to a covered container; refrigerate until cold or overnight., For cake, place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 375°. Line bottoms of two greased 9-in. round baking pans with parchment paper; grease paper., In a large bowl, cream shortening and 1 cup sugar until light and fluffy. Beat in extracts. In another bowl, whisk cake flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition., With clean beaters, beat egg whites on medium speed until soft peaks form. Gradually add remaining sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Fold into batter., Transfer batter to prepared pans. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., For custard, in a small heavy saucepan, mix sugar, all-purpose flour and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a small bowl, whisk a small amount of hot mixture into egg; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Cool 15 minutes, stirring occasionally. Transfer to a small bowl; stir in extracts and almonds. Press plastic wrap onto surface of custard. Refrigerate until cold., To assemble cake, in a large bowl, beat cold frosting until fluffy and spreadable. Cut a small hole in the tip of a pastry bag or a corner of a food-safe plastic bag; fill bag with 1/3 cup frosting., Place one cake layer on a serving plate. Pipe a border of frosting along edge of cake. Fill center with custard. Top with remaining cake layer. Frost top and sides with remaining frosting. If desired, decorate with cookies and pipe with green frosting. Refrigerate until serving.

2 cups fresh cherries (about 12 ounces), pitted, coarsely chopped
1 cup sugar
1/4 cup water
For cake
1 7-ounce package almond paste, cut into small pieces
1 1/4 cups sugar
1 1/4 cups (2 1/2 sticks) unsalted butter, cut into pieces
2 teaspoons vanilla extract
6 large eggs
1 cup all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
For custard
1/2 cup sugar
2 tablespoons cornstarch
6 large egg yolks
2 teaspoons vanilla extract
2 cups half and half
3 cups fresh cherries (about 18 ounces), pitted, coarsely chopped
1 cup chilled whipping cream
1/4 cup powdered sugar
Cherries with stems
Slivered almonds, toasted

Steps:

  • Make jam:
  • Combine all ingredients in heavy medium saucepan. Stir over medium heat until sugar dissolves and mixture boils. Reduce heat to medium-low and simmer until jam is thick, stirring often, about 22 minutes. Transfer to small bowl. Cover and chill up to 3 days.
  • Make cake:
  • Preheat oven to 325°F. Butter 9-inch-diameter springform pan. Line bottom with parchment; butter parchment. Blend almond paste and sugar in processor until mixture resembles fine meal, about 1 minute. Add butter and vanilla and blend well, occasionally scraping down sides of bowl. Blend in eggs 1 at a time. Using on/off turns, blend in flour, baking powder and salt (do not overmix). Transfer batter to prepared pan. Place pan on baking sheet; bake cake until tester inserted into center comes out clean and top is golden, about 1 hour 10 minutes. Cool cake in pan on rack. Cover; let stand at room temperature 1 day.
  • Make custard:
  • Whisk 1/2 cup sugar and cornstarch in heavy medium saucepan to blend. Beat in yolks and vanilla. Gradually whisk in half and half. Stir over medium heat until custard thickens and boils. Transfer to bowl. Press plastic wrap directly onto surface; chill 1 day.
  • Cut around pan sides to loosen cake; release pan sides. Cut cake horizontally into 3 layers; discard parchment. Spoon thin layer of custard over bottom of 3- to 3 1/2-quart trifle bowl. Trim 1 cake layer to fit, if necessary; place in bowl. Spread with 1/3 of custard. Mix chopped cherries into jam. Spoon 1/3 of jam mixture atop custard; spread to edge of bowl so that jam shows. Top with second cake layer, half of remaining custard and half of remaining jam mixture; spread to edge of bowl. Top with third cake layer. Spread with remaining custard, then jam mixture.
  • Beat whipping cream and powdered sugar until stiff peaks form. Transfer to pastry bag fitted with star tip. Pipe cream in center of trifle. Pipe rosettes around edge; top rosettes with whole cherries. Sprinkle trifle with almonds. Cover; chill at least 3 hours and up to 1 day.

This is a great cake for sharing. You could probably make this with other types of pie filling but the cherries look so pretty poking through the cake! Another great Sunset recipe.

1 1/2 cups sugar

1 teaspoon almond extract
2 cups flour
1 (21 ounce) can cherry pie filling
powdered sugar

Steps:

  • In large bowl of an electric mixer, beat butter and sugar until fluffy; add eggs, one at a time, beating well after each addition Stir in almond extract and flour until well blended.
  • Spread batter in a well-greased 10x15-inch baking pan.
  • With a knife, lightly mark off batter into 15 equal pieces; then spoon equal portions of pie filling into center of each piece.
  • Bake in a 350° oven for 35-40 minutes or until cake is lightly browned and a toothpick inserted in center comes out clean.
  • Let cool in pan.
  • Dust with powdered sugar before serving.

  • Make sure the butter is soft, remove it from the refrigerator a few hours before baking. Preheat the oven to 180 degrees Celsius/ 350 degrees Fahrenheit. Grease and line two 20 cm/ 8 inches cake tins (I use springforms) with baking paper.
  • Place the sponge ingredients in a bowl. Beat with an electric mixer until smooth. Divide the batter evenly between the two tins and level nicely. Immediately place the tins in the preheated oven. Bake for 30 minutes or until golden. Let stand in the tins for 5 minutes, remove and let cool completely on wire racks.
  • Keep 3-5 cherries for decorating the cake. Pit and chop the fresh cherries. If using frozen and defrosted cherries or canned cherries, chop them, place them on kitchen paper and pat dry with more kitchen paper. Set aside.
  • Toast the flaked almonds in a pan until golden. Shake the pan often and transfer the almonds to a large plate as soon as they are roasted. Let cool completely. Whip the cream adding 1 tablespoon sugar and the vanilla extract when you beat it.
