Cod Au Gratin image

This cod au gratin is a cheesy seafood recipe using raw cod fillets, baked slowly in a creamy sauce. Topped with grated hard cheese and breadcrumbs.

1kg (2 lbs) fresh cod fillets
30ml (2 tbsp) butter
30ml (2 tbsp) flour
300ml (10fl oz) milk
15ml (1 tbsp) Dijon mustard
5ml (1 tsp) lemon zest
Salt and pepper, to taste
80ml (⅓ cup) grated Dziugas hard cheese
15ml (1 tbsp) fresh dill, washed and finely chopped
250ml (1 cup) cheddar cheese, grated
160ml (⅔ cup) fresh breadcrumbs
15ml (1 tbsp) oil

Steps:

  • Preheat the oven to 180°C/355°F/ gas mark 4.
  • Melt the butter in a saucepan and incorporate the flour to form a roux.
  • Slowly pour in the milk and whisk vigorously to smooth out any lumps that might form.
  • Continue stirring until the sauce has thickened then add the zest, mustard, dill, and Dziugas cheese. Season to taste.
  • Arrange the cod fillets in one layer in an ovenproof baking dish.
  • Pour the sauce over the fish.
  • Mix the breadcrumbs, cheddar and oil in a bowl then scatter evenly on the fish.
  • Bake for 45 minutes or until it is golden and crispy on top.
  • Serve immediately with crusty bread for dipping in the luscious sauce.

1 pound fresh spinach
1 teaspoon garlic salt
1 pound cod, cut into large pieces
1 lemon, zested and juiced
1 tablespoon chopped fresh dill
1 teaspoon sea salt
½ teaspoon cracked black pepper
1 cup shredded sharp Cheddar cheese
¼ cup Italian-seasoned bread crumbs
¼ cup panko bread crumbs

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Evenly spread spinach in the bottom of prepared casserole dish; sprinkle with garlic salt. Arrange fish atop spinach, keeping the pieces side by side and larger pieces toward the outside of dish. Top fish with lemon zest, lemon juice, dill, sea salt, and black pepper.
  • Combine Cheddar cheese, Italian-seasoned bread crumbs, and panko bread crumbs in a bowl; spread evenly over fish. Cover dish with aluminum foil.
  • Bake in the preheated for 12 to 15 minutes; uncover and cook until fish flakes easily with a fork and topping is lightly browned and crunchy, 5 to 8 more minutes.

1 onion, thinly sliced
1 pound skin-on fresh cod
1 tablespoon seasoned salt, or more to taste
½ cup mayonnaise
2 ½ tablespoons grated Parmesan cheese
2 ½ tablespoons shredded provolone cheese
2 ½ tablespoons shredded mozzarella cheese
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place butter in a 9x13-inch casserole dish.
  • Place casserole dish in the preheating oven until butter is melted, about 5 minutes.
  • Spread onion slices in the bottom of the casserole dish. Place cod skin-side down over onion. Sprinkle seasoned salt evenly on top.
  • Mix mayonnaise, Parmesan cheese, provolone cheese, mozzarella cheese, and fresh parsley together in a bowl. Spread over cod.

This is the best spinach recipe I've ever tasted! It's cheesy and delicious. I use the leftovers--if there are any--to make small appetizer turnovers using phyllo dough. I'm often asked for the recipe.

2 cups shredded Monterey Jack cheese

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup sharp Cheddar cheese
⅓ cup dry bread crumbs
1 egg, beaten
1 pound cod fillets
salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a bowl, mix the spinach, 1/2 cup Cheddar cheese, about 5 tablespoons dry bread crumbs, and the egg. Spread the mixture into the bottom of a small baking dish. Arrange the cod fillets on top of the spinach mixture, and season with salt and pepper. Top with the remaining Cheddar cheese and bread crumbs.

