My version of my grandmother's layered elbow, smoked sausage, stewed tomato, and cheese casserole.

1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

2 12-oz. tubes refrigerated biscuits
1 lb. ground pork breakfast sausage, browned and drained
2 c. shredded Monterey Jack cheese

Steps:

  • Flatten each biscuit to a 3-inch circle. Arrange 12 biscuits in a Bundt® pan sprayed with non-stick vegetable spray, overlapping if necessary. Spread browned sausage evenly over biscuits in pan. Sprinkle cheese evenly over sausage. Cover with remaining biscuits. Bake at 375 degrees for 22 to 25 minutes, until biscuits are golden. Turn out of pan onto a serving plate; let stand 5 minutes before slicing. Serves 8.

3 cups biscuit mix, such as Bisquick
1 pound spicy sausage (uncooked)
1 tablespoon chopped fresh rosemary
8 ounces aged white Cheddar, grated
8 ounces sharp yellow Cheddar, grated
1 tablespoon hot sauce, such as Tabasco (or to taste)

Steps:

  • Preheat the oven to 400 degrees F. Grease 2 baking or cookie sheets and set aside.
  • Combine the biscuit mix, sausage and rosemary in a large bowl. Mix with your hands, then work in the white and yellow Cheddars and hot sauce. Form into balls the size of walnuts and place on the prepared baking sheets. Bake until cooked through, about 20 minutes. Serve warm.

1 pound bulk pork sausage
2 tubes (12 ounces each) refrigerated biscuits
2 cups shredded Monterey Jack cheese

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. , Flatten each biscuit to a 3-in. diameter. Press half of the biscuits onto the bottom and 2 in. up the sides of a greased 10-in. fluted tube pan. Spoon sausage over dough; sprinkle with cheese. Top with remaining biscuits. , Bake at 350° for 20-25 minutes or until golden brown. Let stand for 10 minutes before inverting onto a serving plate.

One summer day we were hungry and stranded at the house. We looked in the house and came up with these ingredients. Put them together, and ended up creating my favorite meal! It's so fast and easy!!!! Enjoy!

1 (16 ounce) package ground pork breakfast sausage (I use the spicy however you can use whatever you want)
1 (11 ounce) can cream of chicken soup
4 cups white rice
2 cups shredded cheddar cheese (Any kind of shredded cheese will work, I really like the jack cheese blend. -- )

Steps:

  • Boil the rice.
  • In the meantime, brown up the sausage, drain and add the can of cream of chicken.
  • Put rice in a bowl scoop a spoonful or two of the sausage mixture over the rice.
  • Add cheese to your desire!
  • Eat!

This is a recipe I got from my sister who said that EVERY time she had taken it somewhere, it disappeared quickly, people raved and wanted the recipe--and I found it to be the case as well. It's a winner in my book!

8 ounces crescent rolls
16 ounces Bob Evans sausage
8 ounces cream cheese
1 egg, beaten
1/2 teaspoon poppy seed

Steps:

  • Preheat oven to 375 degrees.
  • Brown sausage and drain.
  • Add cream cheese and stir until melted and mixed thoroughly. Set aside.
  • On cookie sheet roll out package of crescent rolls as one rectangular piece--pinch perforations closed.
  • Spread sausage/cheese mixture onto crescent roll 1" from the sides.
  • Starting at one end, roll up.
  • Pinch ends closed.
  • Move roll to center of cookie sheet using two spatulas placed under ends to avoid breaking the roll apart.
  • Beat egg and brush over entire roll. Wipe any excess thoroughly from cookie sheet to avoid crusting at the bottom of the roll.
  • Sprinkle poppy seed over the top of roll.
  • Bake at 375 degrees for 30 minutes.
  • Before serving let set for 30 minutes.
