- In a large bowl, whip cream until soft peaks form. Gradually add the sugar, vanilla and salt; beat until stiff peaks form. Fold in sour cream. , Set aside six cherries from pie filling. Spoon half of the remaining pie filling into parfaits glasses; top with half of the cream mixture. Repeat layers. Top with reserved cherries.

- blend icecream into half of the semi set jelly.
- whip fresh cream with powdered sugar and mix in the cherry pieces.
- To serve-- spoon ice cream jelly mixture into four individual dessert bowls.
- add cherry whipped cream topping and top with remaining half of the clear jelly.
- chill til the pudding is set.

- Dissolve gelatin in boiling water; stir in cold water. Pour into 8-inch square pan. Refrigerate 2 hours or until firm.
- Chop coarsely 2 of the cookies. Add to whipped topping; stir gently until well blended. Set aside. Cut gelatin into cubes; spoon evenly into 4 parfait glasses. Top evenly with the whipped topping mixture.

- Make cherry sauce:
- Stir cheryy juices and sugar in medium saucepan over medium heat until sugar dissolves. Increase heat; boil 5 minutes. Add cherries; return to boil. Refrigerate until cold. (Can be made 3 days ahead. Cover; keep chilled.)
- Make chocolate parfait:
- Place chocolate in medium metal bowl set over saucepan of barely simmering water (do not let bottom of bowl touch water). Whisk constantly until very thick and thermometer registers 160°F, about 5 minutes.
- Beat cream in medium bowl to soft peaks. Gently fold chocolate, then cream into egg mixture. Spoon chocolate parfait into 8 pilsner glasses or goblets. Freeze.
- Make vanilla parfait:
- Combine eggs yolk and sugar in small metal bowl. Set over saucepan of barely simmering water (do not allow bottom of bowl to touch water.) Whisk constantly until mixture is very thick and thermometer registers 160°F, about 5 minutes. Transfer mixture to large bowl. Beat with electric mixture until cool and very fluffy, about 5 minutes.
- Place cream in medium bowl. Scrape seeds from vanilla bean; beat to soft peaks. Fold cream into egg mixture. spoon vanilla parfait atop chocolate parfait. Cover; freeze 4 hours or up to 3 days.
- Spoon cherry sauce atop parfaits.

- To make the cherry sauce, cook the cherries and sugar in a saucepan over medium heat, stirring often, until the sugar is dissolved and the cherries give off their juice, about 5 minutes. Sprinkle the cornstarch over the kirsch in a small bowl and stir to dissolve the cornstarch. Stir into the cherries and cook just until the juices thicken. Transfer to another bowl and cool completely. (The chocolate and cherry sauces can be prepared up to 2 days ahead, cooled, covered, and refrigerated. Gently reheat the chocolate sauce just until fluid.)
- Scoop equal amounts of the ice cream into 4 parfait or martini glasses, adding the chocolate and cherry sauces to get a layered effect. Top each with a dollop of whipped cream and a fresh cherry. Serve immediately.
