CHEESY BAKED ONIONS

- Heat oven to 220C/fan 200C/gas 7. Halve each onion through the middle. Microwave in pairs for 4 mins on High until soft. Remove the middles of the onions, leaving about 3 outer layers in place, like little bowls.
- Whizz the onion middles in a food processor until pulpy. Mix with the mozzarella, half the cheddar, the olives, peppers, garlic, crumbs and most of the thyme, then season well. Spoon the filling into the onion cases and transfer to a baking dish. Sprinkle with the remaining cheddar and thyme, then roast for 15 mins until hot through and golden.

I never liked asparagus growing up until I tried this baked asparagus recipe that my aunt made. Now I eat it almost every week. Highly recommend this recipe for kids who are fussy about eating asparagus or vegetables. If you like asparagus, you will love this! Super easy to make.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a large baking sheet with cooking spray.
- Snip the white ends off of the asparagus so that all of the stalks are roughly the same length. Lay the stalks on a baking sheet so that they are all touching.
- Drizzle asparagus stalks with olive oil. Shake the onion soup mix packet to mix up any settled ingredients; sprinkle over asparagus.
- Bake in the preheated oven until softened and lightly browned, 25 to 35 minutes.
- Remove from oven; sprinkle mozzarella cheese on top of the asparagus. Continue baking until cheese is melted and starting to brown, about 5 minutes more.

- Slice onion and separate into rings; place in a greased 1-qt. baking dish and set aside. In a small saucepan over low heat, melt the butter. Stir in the flour and salt until smooth. - Place Vidalia slices in lightly greased 2 quart casserole dish and set aside.
- Melt butter in a heavy saucepan over low heat. Add flour, stirring well until smooth. Cook for 1 minute while stirring.
- Gradually add milk.
- Cook over medium heat while stirring until it thickens and becomes bubbly.
- Add cheese and salt, stirring until the cheese melts and sauce is smooth.
- Pour over Vidalias and bake uncovered at 350° for 1 hour.

- In a large skillet melt butter over medium-high heat; add in onions and saute until translucent and slightly brown, then season with salt to taste.

- Defrost Onions.
- Melt butter then stir in flour, salt and pepper.
- Cook 2 minutes.

- 1. Heat oven to 350. Spray a 1-1/2-quart casserole dish w/ cooking spray. In lg skillet over med-high heat, melt butter. Add onions, saute until soft, about 10 ins.
- 2. In bowl, combine flour, salt and pepper. Add 1 cup cheddar cheese and 1 cup monterey jack cheese, add scallions. Add onions.
- 3. Pour into casserole dish. Sprinkle remaining cheeses over top. Bake until bubbly, about 30 mins.
