BACON, EGG, AND CHEESE BREAKFAST BOMBS
Cinnamon roll dough is stuffed with crispy bacon, scrambled eggs, and Cheddar cheese to make these family-friendly breakfast bombs.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 8 minutes. Drain bacon slices on paper towels.
- Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch pie plate.
- Melt 1 tablespoon butter in a nonstick skillet over medium-low heat. Pour in eggs; cook, stirring often with a spatula, until soft and fluffy, 3 to 5 minutes. Transfer to a plate to cool. Season with salt and pepper.
- Remove cinnamon rolls from the packaging. Stand each roll on its side and press down into a rectangle, trapping the cinnamon sugar layers. Roll each rectangle into a thin 6-inch circle.
- Spread 1 tablespoon cream cheese over each circle of dough. Layer 1/4 cup scrambled egg, 1/4 cup Cheddar cheese, and 1 tablespoon bacon pieces on top. Bring dough up and over the filling, pinching edges together to enclose filling completely.
- Place rolls seam-side down in the prepared pie plate.
- Heat remaining 1 tablespoon butter in a small microwave-safe bowl until melted, about 10 seconds. Brush over rolls. Season with salt and pepper.
- Bake in the preheated oven, rotating halfway, until rolls are a deep golden brown, 20 to 22 minutes. Transfer pie plate to a wire rack; let rolls cool for 15 minutes before serving.

GRAMPA RAY'S BACON BUNS
Steps:
- Filling: Chop bacon into small pieces; fry until crisp and drain off the fat. If adding onion, chop finely and cook with the bacon. Chop ham into small pieces. Combine ham with bacon mixture and grind in meat grinder or food processor. Cool in refrigerator. This may be done 2 to 3 days in advance. This mixture also freezes well.
- Dough: Heat milk in a saucepan. Add butter to melt. Add sugar and salt and cool. Dissolve yeast in 1/2 cup of this liquid until yeast is activated, about 5 minutes. Beat 5 eggs slightly and add to remaining milk and butter mixture; blend and add to the yeast mixture. Add flour and use a dough hook to mix in a standing mixer for at least 5 minutes. Place in a greased bowl until doubled in size. Punch down and let rise until doubled again.
- Roll out dough on a floured board to 1/8-inch thickness. Use a 4-inch round cutter or a clean tin can to cut the dough. In each circle place a lump of filling in the center, close the dough over, pinch all corners together, seal, and turn over so that seam is on bottom. Place on a baking sheet in rows. Let rise until doubled.
- Preheat oven to 350 degrees F.
- Combine egg yolk and water in a small bowl and brush over top. Bake for 15 minutes.
CHEESY BACON STRAWS

- Preheat the oven to 375 degrees F and fit a baking sheet with a wire rack.
- In a small saucepot, mix the maple syrup, red pepper flakes, orange juice and 1/4 cup water. Bring to a boil, then remove from the heat.
- Line up the bacon slices on the wire rack and brush with the hot maple syrup mixture. Sprinkle some cheese on each piece of bacon. With a skewer in hand, fold the end of a piece of bacon in half lengthwise and press the skewer through the end. Do this to 4 pieces of bacon, spreading them out evenly across the skewer, and place the skewer on the baking sheet. Twist the bacon pieces into long spirals so as to create straws. Take another skewer and skewer the bottom of each piece of bacon to keep the bacon twisted. Do this to all the bacon.
- Bake until the bacon browns, about 35 minutes. Let cool slightly on the rack; the bacon will get crunchy as it sits. Serve immediately.
CHEESY BREAKFAST BUNS
A recipe from the Canadian Wheat Board. First time I made them, my kids loved them. I freeze individually for lunches and snacks. Very cheesy! I've also made them the night before and refrigerated them overnight and baked in the morning.

- DIRECTIONS FOR BUNS.
- Combine warm water and sugar.
- Add yeast and let stand until mixture bubbles.
- Combine mild, yeast mixture, oil and salt in a large bowl.
- Add flour to form a dough that is soft but not too sticky.
- Knead 10 minutes by hand or 5 minutes in a mixer on low speed.
- Place dough in a lightly oiled bowl.
- Cover with plastic wrap and let rise until doubled in volume ( approx 1-1 1/2 hours).
- Punch down and knead in cubed and grated cheese.
- Divide into 16 - 18 pieces.
- Shape into rounds.
- Place on parchment paper lined baking sheets.
- Cover with plastic wrap.
- Let rise until doubled about 45 minutes.
- Preheat oven to 375 degrees F.
- DIRECTIONS FOR GLAZE.
- Carefully brush rolls with beaten egg mixed with water.
- Sprinkle with grated cheese.
- Bake in preheated oven for 25 minutes until well browned.
- Remove from baking sheets and cool on wire rack.
- Enjoy.

- To make the dough: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. In a large bowl, combine all of the ingredients in the order listed, mixing and kneading until you’ve made a soft, smooth dough.
