Crunchy Cheese Dip image

The combination of flavors makes this dip very interesting as well as delicious. It's a challenge to not eat a lot while you're making it. I'm usually anxious for my guests to arrive so I can serve it and dig in!

Yield about 3-1/2 cups.

Number Of Ingredients 10

2 packages (8 ounces each) cream cheese, softened
1 cup chopped pecans
1 can (8 ounces) water chestnuts, drained and chopped
3/4 cup pineapple tidbits
3 tablespoons minced chives
1 tablespoon unsweetened pineapple juice
1 teaspoon seasoned salt
1/4 teaspoon pepper
Minced fresh parsley
Assorted crackers

Steps:

  • In a small bowl, combine the cream cheese, pecans, water chestnuts, pineapple, chives, pineapple juice, salt and pepper. Garnish with parsley. Cover and chill. Serve with crackers.

Warm melted VELVEETA makes a splendid dip for crunchy sweet potato fries, apple wedges and fish sticks.

1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes
2 Tbsp. milk
2 cups hot baked frozen sweet potato fries
4 small apples, cut into wedges
8 hot cooked frozen breaded fish sticks

Steps:

  • Cook VELVEETA and milk in saucepan on medium-low heat 5 min. or until VELVEETA is melted, stirring frequently.
  • Place remaining ingredients evenly on 4 plates.
  • Spoon VELVEETA sauce evenly into 4 small ramekins or paper cups; place on plates for dipping.

These home-made crunchy chicken pieces are a hit with children, they are lower in fat and salt than you would expect.

100 g white bread, crusts removed
100 g mature cheddar cheese, grated
2 large egg whites, lightly whisked
4 tablespoons plain flour, lightly seasoned
340 g fresh mini breast chicken fillets

Steps:

  • Preheat oven to 190°C.
  • Line a large baking tray with baking parchment.
  • Place bread in a blender or food processor and blend to make fine breadcrumbs.
  • Mix the breadcrumbs with the grated cheese and tip onto a large plate.
  • Place the egg white and flour in 2 separate shallow bowls.
  • Dip the chicken pieces in the flour first to lightly dust then dip into the egg whites and finally into the cheesy breadcrumbs, turning to evenly coat.
  • Place on prepared baking tray.
  • Bake for 25-30 minutes, until the chicken is thoroughly cooked, there is no pink meat and the juices run clear when pierced with a sharp knife.
  • Serve the chicken dippers with tomato sauce or mayonnaise.
