CHEESY HAM CASSEROLE
This easy cheesy ham casserole is the perfect way to use up your leftover ham and stretch it to feed a crowd!

Steps:
- Preheat oven to 400°F. Mix together topping ingredients, set aside.
- Cook shells al dente according to package directions. Drain well.
- Meanwhile, melt butter, flour and seasonings in a saucepan. Allow to cook 1 minute.
- Slowly add in cream and milk while whisking after each addition. The mixture will seem thick at first but will smooth out with each addition.
- Once all of the cream/milk is added, whisk while bringing to a boil over medium heat. Allow to boil 1 minute.
- Remove from heat and stir in 2 ½ cups cheddar, gruyere cheese, and parmesan until smooth.
- Mix cheese sauce with cooked pasta and ham and place in a 9x13 pan. Add topping and remaining ½ cup of cheese.
- Bake 22-26 minutes or until heated through and topping is browned. Cool 5 minutes before serving.

- Heat the oven to 350 degrees and spray an 8x9" baking pan. Fill a pot with water and heat over medium heat. Add the potatoes and boil until tender when pierced with a knife, about 8 minutes. SEE NOTE Drain the potatoes and set aside. In a skillet over medium heat, add the butter and once it begins to melt add the onion. Saute until tender, about 3 to 4 minutes. Dump the onion and butter into the pot with the potatoes and add the broccoli, ham and cream cheese. Stir to combine, not worrying about spreading the cream cheese as it should be left in clumps and dump into the baking dish. Top with cheese and bake at 350 degrees fahrenheit for 25 to 35 minutes or until heated through. Top with bacon the last minute and serve! Cook's note: It's key that you cook the potatoes until tender during this step or they will still be too raw even with baking for the dish to be enjoyable.
CHEESY HAM & BACON BREAKFAST CASSEROLE
Wow, not only does this breakfast casserole taste delicious it smells wonderful too! The croissants are what makes this special. They add a fabulous buttery flavor to the dish that other breakfast casseroles can lack. The ham and bacon are a tasty pair and the glorious cheese is melt-in-your-mouth delicious.

- 1. The evening before, gather and prep ingredients.
- 2. Spray a 13" x 9" baking dish with butter flavored cooking oil spray or grease with real butter.
- 3. Evenly distribute torn croissants and bread in baking dish.
- 4. Evenly distribute chopped ham, minced shallots, baby Swiss and Monterey Jack over bread; set aside.
- 5. In a mixing bowl, whisk together 4 eggs and about 1/2 cup of the milk, until well blended; whisk in the salt; add remainder of milk in several stages, whisking well after each.
- 6. Slowly pour milk mixture all over the casserole.
- 7. Scatter small amount of extra-sharp cheddar over casserole. Lightly press down on the casserole with large spoon or impeccably clean hands (as Julia Child would say!) to help the bread soak up the liquid.
- 8. Cover dish tightly with aluminum foil; place in refrigerator overnight.
- 9. The next day, approximately 1 1/4 hours before mealtime, preheat oven to 350 degrees F.
- 10. Remove casserole from refrigerator; temporarily remove foil; scatter finely crumbled bacon over top.
- 11. Cover with foil; place casserole dish on a baking sheet; bake at 350 degrees for 30 minutes, remove foil, rotate baking sheet and bake, uncovered, for an additional 30 minutes.
- 12. Allow to cool for a few minutes, then scatter chives over the top. Serve immediately. Cover and refrigerate leftovers.
CHEESY LEFTOVER HAM AND MASHED POTATO CASSEROLE
This is something I did one night when I had a bunch of leftovers that turned into one of my favorite comfort foods. You could switch out just about anything for anything of a similar type, chicken for the ham, different soups, etc. Make it as is or use your imagination.

- Preheat the oven to 375 degrees F (190 degrees C).
- Mix 1/2 of the Cheddar cheese and 1/2 of the onions into the mashed potatoes. Spread potato mixture over the bottom and up the sides of a 2-quart casserole dish to form a shell.
- Combine ham, frozen peas and carrots, mushroom soup, mustard, garlic, and pepper in a bowl; mix well. Spoon mixture into the mashed potato shell. Cover loosely with aluminum foil.
- Bake in preheated oven for 45 minutes. Remove from oven and sprinkle remaining Cheddar cheese and onions over the top. Bake uncovered until cheese is melted, about 5 minutes. Remove and let rest for 5 to 10 minutes before serving.

- Cook bacon in skillet until crisp; remove bacon, and drain on paper towels, reserving 1 tablespoon drippings in skillet.
- Crumble bacon; set aside.

- Spray a 9-inch square baking dish with cooking spray. Place bread slices in a single layer in the bottom of the prepared baking dish.

CHEESY BACON AND GRITS CASSEROLE

- Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels., Meanwhile, in a Dutch oven, bring water, milk and salt to a boil. Slowly stir in grits.
