CHEESY SAUSAGE SPAGHETTI PIE
I have made freezer meals for years now, and this is by far my most requested. In fact, I like to make several of these Italian pies at one time so we can have one every week for more than a month! Steps:
- Cook spaghetti according to package directions; drain and place in a large bowl. Add eggs and Parmesan cheese. Transfer to three greased 9-in. pie plates; press mixture onto the bottom and up the sides to form a crust. Set aside. , In a large saucepan, saute onion in butter until tender. Remove from the heat; stir in sour cream and Italian seasoning. Spoon into the crusts. , In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in water and tomato paste. Simmer, uncovered, for 5-10 minutes or until thickened. Spoon over sour cream mixture. Sprinkle with mozzarella and cheddar cheeses. , Cover and freeze two pies for up to 1 month. Cover and bake third pie at 350° for 35-40 minutes or until heated through. , To use frozen pies: Completely thaw in the refrigerator. Remove from the refrigerator 30 minutes before baking. Bake as directed.

Steps:
- Cut sausage into one inch pieces and brown in olive oil in large saucepan.
- Add mushrooms, celery, onion, green pepper and garlic; Sauté until vegetables are tender.
- Stir in tomato sauce, diced tomatoes, wine, water, oregano, sugar, rosemary, bay leaf and salt and pepper; simmer uncovered for 1 hour.
- Cook spaghetti according to package directions and drain well.
- Remove bay leaf from sauce.
- Serve spaghetti with sauce and parmesan cheese.

- Generously butter a casserole dish; now place a few tablespoonfuls of spaghetti sauce into dish and spread evenly across base.
- In a saucepan over medium heat stir together the remaining spaghetti sauce, undrained tomatoes, red wine, Italian seasonings, and frozen baby spinach; cook until hot and bubbly.
- Add the shredded cooked chicken breast into the sauce mixture and heat through (add about 1/2 to 1 cup of water, if sauce mixture seems too thick).
- Turn off the heat; stir about half of the shredded cheddar cheese (1 cup) into the sauce mixture, stirring well to combine.
- Into the prepared casserole dish evenly spread the freshly cooked spaghetti noodles, and top with sauce mixture taking care to spread evenly over noodles to coat.
- Sprinkle evenly with Parmesan and remaining cheddar cheese.
- Bake in preheated 350F degree oven for 30 minutes, until casserole is hot and cheese is melted. Remove from oven and let cool for about 15 minutes before serving. Good served with a sprinkling of chopped fresh parsley.

- In a large skillet, saute onions, celery, and bell pepper in the margarine.
- In a large bowl, combine onion-pepper that was just cooked, and the seasonings,spaghetti, chicken, sour cream, and alfredo sauce and mix well.
- Fold in peas and half of the mozzarella cheese.
- Spoon into greased 10x14 inch deep casserole dish, and bake covered at 350 degrees for 45 minutes.
- Remove from oven and sprinkle remaining cheese over the dish.
- Return to oven for 5 additional minutes.
