BAKED PENNE WITH ITALIAN SAUSAGE

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.
- Bake in preheated oven for 20 minutes, or until cheese is melted.

Steps:
- Fill a large pot with lightly salted water, and bring to a rolling boil over high heat. Stir in the shell pasta, and return to a boil. Cook, stirring occasionally, until cooked through but still firm to the bite, about 13 minutes. Drain well.
- While the pasta is cooking, heat the vegetable oil in a large skillet over medium-high heat. Cook onion, orange pepper, and garlic in oil until tender, about 5 minutes. Stir the crumbled Italian sausage into the vegetables in the skillet; cook and stir until meat is browned and cooked through, about 8 minutes. Stir in the undrained tomatoes and the heavy cream. Turn the heat to medium-low, and allow the sauce to cook until thick, about 5 additional minutes.
- Mix pasta with the sausage cream sauce, stir in the Parmesan cheese, and serve. Garnish with chopped fresh parsley.

Italian pork sausages can be used in place of turkey sausages, or use my recipe#178446 in place of sausages. The jalapeno is optional add in for more heat, this is a delicious casserole!

Steps:
- Set oven to 350 degrees.
- Grease a 4-quart casserole dish.
- Cook the ziti pasta in salted boiling water until just al dente (do not overcook the pasta as it will cook more in the oven) drain, place in a large bowl and set aside.
- Remove the casings from the sausage.
- Heat oil in a large skillet over medium-high heat.
- Add in the sausage, onion, garlic, chili flakes and jalapeno (if using) saute until meat is browned, stirring to crumble the meat with a spoon.
- Add in tomato paste and diced tomatoes with the juice; bring to a boil, cover and simmer for about 30 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- In a large bowl combine the cooked pasta with the sausage/tomato mixture and chopped basil.
- Place half of the mixture into the prepared casserole dish.
- Top with half of the mozzarella cheese, then half of the Parmesan cheese.
- Repeat layers ending up with the Parmesan on top.
- Bake for about 25-30 minutes, or until bubbly.
- Delicious!

- Preheat oven to 350°F.
- Cook Pasta according to package directions, omitting salt and fat. Drain pasta; set aside.
- Remove casings from sausage. Cook sausage, onion, and garlic in a large nonstick skillet over medium heat until sausage is browned, stirring to crumble. Add tomato paste, salt, black pepper, and diced tomatoes to pan; bring to boil. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.

- In a Dutch oven, cook the beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, salt, basil and pepper. Reduce heat to low; cover and cook for 45 minutes, stirring occasionally., Cook ziti according to package directions; drain. Place in a large bowl. Stir in sauce and 1 cup mozzarella cheese. CHEESY BAKED PASTA WITH SAUSAGE AND RICOTTA
Like a cross between baked ziti and sausage lasagna, this mozzarella-topped pasta is rich with ricotta and crushed tomatoes - and cooks entirely in one pan, including the pasta. The Italian sausage adds meaty depth to the sauce, but vegetarians can leave it out or use their favorite plant-based sausage instead.

- Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces. Cook until starting to brown, stirring occasionally, 5 to 7 minutes. Stir in garlic, oregano, fennel seeds and red-pepper flakes (if using), and cook another 1 to 2 minutes.
- Stir in whole tomatoes and their juice, using a spoon to break them up. Add crushed tomatoes, bay leaves and 2 teaspoons salt, and bring to a simmer. Simmer for 10 minutes to thicken slightly.
- Stir in pasta and 1 cup water and return to a simmer. Continue to simmer for 2 minutes, stirring frequently to make sure pasta doesn't stick to the bottom of the pan. Remove from heat, pluck out the bay leaves, and fold in about a third of the mozzarella.
- Top pasta with remaining mozzarella and dollops of ricotta. Sprinkle with Parmesan, then transfer to oven. Bake until pasta is tender when poked with a fork, and cheese is bubbly and lightly golden, 18 to 22 minutes. (If you'd like a more deeply browned topping, run the pan under the broiler for 1 or 2 minutes.) Remove from oven and let cool slightly before serving. Top with basil, plenty of black pepper, and more red-pepper flakes, if you like.

- Soak the pasta: Place the pasta in a large bowl and add enough lukewarm water to cover the pasta completely. Season generously with salt. Set the pasta aside and let stand on the counter for 50 minutes.
- Meanwhile, make the sauce: Heat the oil in a large pot or large deep skillet over medium heat. Add the onion and season with salt and pepper. Sauté until almost softened, about 3 minutes. Add in the garlic and red pepper flakes. Cook until fragrant, about 1 minute.
