BEST EVER JALAPENO POPPERS

Best Ever Jalapeno Poppers image

This is a recipe I made by taking the best of three or four popper recipes and combining them to make something that tastes wonderful. A frequent request at my house, and at others. I usually make 100 and put them in the fridge. They don't last long. Adjust the amount of bacon bits and type of shredded cheese to taste. Increase the recipe as necessary! Lots of tests helps to best figure out the way you like it. Be sure to wear rubber gloves while seeding the jalapenos -- they will burn.

Time 1h

Yield 32

Number Of Ingredients 8

12 ounces cream cheese, softened
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
12 ounces jalapeno peppers, seeded and halved
1 cup milk
1 cup all-purpose flour
1 cup dry bread crumbs
2 quarts oil for frying

Steps:

  • In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.
  • Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.
  • Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
  • In a medium skillet, heat the oil to 365 degrees F ( 180 degrees C). Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.

Cheesy Jalapeño Popper Pasta Skillet image

We didn't just turn a favorite appetizer into a one-skillet dinner-we made it as easy (and cheesy) as we could! This hearty pasta gets a shortcut from Hamburger Helper™ and just the right amount of heat from pickled jalapeños.

1 tablespoon butter
1/2 cup Progresso™ plain panko crispy bread crumbs
4 slices bacon, cut into 1/2-inch slices (4 oz)
1 lb lean (at least 80%) ground beef
2 cups milk
1/2 cup hot water
1 box Hamburger Helper™ cheeseburger macaroni

1/3 cup sliced pickled jalapeños (from 16-oz jar)
2 green onions, thinly sliced

CHEESY JALAPENO POTATO POPPERS

Cheesy Jalapeno Potato Poppers image

Use the leftover mashed potatoes to make these crunchy, creamy, utterly Golden-Brown-and-Delicious morsels of comfort food. That is the power of the potato, friends.

Provided by Rebecca Lindamood

Time 20m

Number Of Ingredients 8

6 cups leftover mashed potatoes (cold)
1 beaten egg
1 1/4 cups shredded Monterey Jack or Pepper Jack cheese
3/4 cup flour
1 fresh jalapeno pepper (stemmed then finely minced)
4 green onions (trimmed of the root ends and finely minced)
2 to 3 inches of canola or peanut oil in a heavy-bottomed (high-sided pan)
salt for sprinkling after frying

Steps:

  • Mix together the mashed potatoes, beaten egg, grated cheese, flour, jalapeno pepper, and green onions until you have an even mixture. Set aside.
  • Heat the oil in the pan until shimmery or until it reaches 350°F on a deep-frying thermometer. Carefully drop spoonfuls or use a small cookie scoop to drop small rounds of the batter into the hot oil. Fry for 3 to 5 minutes, or until deep golden brown. Use a slotted spoon to transfer the Cheesy Jalapeno Potato Poppers to a paper-towel lined plate to drain and immediately sprinkle with salt to taste. Repeat with the remaining potato mixture in as many batches as needed.
  • Serve hot, or chill the leftover, fried Cheesy Jalapeno Potato Poppers on a sheet pan, then freeze until solid and transfer to a resealable zipper top bag.
