CHEESY POTATO SOUP WITH BACON
Warm up with this rich and indulgent soup. Our Cheesy Potato Soup with Bacon feeds a crowd, freezes well, and it comes together in a single Dutch oven. Melted yellow Cheddar makes a great finishing touch. If you prefer to buy only one type of cheese, then add extra white Cheddar.

Steps:
- Chop scallions, separating green and white parts. Set aside.
- Cook bacon in a large Dutch oven over medium, stirring occasionally, until crispy, 10 to 15 minutes. Using a slotted spoon, transfer to a plate lined with paper towels, leaving 2 tablespoons of bacon drippings in Dutch oven.
- Add potatoes, onion, butter, garlic, and white scallion pieces to Dutch oven, and cook over medium until onions are slightly softened, 5 to 6 minutes. Add flour, salt, and pepper, and stir until all ingredients are coated. Cook, stirring constantly, 1 minute. Stir in broth until combined. Bring mixture to a boil. Then reduce heat to medium-low, and simmer until potatoes are tender, about 12 minutes.
- Using a potato masher, lightly mash mixture, leaving some whole pieces of potato. Add white Cheddar and cream, stirring until cheese melts. Keep warm.
- Ladle soup into bowls. Top servings with bacon, green scallion pieces, and yellow Cheddar.
CREAMY CHEESY BACON POTATO SOUP
Ive made this family Favorite for years! No complaints here. It so easy too! Don't even need to add any cream or thickening agent OR Potato Flakes. Just Real potatoes~ I cook all my recipes from Scratch. Just like my mom!

- 1. In a 6 quart Dutch oven or Stock Pot, Scrub & cube potatoes. Add them to the pot. Cover potatoes with cold water. Heat on Medium-high heat until boiling. Reduce heat to a simmer. Cook potatoes until tender.Do Not Drain.
- 2. Using a Potato Masher, mash potatoes. Once potatoes are somewhat small,use an Emersion Hand-Blender to puree potatoes. It should become thick. Add salt to taste.Turn stove to low.
- 3. In a skillet, fry bacon. Reserve back 2 Tablespoons Bacon dripings.( I use a metal can to put my bacon dripings in and cover with foil,then put in fridge to use at a later time to flavor green beans or use instead of butter; say in making pancakes etc.)Turn soup to low-medium heat now.
- 4. With remaining drippings,add diced onions to skillet until sauted,then spoon out into soup. Add 2 cups cheese and shredded carrot to soup now. Stir with ladel. Top individual bowls of soup with crumbled bacon & chopped green onions.

I had a difficult time getting this recipe. I got this recipe from my great aunt. I have it memorized so I would never forget it. This is a one of a kind recipe and so delicious. One bowl of this soup will fill you up!

Steps:
- In a large saucepan, melt butter over medium high heat. Sauté celery and onions together.
- Add potatoes and chicken broth.
- Cover and simmer until potatoes are tender, about 12 minutes.
- In batches, puree potatoes in blender and return to sauce pan. (I usually don't use a blender, I just use a fork).
- Stir in milk and seasonings.
- Add the cheese and heat only until melted. garnish with paprika, croutons, and parsley.

- Bake the potatoes in the oven until fork-tender (about 1 hour) cool and remove the peel.
- Place the potatoes in a bowl and mash using a fork.
- Melt butter in a Dutch oven over medium heat; add in onion, garlic and celery (if using) saute until tender.
- Add in flour and cayenne and stir until smooth.
- Add in the mashed potatoes, half and half cream and milk; cook over low heat until thoroughly heated.
- Add in 3/4 cup grated cheddar cheese, 1/4 cup grated parmesan cheese and half of the cooked crumbled bacon; stir until the cheese has melted and the soup is heated through.
- Season soup with salt and black pepper.
- Ladle into serving bowls; sprinkle with remaining crumbled bacon and more cheddar cheese or Parmesan cheese.

CRISPY CHEESY SMASHED POTATOES
I had a few ingredients and wanted to do something different with some baby red potatoes that I had. I love bacon, blue cheese, and green onions, so I threw them all together and this is what I came up with. The combination of the three together is absolutely fantastic!

- Preheat the oven to 450 degrees F (230 degrees C).
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle. Reserve bacon grease.
- Grease a baking sheet with a small amount of the bacon grease and place potatoes on the sheet. Smash potatoes with the bottom of a glass, then brush with more bacon grease. Repeat once more (smashing/brushing). Lightly salt potatoes.
- Roast potatoes in the preheated oven until crispy, about 15 minutes. Top with blue cheese and crumbled bacon. Bake until cheese is melted, about 5 more minutes.
- Top with green onions and serve.

EASY CREAMY, CHEESY POTATO SOUP W/ CRISP BACON
This soup is fabulous, and much easier than the more complicated, time-intensive potato soup that I sometimes make. It is easy to throw together on a weekday night, or for lunch. You can, of course, use real potatoes (2 cups potatoes, skinned and cut into cubes), but I find it is even easier, and just as delicious, to use canned, sliced potatoes. It is a filling, creamy, and hearty soup, one that can easily be served alone for a complete meal. Although shared with me by my sister-in law, it actually originally came from a Gooseberry Patch cookbook, and then has been adjusted by me. You will love this soup - as my husband says, "This soup is awesome!!!! "

- In a 3-qt sauce pan, combine potatoes, water, regular salt, and pepper.
- NOTE: If using real, uncooked potatoes, bring to a boil, cover and simmer for 10 mins, until potatoes are tender.
