CHEDDAR BACON PUFFS
Steps:
- Gather the ingredients.
- Line two baking sheets with parchment paper or silicone baking mats. Set aside.
- Preheat the oven to 400 F.
- In a medium saucepan, combine the water, milk or light cream, salt, and butter. Put over high heat and cook, stirring, until butter is melted. Bring to a boil.
- With a wooden spoon , stir in the flour all at once. Continue stirring until the dough leaves the sides of the pan and forms a ball.
- Transfer the hot dough to a large mixing bowl or the bowl of a stand mixer with paddle attachment. Let the dough rest for 2 minutes.
- Beat the hot dough on low speed for 1 minute. Quickly beat in the first egg, beating until thoroughly blended into the dough. Continue beating in the remaining eggs, one at a time, beating well after each addition.
- Beat in the shredded cheese, bacon, cayenne, and freshly ground black pepper. Continue beating until the dough is smooth and well blended.
- Using a tablespoon measure or small cookie scoop, drop the dough onto the parchment lined baking sheets. With moistened fingers, smooth any peaks on top of the mounds of dough. If peaks are left, they tend to over-brown or burn.
- Bake the puffs for about 20 to 22 minutes, until nicely puffed and golden brown.
- Serve and enjoy!

- 1. Using a sharp knife cut a cross-hatch pattern into the bread. To do this slice the bread into 1/2 inch slices, making sure not to cut into the bottom crust. After you make the cuts in one direction, it is easiest to get an extra set of hands to squeeze the loaf together to cut it in the other direction.
- 2. Place the bread onto a large piece of foil and curve up the edges to form a packet. Then place the thin slices of cheddar cheese in between the cut slices. Then sprinkle the top with the crumbled bacon. Set aside.
- 3. In a large microwave safe bowl, melt the butter. Then all the dried herbs and spices. Mix all together and let it sit for a minute. Pour the butter herb mixture all over the bread.
- 4. Wrap the foil all the way around the round of bread and place on a baking sheet. Place in preheated 350^ oven and bake for 15 minutes.
- 5. Unwrap the bread and bake for another 10-15 minutes or until the cheese is melted and begins to brown. Remove from oven and place on serving plate. Have your guests tear pieces off to eat. OMG! ENJOY!

These make a great snack or lunchbox treat, really simple to make, they can be eaten hot or cold. Ham can be used instead of bacon if you prefer.

- Place bacon, cheese, onion & flour in a bowl.
- Combine milk, egg & mustard and add mixture to dry ingredients.
- Line an oven-tray with baking paper, spoon tablespoonfuls of the mixture onto the tray, allowing enough space for spreading.
- Bake at 200.C for 20 mins or until golden.
- Can be eaten hot ot cold.
CHEESY BACON BREAKFAST BUNS

- Preheat the oven to 425 degrees F.
- To make the dough, whisk together the flour, sugar, baking powder, baking soda and salt in a deep bowl.
- In a separate bowl or measuring cup, whisk together the buttermilk and 6 tablespoons of the melted butter. Pour over the dry ingredients, and stir together with a wooden spoon until it forms a shaggy dough.
- Dump the dough onto a lightly floured surface. Using your fingertips, gently press the dough out into a 12-by-8-inch rectangle. Sprinkle the cheese on top, leaving a 1/4-inch border. Evenly sprinkle the bacon over the cheese. Roll the dough into a log, starting from the longest (12-inch) side nearest you. Pinch the ends closed. Cut into 8 equal pieces.
- Using a pastry brush, use 1 tablespoon of the butter to coat the bottom and sides of an 8-inch round cake pan. Arrange the rolls, cut-side down, in the pan. Gently press them down with your fingertips to flatten slightly. Brush the tops of the buns with the remaining melted butter.
- Bake until golden brown and the cheese is bubbly, 23 to 25 minutes. Cool in the pan for 5 minutes before serving.

Steps:
- In a microwave safe bowl cook the bacon pieces ( the kind used for salads) for approximately 40 seconds and let cool. This gives them a head start on being crispy.
- In a bowl combine: mayo, garlic powder, and onion powder until smooth.
- Once mayo mixture is complete add in bacon pieces and cheese and combine well and set aside.
- Slice baguette so that pieces are about a fingers width. Line cookie sheet with aluminum foil.
- Take bread slices and spread mayo mixture evenly on top and place in rows on cookie sheet.
- Bake slices at 350°F for approximately 8-10 minutes or until crisp and golden. Let stand for 5 minutes and serve warm.
