CHEESY LEFTOVER MASHED POTATO PANCAKES
Steps:
- Combine the mashed potatoes, cheese, scallions, egg and 3 tablespoons of the flour in a large bowl (see Cook's Note). With your hands, divide the mixture into 12 portions. Roll each portion into a compact ball, and then flatten it into a pancake about 1/2-inch thick.
- Put the remaining 1/2 cup flour in a shallow dish and carefully coat each pancake in the flour.
- Heat 3 to 4 tablespoons of oil in a large saute pan over medium heat. (Add enough oil to thoroughly coat the bottom of the pan.)
- Fry the pancakes, in batches, until they're golden brown and crispy on both sides, 3 to 4 minutes. Add more oil to the pan as needed between batches. (Do not overcrowd the pan and do not flip the pancakes too soon or they won't develop a crisp crust.) Transfer the pancakes to a paper towel-lined plate and immediately sprinkle them with salt.
- Serve the potato pancakes topped with sour cream and garnished with additional chopped scallions.
CHEESY CORNFLAKES PANCAKES
One this you should know about this cornflakes pancakes is despite these are called pancakes, the recipe doesn't contain any baking powder and bicarb. Therefore don't expect these to be fluffy like your usual pancakes. The batter is crepe-like batter. Therefore, these will turn out like thicker-version of savory crepes which will go FANTASTICALLY AWESOME with bacons. If you don't eat bacon like me, you can try with smoked salmon or in this case with sunny side up eggs. Any suggestions about the toppings will be very much appreciated!

BRITISH MAMGUS PANCAKES
Very light pancakes. The BIG difference between our style of measuring and the British method is that they use a scale to measure ingredients. Since this is a British recipe, please use a scale to measure the flour and sugar or it will not turn out right. Milk can be measured in a measuring cup. From telegraph.co.uk site.

CHEESY CORNFLAKE-TOPPED PARTY POTATOES
This is one of my most requested foods to bring to parties. It's deliciously cheesy and the cornflakes are surprisingly the perfect topper to these potatoes. I advise against making this in a crockpot, it does not turn out as good. The 13 X 9 glass baking dish is definitely the way to go.
