SUNNY'S PERFECT SCRAMBLED CHEESY EGGS

3 tablespoons butter
12 eggs
Salt and freshly ground black pepper
3/4 cup shredded Cheddar-Monterey Jack cheese blend

Steps:

  • In a large nonstick pan with sloped sides (even a wok shape works), melt the butter over medium-low heat, being careful to not brown the butter. If it begins to bubble, the heat is too high, so lower the heat to cook the eggs properly. (Slow and low like BBQ is the way to go with eggs.)
  • Meanwhile, in a large bowl, add the eggs and 1 teaspoon cold water. Vigorously whisk until frothy and smooth. Swirl the pan around to coat the butter on the bottom and up the sides. Pour the eggs into the pan and let sit for a few seconds. When the eggs begin to lightly set on the bottom, use the whisk to gently beat the eggs, then allow them to sit for just a few seconds between beating them again. Curds will begin to form and increase throughout the cooking time. Repeat this process of whisking then resting the eggs for a few seconds until about 50 percent of the eggs are set and the rest are still wet. At this point, sprinkle the eggs with a pinch of salt and pepper and continue to whisk and rest alternately. Once the eggs are 75 percent done, add the cheese and from this moment, continue to whisk the eggs until done. This entire process from pouring in the eggs to them being finished should take 8 to 12 minutes; this isn't a race, only a journey to the best scrambled eggs ever. Remove from the heat and continue to scramble in the last seconds. Serve warm.

2 slices cheddar cheese
1 tablespoon butter

Steps:

  • Slice the cheese into tiny squares.
  • Crack the eggs into a bowl and mash them up with a fork.
  • (Be sure to wash the fork to prevent raw egg poisoning.) Put the butter on a pan on a stove-top set on high.
  • Let it melt and move it around until it covers the entire pan.
  • Pour the cheese and the eggs into the pan, and using a fork or something else, spread the eggs around, never letting them stay in one space too long.
  • Take the eggs out when you desire according to wether you like them hard or soft.
  • Enjoy.

1/2 cup egg substitute or 2 eggs
1 pinch salt, to taste
1 pinch pepper, to taste
1 tablespoon fat free sharp cheddar cheese, finely shredded
1 dash non-fat cooking spray, about one 3-second spray
1 teaspoon fat-free margarine
2 slices sugar-free whole wheat bread, toasted

Steps:

  • Preheat a 6-8" skillet over medium heat, remove from heat source and spray with cooking spray and return to heat.
  • Crack or measure eggs and deposit into bowl with high sides, add salt and pepper, beat eggs with fork or whisk until well blended.
  • Pour egg mixture into heated skillet and stir slowly until egg begins to follow cooking utensil around the pan. I use a nylon spoon, but you can use an egg turner [commonly, but erroneously referred to as a "spatula"], etc.
  • Add the cheese and stir to evenly distribute the cheese as it melts. Stirring slowly, cook until eggs are no longer runny and are light and fluffy. Three to four minutes total should do it. Remove to plate and serve with lightly buttered toast.

This is as close to authentic as I could get with the ingredients I had on hand. Measurements are approximate, add more or less according to your taste. I'm eating this now, and it's SOOOO good, I just had to share it.

1 teaspoon olive oil
1/4 cup green bell pepper, chopped
1/4 cup onion, chopped
1 tablespoon garlic, minced, from jar*
1/2 cup pork brisket, cooked
2 tablespoons salsa
3 eggs
salt
pepper

Steps:

  • In small nonstick skillet, heat olive oil over medium-high heat.
  • Add bell peppers and onions; saute until almost soft.
  • Add minced garlic (*use less if fresh) and stir, cooking another minute.
  • Meanwhile, roughly chop pulled pork (pork brisket, or machaca) and add in, stirring with onion mix.
  • Let ingredients sit a bit to "crisp," although they won't get precisely crisp, it's more cooking some of the moisture out.
  • Add in salsa and stir, again allowing to sit a bit before stirring again.
  • In small bowl, stir together 3 eggs, salt & pepper.
  • When the machaca mix is no longer wet, pour the eggs over all, and let sit a bit to become solid.
  • When the eggs start becoming solid, scrape cooking spoon on bottom to create "tunnels" for the liquid to settle in; do this several times.
  • When only the top is still looking moist, flip over to cook through.
  • Serve.
  • Note: I eat this as is, and it's a perfect portion for my hearty appetite! However, you are welcome to add other condiments to your liking, such as chopped jalapenos, more salsa, cilantro, cheese, sour cream, or have warmed tortillas to make tacos or burritos with.

12 eggs
1 cup milk
8 ounces cream cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter
chives, topping (fresh or dried)

Steps:

  • Preheat frying pan over medium heat.
  • Whilst that's heating, process eggs, milk, cheese and S & P in blender until frothy (scrape the sides once or twice).
  • Turn heat in pan down to medium-low, drop butter into pan, smear it around.
  • Immediately add blender ingredients and cook WITHOUT STIRRING until eggs set on bottom.
  • Draw a spatula across the bottom to form large curds.
  • Continue cooking, eggs should be thickened but STILL MOIST for best texture and edibilty.
  • DO NOT STIR CONSTANTLY!
  • Remove from heat. Sprinkle with chives, serve warm.

3 eggs

3 cheese slices
1 pinch salt

Steps:

  • Get a Paper Bowl.
  • Crack 3 eggs into the bowl and whisk (I use a fork and do it on side back and forth for fluffy eggs).
  • Add the water slowly with some salt .
  • When it is done, turn the heat on medium (4-5) and put butter in the pan, pouring the melted butter on the sides so they do not stick.
  • when butter is all around the pan, pour the egg mixture in, whisking it until it is all gone, have slightly higher heat.
  • Wait for egg to cook until white rim is around the eggs, then move them slowly all around until it all cooks.
  • Add salt or pepper if wanted, then turn off the heat when they look cooked.
  • Put the cheese on the eggs and stir until it is all melted.
  • after that put on pepper or salt if wanted, put on a plate, and enjoy the goodness :).
