COMPANY POTATOES
This was a much requested recipe of my mother's. Now that mom is no longer with us, we have this often in her honor.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
- In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
- Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

CREAMY CHEESY POTATOES
Comfort food at it's best! I don't usually measure when I make this dish, so the ingredients are approximations. You may need more or less of an ingredient to suit your tastes. If you want a cheesy dish, use the cheddar cheese soup, otherwise use the cream of mushroom to use as a creamy base.

Steps:
- Preheat oven to 350 degrees.
- Season potatoes to taste.
- Spray a casserole dish with non-stick cooking spray.
- In a bowl, combine milk, soup and sour cream.
- Combine potatoes with milk and soup mixture. Add 1 cup cheddar cheese.
- Spread evenly into casserole dish and push a tblsp of butter into the mixture at 4 different places. This will help to prevent sticking while the dish cooks. Top with remaining cheese.
- Bake for about 30-45 minutes or until cheese starts to brown.

Steps:
- In a large pot cook potatoes, covered in enough water to cover - add salt. Cook for 10 to 12 minutes until tender. Drain and rinse with cold water and drain again.
- Using dry pot that you used to cook the potatoes, stir together soup, sour cream, cream cheese and butter. Add half of shredded cheese, green onions, milk, garlic powder, pepper and parsley. Stir in cooked potatoes and transfer mixture to a baking dish. (in the event your pot is oven safe just use that).
- Sprinkle remaining cheese on top and bake at 350 for 30 minutes or until heated through. Let stand 5 minutes before serving. If you prefer a browned cheese topping, broil for 10 minutes watching closely.
- Prep Time includes dicing and boiling potatoes - cooking time does not include broiling.
