Protein packed pork and potato one pot supper - cheap and perfect for students.

1kg potatoes , peeled and thickly sliced
1 onion , finely sliced
splash of cider , wine, water or stock
2 tbsp oil , olive if you've got it
4 pork chops , (about 175g/6oz each)
100g hard cheese , grated (we used cheddar)
1 tbsp wholegrain mustard
3 tbsp milk

Steps:

  • Heat oven to 230C/fan 210C/gas 8. In a large bowl toss the potatoes, onion, liquid and oil together. Season if you like. Tip the onion and potatoes into a large sauté pan and bake for 20-30 mins until the potatoes start to brown. Lay the chops on the potatoes and cook for 10 mins more.
  • While the potatoes are cooking, mix the cheese, mustard and milk together. When the chops have had 10 mins, spread the cheese mixture over them and switch the oven over to grill. Place the pan under the grill and cook for about 5 mins until the cheese is bubbling and the potatoes are golden and crispy. Serve straight from the pan.

4 boneless pork chops
3 potatoes, peeled and cut into chunks
1 large white onion, cut up
1 (10 1/2 ounce) can cheddar cheese soup
milk (enough to fill up can)
olive oil (enough to brown pork chops in)
salt and pepper

Steps:

  • Using an electric frying pan, brown pork chops in olive oil.
  • Remove from pan.
  • Lower heat and add can of cheese soup, then fill can with milk and add.
  • Stir with whisk until smooth.
  • Add pork chops, potatoes and onion.
  • Bring temperature up to simmer.
  • Simmer covered for 30 minutes, stirring occasionally.
  • Serve in a casserole dish.
  • (Very rich & delicious!).

Another of my "dig around in the cabinets and make dinner from what I have on hand because I am too lazy to go to the grocery store" meals. Dan liked it so I am posting it here in case I ever want to make it again!

8 ounces uncooked elbow macaroni
1 lb pork chop
1 -3 canned chipotle chile, chopped
1 tablespoon adobo sauce (from chipotles)
2 tablespoons flour
1 1/2 cups milk
8 ounces shredded cheese (I used velveeta but cheddar would be great too)
3 tablespoons chopped cilantro
2 tablespoons oil (to brown chops)
1 large tomatoes, diced

Steps:

  • Cook macaroni according to directions on the box, set aside, keeping warm.
  • Brown chops in oil over medium/high heat for 10 minutes, or until almost cooked; time depends on the thickness of the chops.
  • Lower heat to medium/medium-low and remove chops, set aside keeping warm.
  • Sprinkle flour into pan, just like you are going to make a roux.
  • Allow to cook for two or three minutes so that you don't get a floury taste in your sauce.
  • Slowly add milk, go slowly,you might want to use a whisk.
  • Bring sauce just to a boil and add chipotles.
  • Start adding cheese a little at a time and stir well until melted.
  • Put chops back in pan and cook over low heat until chops are done about 5-10 minutes.
  • Right before serving, stir in cilantro.
  • Serve over elbow macaroni and top with chopped tomatoes.
  • I actually never removed the chops, sprinkled the flour directly over them and made my sauce around the them; I also threw the macaroni into the pan for the last few minutes and stirred it in so that each noodle would be totally coated with cheesey sauce.

2 tsp olive oil
1 tsp English mustard
4 tbsp caramelised onions , from a jar
50g Cheshire cheese , grated
1 tsp thyme , chopped

Steps:

  • Heat grill to high, then place the chops on a grill pan, rub with oil and season. Grill for about 6 mins on each side, until golden.
  • Spread a little mustard over one side of each chop, then top with 1 tbsp onions. Mix the cheese and thyme, sprinkle over the chops, then grill until golden and bubbly.

4 pork tenderloin steaks
1 1/2 teaspoons dried Italian herb seasoning
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons vegetable oil
1 (10 1/2 ounce) can cheddar cheese soup
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup water
4 medium potatoes
1 medium onion, thinly sliced

Steps:

  • Trim excess fat from chops.
  • In a small bowl, mix Italian seasoning, garlic powder, salt and pepper.
  • Sprinkle half of the herb mixture onto chops and rub inches
  • In a large skillet over med-high heat, brown both sides of the chops in hot oil; set aside.
  • Reduce heat to low.
  • Pour off excess drippings from skillet.
  • Add soups and water, stirring to loosen browned bits on bottom of skillet; set aside.
  • Meanwhile peel potatoes.
  • Slice into a large bowl.
  • Add onion and remaining herb mixture, tossing to coat well.
  • Spread on bottom of crock pot.
  • Cover with pork chops.
  • Evenly pour soup mixture over potatoes.
  • Cook on low 8 - 9 hours.
