GREEN CHILE CHICKEN ENCHILADA QUINOA CASSEROLE

1 cup uncooked quinoa, rinsed
1/2 pound boneless skinless chicken breasts, cooked and shredded
4 ounce can diced green chiles
1 cup black beans, rinsed and drained
1/2 cup diced red bell pepper
2 green onions, sliced thin
1 zucchini, diced
1 cup low sodium chicken broth
1 1/4 cups green enchilada sauce, red enchilada sauce may also be used if you prefer
4 ounces Cabot Vermont Sharp Cheddar Cheese, shredded
Toppings - diced tomato, avocado, red onion, cilantro, plain Greek yogurt or sour cream

Steps:

  • Preheat oven to 350° F and spray a 9x13 or similar size baking dish with cooking spray.
  • Add the quinoa to baking dish, spreading it into an even layer that covers the bottom of the dish. Add the green chiles, red bell pepper, black beans, green onion, zucchini and shredded chicken. Evenly distribute the ingredients over the top of the quinoa.
  • In a large glass measuring cup or bowl, whisk together chicken broth and enchilada sauce, then evenly pour over all of the ingredients in the baking dish.
  • Cover the dish with foil and bake for 45 minutes. Remove foil and bake for another 10-15 minutes. Sprinkle the cheese evenly over the top and bake for another 5-10 minutes, or until cheese is melted.
  • Top the casserole with diced tomatoes, avocado, cilantro, red onion and plain plain Greek yogurt or sour cream if desired.

Easy to make in one pan, this green chile chicken quinoa casserole is a healthy, filling, and flavorful meal that everyone will love.

1 cup uncooked quinoa
1 green pepper, diced (about 1 cup diced green peppers)
1/2 sweet yellow onion, diced (about 1 cup diced)
1 (4.5 oz) can Old El Paso chopped green chiles
1 can (15 oz) low-sodium black beans, drained and rinsed
1 teaspoon ground cumin
1 (10-ounce) can Old El Paso green enchilada sauce
2 cups chicken broth
1/2 cup chopped fresh cilantro leaves and thin stems
1.5 -2 pounds boneless skinless chicken breasts, chopped into small bite-sized pieces
salt and freshly ground black pepper, to taste
1 cup shredded Monterey Jack cheese
Optional toppings: cilantro, tomatoes, avocado, jalapeno

Steps:

  • Preheat oven to 375°F. Spray a 9×13 (or larger) baking dish with nonstick cooking spray (I used avocado oil spray).
  • Combine all ingredients except cheese and toppings in prepared baking dish. Stir to combine.
  • Cover tightly with foil and bake for 45 minutes. Uncover, stir, and recover tightly. Continue to bake for another 45 minutes to 1 hour or until quinoa is fluffy and chicken is cooked through.
  • Uncover and sprinkle with cheese and bake for five minutes or until cheese is melted.
  • Serve with desired toppings.

3 cups cooked quinoa
16 ounces non-fat plain Greek Yogurt OR (vegan sour cream)
1/4 cup milk of choice
2 cups shredded cheddar OR Daiya shreds (divided)
1 cup onion (chopped fine)
4 ounces chopped green chiles
1 jalapeno pepper (seeded and diced)
1 teaspoon ground cumin
½ teaspoon sea salt
¼ teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 350 degrees. Spray an 8 inch baking dish with olive oil spray.
  • In a large bowl combine yogurt and milk. Add quinoa, 1 1/2 cups cheese, onion, green chiles, jalapeno, cumin, sea salt and fresh ground black pepper. Top with remaining 1/2 cup cheese. Bake for 30 minutes.
  • May be frozen prior to baking. Thaw dish in the refrigerator. Bake for 30 to 40 minutes, until heated through.

2 cups shredded cheddar cheese
1 can (7 ounces) whole green chiles, rinsed and seeded
2 large eggs
2 tablespoons all-purpose flour
1 can (12 ounces) evaporated milk
1 can (8 ounces) tomato sauce or 1 cup fresh salsa, drained, divided

Steps:

  • In a large bowl, combine cheeses. In a greased 2-quart baking dish, layer cheese and chiles. Whisk the eggs, flour and milk; pour over cheese mixture. , Bake at 350° for 30 minutes. Top with half of the tomato sauce or salsa; bake 10 minutes longer or until heated through. Let stand for 5 minutes before serving. Serve with remaining sauce.

2 tablespoons butter
2 onions, diced
Two 15-ounce cans diced green chiles
2 to 4 chipotle peppers in adobo, finely chopped
4 pounds processed cheese, such as Velveeta, cut into chunks
2 cans green chile enchilada sauce

Steps:

  • Set a large skillet over medium heat and add the butter. Once melted, add the onions and cook until starting to soften, 2 to 3 minutes. Add the green chiles and chipotle peppers and cook for a minute. Add the cheese and let it melt. Add the enchilada sauce and give it all a stir. Transfer to a slow cooker to keep warm.

One 8-ounce container mascarpone
1/2 small onion, thinly sliced
2 cloves garlic, thinly sliced
Pinch freshly grated nutmeg
1 teaspoon smoked paprika
Zest of 1 lemon
Pinch kosher salt
Pinch freshly ground black pepper
2 bunches Tuscan kale, stemmed and torn into large pieces
2 small or 1 large bunch regular kale, stemmed and torn into large pieces
3 cups grated Gruyere
1/2 cup panko breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large Dutch oven, combine the cream, mascarpone, onion, garlic, nutmeg, smoked paprika, lemon zest, salt and pepper, then bring to a simmer over a medium-low heat, stirring as you go. Simmer gently until the onions and garlic are very soft, about 10 minutes.
  • Add all of the kale to the cream mixture, then cover and allow to wilt, about 3 minutes. Stir and cook until the greens are just wilted and coated in the cream mixture.
  • Transfer the greens mixture to a 10-inch cast-iron skillet and spread evenly. Top with the Gruyere and panko breadcrumbs. Place the skillet on a baking sheet and bake until bubbly and the cheese is melted, about 30 minutes.

  • Place the quinoa in a fine mesh strainer and rinse throughly with cool water for at least two minutes. Drain. In a medium saucepan, heat 2 teaspoons olive oil over medium-high heat. Add the quinoa and cook, stirring, for about one minute. The quinoa should begin to dry out and pop a bit. Add the chicken stock. Stir and bring to a boil. Turn the heat down to low and cook, covered, for 15 minutes or until all the water is absorbed. Remove the pan from the heat and let stand, covered, for 5 minutes.
  • Meanwhile, in a large skillet, heat 1 tablespoon olive oil over medium heat. Add onions and peppers and cook, stirring occasionally until soft, about 7 minutes. Add garlic and zucchini and cook 5-10 more minutes, until the zucchini is soft and beginning to brown.
  • Fluff the quinoa with a fork and place it in a large bowl. Add onion mixture, beans, green chiles, tomatoes, corn, cumin, oregano, chili powder, lime juice, and salt to taste. Mix thoroughly and transfer to prepared baking dish. Bake 30 minutes, top with cheese, and bake 10 minutes more or until melted and just beginning to brown.
