1 pound lean ground beef (90% lean)
2 cups pizza sauce or pasta sauce
1 package (3-1/2 ounces) sliced pepperoni, chopped
4 slices American cheese, chopped
12 mini buns, split
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Stir in pizza sauce, pepperoni and American cheese. Cook and stir until cheese is melted, 4-5 minutes., Place buns on a baking sheet, cut sides up. Spoon meat mixture onto buns; top with mozzarella cheese. Bake until cheese is melted, about 5 minutes. If desired, serve with additional warmed pizza sauce.

Steps:

  • With a spoon, press down on the center of the bread to form a pocket.
  • Line the edges of the bread with butter, and crack an egg into the pocket.
  • Line the edges of the bread with shredded cheese.
  • Sprinkle on salt and pepper, and bake at 400°F (204°C) for 10-15 min. 10 min will have a runny yolk whereas 15 min will have a firmer yolk.

I have two words that will change your world: pepperoni butter. Just blitz up some soft butter with a chunk of pepperoni. Of course, using good-quality pepperoni makes a difference, and I recommend buying it from a deli as a whole piece rather than presliced, since the latter can get dry ( 'nduja, a soft spiced-meat mixture, or mortadella are both fantastic too). With fresh mozzarella melted over the top until molten, this toast is like pizza bread 2.0. If you have leftover pepperoni butter, try melting a knob into warmed pasta sauce-it transforms even the plainest red sauce into a nuanced and spectacularly spiced ragu.

8 tablespoons (115 g) unsalted butter, softened
2 ounces (55 g) unsliced pepperoni, cut into 1/2-inch pieces
1/2 teaspoon smoked paprika
1/4 to 1/2 teaspoon red pepper flakes
Four 3/4-inch (2 cm) thick slices country-style bread
1/2 pound (225 g) fresh mozzarella cheese, cut crosswise into 8 slices
4 tablespoons (1/4 cup) roughly chopped or torn fresh basil leaves
Kosher (coarse) or flaky salt

Steps:

  • 1. Make the pepperoni butter: In a food processor, combine the butter, pepperoni, smoked paprika, and red pepper flakes and process until well combined. The final mixture should be semi-smooth.
  • 2. Make the toast: Spread a generous amount of the pepperoni butter over each slice of bread. Position an oven rack in the top third of the oven, 3-5 inches (7.5-10 cm) from the broiler (grill) element, and preheat to high. If you have an old-school broiler drawer beneath your oven, you can get a better result by setting the baking sheet on top of a muffin tin, thereby elevating the baking sheet to 2-3 inches (5-7.5 cm) from the heating element. Set the bread on a foil-lined baking sheet and broil until golden brown, about 2-3 minutes (watch the bread closely as broiler intensities vary--never walk away from food under the broiler!). Flip the bread slices and toast the other side until golden brown, another 1-2 minutes.
  • 3. Place 2 pieces of mozzarella over each bread slice (overlapping if necessary), set on the baking sheet, and broil until the cheese is melted and browned, 2-3 minutes (watch the cheese closely as the broiler intensities vary).
  • 4. To serve, top each toast with 1 tablespoon basil and sprinkle with salt.

2 cups grated Monterey Jack
1/2 cup mayonnaise
1/2 cup grated Parmesan
1/2 stick (4 tablespoons) butter, softened
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon seasoned salt
1 crusty French loaf

Steps:

  • In a medium bowl, combine the Cheddar, Monterey Jack, mayonnaise, Parmesan, butter, salt, pepper and seasoned salt.
  • Cut the loaf in half lengthwise, then into thirds or fourths. Evenly spread the cheese mixture onto the bread pieces. Wrap each piece in a foil "purse," leaving a little room at the top between the cheese and the foil.
  • The bread can either be frozen for later, or baked right away. If baking right away, place on a baking sheet and bake at 350 degrees F for 10 minutes. If cooking from frozen, bake on a baking sheet at 350 degrees F for 20 minutes.

2 tablespoons butter
8 (1/2-inch thick) slices ciabatta bread

Steps:

  • Mix the sugar and cinnamon in a small bowl, if desired. Melt the butter on a heavy griddle over medium heat. Coat both sides of the bread slices with the melted butter on the grill and arrange on grill. Sprinkle with sugar. Once bread has nice grill marks, about 2 minutes, flip over and grill the sugared side for 2 minutes until caramelized. Transfer the toasts to a plate, sugar side up. Cool slightly, then cut diagonally in half. Eat toasts sugared side down.

Steps:

  • Preheat the broiler. Place the bread on a baking sheet and broil until lightly golden on both sides.
  • Whisk 2 tablespoons olive oil with the garlic and basil in a small bowl; brush evenly on the toasted bread. Season the tomatoes with salt and pepper; arrange a layer of tomatoes on each bread slice. Chop any remaining tomato slices and set aside for the salad. Top the bread evenly with the gruyere, mozzarella and parmesan. Return to the broiler and cook until the cheese melts, about 2 minutes.
  • Whisk the vinegar and the remaining 2 tablespoons olive oil in a large bowl; season with salt and pepper. Add the greens and the reserved chopped tomatoes and toss. Serve the cheese toast with the salad and chips.
