SINGLE-SERVE FRESH CHERRY CRUMBLES
These single-serve cherry crumbles are made with fresh pitted cherries and baked with a sweetened crumble nut topping.

Steps:
- Gather the ingredients.
- Preheat oven to 375 F. Lightly spray 4 (7- to 8-ounce) ramekins or 5 to 6 (5- or 6-ounce) ramekins or custard cups with cooking spray. Alternatively, lightly butter bottoms and sides.
- Combine cherries, water, sugar, and cornstarch in a medium saucepan and stir to blend. Place pan over medium heat and bring to a simmer.
- Reduce heat and continue simmering, uncovered, for 10 minutes, stirring frequently.
- Divide cherry mixture among ramekins.
- Combine topping ingredients in a medium bowl.
- Sprinkle topping evenly over each filled ramekin.
- Put ramekins in oven with a baking sheet on rack below to catch drips. Bake for 25 to 30 minutes, or until topping is browned and filling is bubbly.

CHERRY CRUMBLE (USING FRESH FRUIT)
This is a wonderful recipe that my late husband's mother in London used to make for their family. I was able to get the recipe from her. It has become a HUGE hit here at any gathering or occasion!

Steps:
- stir together flour, oatmeal, brown sugar, pecans, melted butter and cinnamon until crumbly.
- Combine sugar, cornstarch, water and vanilla, stirring until smooth. Add cherries and cook until mixture becomes thick and clear.
- Pour cherry sauce into oven proof bowl. Top with crumble mixture on top of the sauce.
- Bake at 350 degrees for 1 hour. Variation: Use Blueberries or rhubarb instead of cherries! Peaches, apples, strawberries. Most any fresh fruit can be used.

- Place rack in the center of oven and preheat oven to 375 degrees F. Lightly coat a 9x9-inch pan or 11x7-inch baking dish with nonstick spray.
- Prepare the filling: In a large bowl, gently stir together the cherries, granulated sugar, cornstarch, lemon juice, vanilla, and almond. Pour into the prepared baking dish in an even layer (add any juices that collect on the bottom of the bowl too).
- Prepare the topping: In a medium bowl, stir together the oats, all-purpose flour, whole wheat flour, brown sugar, cinnamon, and salt. Pour in the melted butter, then stir until the mixture is combined and evenly moistened.
- Sprinkle the topping evenly over the cherries. Bake for 30 to 40 minutes, or until the filling is bubbly and topping is golden. Let stand 10 minutes. Serve warm topped with vanilla ice cream, whipped cream, or yogurt.