Baked Codfish With Spinach and Cheese Sauce image

3 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1/4 cup heavy cream
1 cup Gruyere or Swiss cheese cut in small cubes
1 egg yolk
Salt and freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
1 pinch cayenne pepper
1 pound fresh spinach
2 tablespoons finely chopped shallots
4 boneless, skinless codfish steaks, about 6 ounces each
1/2 cup white wine
2 tablespoons grated Parmesan cheese

Steps:

  • Melt 1 tablespoon of the butter in a saucepan. Add the flour and stir with a wire whisk until blended.
  • Add the milk and cream all at once. Stir rapidly with the whisk. Bring to a boil and add the Gruyere cheese. Stir until the cheese has melted. Add the egg yolk, stirring rapidly with the whisk. Add salt, pepper, nutmeg and cayenne. Simmer, stirring, for 1 minute. Set aside, cover and keep warm.
  • Pick over spinach and discard any tough stems. Wash spinach thoroughly to remove any sand. Put spinach in a large saucepan, add salt and cook over high heat, stirring, until wilted, about 2 minutes. Drain well and squeeze out excess moisture. Set aside and keep warm.
  • Preheat the oven to 450 degrees.
  • Grease a metal baking dish with 1 tablespoon of the butter. Scatter the shallots over the dish. Neatly arrange the pieces of codfish over the shallots. Season with salt and pepper. Add the wine, cover with foil and bring to a boil on top of the stove. Put the dish in the oven and bake 5 minutes.
  • Select a baking dish large enough to hold the fish in one layer. Spread the remaining 1 tablespoon butter over the bottom of the dish. Spoon the spinach over the bottom and carefully transfer the cooked codfish over the spinach, reserving the wine liquid in the first dish.
  • Reduce by half the wine liquid in the metal baking dish and add it to the cheese sauce. Bring to a boil, stirring with a wire whisk.
  • Spoon the hot sauce over the fish, smoothing it over to cover the fish. Sprinkle with Parmesan cheese. Turn on the broiler unit and put the dish under the broiler with the door open until nicely browned and bubbling.

300g medium potatoes (about 3), thinly sliced
2 tbsp milk
40g mature cheddar , finely grated
1 tsp rapeseed oil
1 onion (160g), finely chopped
1 red pepper , deseeded and finely diced (270g)
2 tsp balsamic vinegar
1 tsp vegetable bouillon powder
400g can chopped tomatoes
½ x 30g pack basil , leaves picked and finely chopped
1 garlic clove , finely grated
280g pack skinless cod loins
100g frozen small Atlantic cooked prawns , defrosted
160g broccoli florets

Steps:

  • Boil the potato slices for 10 mins then drain, tip into a bowl and gently mix in the milk and half the cheese. Don't worry if the potatoes break up a little.
  • Meanwhile, heat the oil in a large frying pan and cook the onion until softened. Stir in the pepper and cook for 5 mins more. Spoon in the balsamic vinegar and bouillon powder, then stir in the tomatoes, basil and garlic. Lay the cod fillets on top, then cover and cook for 6-8 mins until the cod flakes when tested. Heat the grill to high.
  • Take off the heat, stir in the prawns and tip into a shallow baking dish, breaking up the cod into large chunks. Cover with the potatoes and sprinkle with the remaining cheese. Grill until golden. While it's grilling, steam or boil the broccoli to serve with the bake.

200g pack feta cheese
2 x 250g tubs ricotta
3 x 100g bags baby spinach , chopped
1 bunch spring onions , finely sliced
50g parmesan , grated
1 egg
good grating nutmeg
100g breadcrumbs
2 tbsp olive oil
6 sheets filo pastry

Steps:

  • Heat oven to 180C/ 160C fan/gas 4. Mash feta in a large mixing bowl, add the ricotta and mash again to thoroughly mix. Stir in the spinach, spring onions, Parmesan, egg, nutmeg and plenty of seasoning with half the breadcrumbs.
  • Brush a 20 x 30cm tin with a little oil. Layer in half the filo sheets, brushing each with oil before adding the next. Scatter remaining breadcrumbs evenly over the base. Spoon in the ricotta filling and gently spread, so as not to dislodge the breadcrumbs. Cover with remaining filo, brushing with oil as you go, then score into portions. Bake for 35-40 mins until golden and crisp. When cool, freeze in individual squares. Defrost overnight in the fridge and eat cold, or warm in a microwave.
