A nice, light no-bake dessert that's a cross between cake and pudding! Easy and delicious! I made mine low-fat by using low-fat cream cheese and lite whipped topping.

2 (21 ounce) cans cherry pie filling
1 cup white sugar
½ cup all-purpose flour
2 (8 ounce) packages cream cheese
1 (12 ounce) container frozen whipped topping, thawed
1 teaspoon vanilla extract
1 (9 inch) angel food cake

Steps:

  • In a saucepan, combine cherries, sugar and flour. Bring to a boil over medium-high heat, stirring constantly. Continue to boil for 5 minutes. Remove from heat and set aside to cool.
  • In a large bowl, beat cream cheese and vanilla until smooth. fold in whipped topping. Pour half of the cream cheese mixture into a 9x12 inch glass dish.
  • Crumble the angel food cake and sprinkle evenly over the top of cream cheese mixture in dish. Spread remaining cream cheese mixture over cake. Cover top with cherry mixture. Refrigerate for at least 5 hours.

Cherries in the Snow Poke Cake is a super easy, pretty pudding poke cake. Cake mix, pudding, whipped topping and cherry pie filling! So good!

15.25 ounce box white cake mix
ingredients needed to make cake; egg whites, oil and water
3.4 ounce box instant white chocolate pudding
2 cups cold milk
8 ounce tub whipped topping (Cool Whip), (thawed)
21 ounce can cherry pie filling

Steps:

  • Prepare and bake cake according to package directions for a 9x13-inch baking dish.
  • When cake is finished baking, while still warm, poke holes in cake using the end of a wooden spoon or something of a similar size.
  • In a bowl, combine 2 cups of milk with dry instant pudding mix.
  • Pour pudding into the holes of the warm cake. Spread pudding around and gently press pudding into holes of the cake.
  • Put the cake into the fridge for a couple of hours to finish cooling completely.
  • Once cake is completely cooled, start spreading on whipped topping.
  • Then dollop the cherry pie filling on top of cake. The pie filling won't cover every square inch of the cake. You want that white to peep through.
  • Slice and serve.

1 (18.25 ounce) package yellow cake mix
1 (3.5 ounce) package instant vanilla pudding mix
1 (21 ounce) can cherry pie filling

Steps:

  • Prepare and bake cake according to directions given on cake mix box using a 9 x 13 inch pan. Cool in pan.
  • Prepare pudding according to directions. Pour on top of cooled cake. Pour cherries on top of pudding. Serve. Refrigerate any leftovers.

2 (1 1/3 ounce) packets Dream Whip topping mix
1 cup milk
1 teaspoon vanilla
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar

Steps:

  • Bake & Cool cake as directed on box.
  • Combine Dream Whip, milk and vanilla.
  • Beat until stiff peaks appear.
  • Mix Cream Cheese, sugar & Dream Whip mix.
  • Beat until smooth.
  • Spread thin layer on cake plate.
  • Cut cake into three layers.
  • Spoon mixture & a few cherries on each layer.
  • Stack layers one on another.
  • Sread mixture on outer part of cake.
  • Pour remaining cherries over top.
  • Refridgerate to keep set.

2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup margarine, melted
12 ounces cream cheese, softened (can use lite)
16 ounces Cool Whip (can use lite, fat-free)
1 cup powdered sugar
1 (21 ounce) can cherry pie filling (can use any flavor)

Steps:

  • Mix together graham cracker crumbs, sugar, and melted margarine. Press down for the crust in a 9 x 13 pan. Chill while you're making the filling.
  • Blend cream cheese in blender.
  • Gradually blend in cool whip.
  • Gradually blend in powdered sugar.
  • Spread in pan over crust. Chill 1/2 hour.
  • Place pie filling on top of cream cheese mixture.

1 box duncan hines yellow cake mix
ICING
8 oz cream cheese, softened
3 oz cream cheese, softened
2/3 c sugar
2 Tbsp milk
1 tsp vanilla
16 oz can cherry pie filling (stir 1 teaspoon almond extract into can of filling)

Steps:

  • 1. Using 8-or-9 inch round layer cake pans, make and cool cake as directed on the label.
  • 2. Soften cream cheese. Add sugar, milk and vanilla; beat until smooth. Split each layer into two thin layers. Spread 1/2 cup cream cheese mixture and 1/2 cup cherry pie filling between each layer and on top of cake. Store in refrigerator.
