SAUSAGE AND BACON BREAKFAST QUICHE

Steps:
- Preheat oven to 350 degrees.
- In a medium bowl, toss cheese with flour. Set aside.
- In a large bowl, combine eggs and milk. Add bacon, sausage and cheese mixture, mixing well. Pour egg mixture into unbaked piecrust.
- Bake until eggs are set and a wooden toothpick inserted into the center of the quiche comes out clean, approximately 1 hour.
- Let cool slightly, serve warm.

Steps:
- Preheat oven to 350°.
- In skillet cook the sausage links 4 or 5 minutes, until cooked through.
- Remove sausage; drain the fat.
- Wipe skillet then add bacon.
- Cook until crispy; remove, leaving only 1 tablespoon of fat.
- Sauté onion and pepper in fat for 12 minutes, until softened.
- Crumble the bacon slices and slice the sausage links.
- In pie shell, layer with the cheese, bacon, onion, green pepper and sausage.
- In bowl, whisk together milk, eggs and flour.
- Pour over layered pie.
- Bake for 45-60 minutes until set, then cool for about 1/2 hour.
CHEESY BACON AND SAUSAGE QUICHE
I came across this one playing around in the kitchen of course. The flavors just meld together nicely. The smoky flavor is just enough to complement the other ingredients.

- Preheat the oven to 400 degrees F (200 degrees C).
- Mix hash brown potatoes and melted butter together in a bowl. Press mixture into a 9-inch glass pie pan to form a crust.
- Bake in the preheated oven until golden brown, about 25 minutes.
- Whisk cream, eggs, cayenne, salt, and pepper together in a bowl; let warm up to room temperature while the crust cooks.
- Remove crust from the oven and lower heat to 350 degrees F (175 degrees C).
- Add red pepper, bacon, and sausage to the cooled crust. Sprinkle Gouda and Cheddar cheeses over top, then pour in egg mixture.
- Bake in the preheated oven until a knife inserted in the center comes out clean, about 30 minutes.
- Let cool a bit before serving, about 10 minutes.

- Line unpricked pastry shell with a double thickness of heavy-duty foil.
- Bake at 450 degrees for 5 minutes; remove foil.
- Bake for 5 minutes longer; remove from the oven and let cool.
- Reduce heat to 425 degrees.
- Sprinkle bacon, cheeses and onion over the crust.
- In bowl, beat eggs, cream, salt, sugar and cayenne; pour into crust.
- Bake for 15 minutes.
- Reduce heat to 300 degrees; bake 30 minutes longer or until a knife inserted near the center comes out clean.

CHEESY SAUSAGE QUICHE
This is a savory,hearty quiche that even men who "don't eat quiche" will love. This recipe is from a childhood friend of my husband.

Steps:
- Brown sausage and drain then rinse with hot water to remove excess fat.
- Place sliced onion in drippings from sausage and cook until onions are translucent.
- Remove and blot in paper towel to remove excess fat.
- Mix sausage and cheese with green pepper (optional) and add flour and mix until coated with flour.
- Place in unbaked pie shell.
- Place onions ontop of quiche.
- Mix spices with beaten egg and add evaporated milk, and stir.
- Pour milk mixture evenly over the quiche.
- Bake at 350 degrees for 35-40 minutes or until quiche is set.
- Let set for 10 minutes before serving.
