- To prepare the baked potatoes, preheat the oven to 350°F. Place the potatoes in an 8" x 8" baking pan. Cover the pan with foil and bake until soft, about 1 hour. When the potatoes have finished baking, let them cool until you're able to handle them comfortably. While the potatoes are cooling, make the cheese sauce and the filling. To prepare the cheese sauce, melt the butter in a small sauce pot. Add the flour and cook, while stirring, for 30 seconds. Add the salt, pepper, and milk. Bring the mixture to a simmer, stirring constantly. When the sauce has thickened, remove from the heat and add the cheese. Stir until the cheese is completely melted. To prepare the filling, brown the ground beef with the onion in a small sauté pan over medium heat. Drain off the extra fat and place the meat into a medium-size bowl. Add the salt, black pepper, Worcestershire sauce, mustard, ketchup, dill relish, and cheese sauce to the bowl and set aside. Once the potatoes have cooled, cut an opening, lengthwise, from the top of the potato. Scoop out the flesh, creating a shell. Take 1/2 cup of the potato flesh and chop it into small pieces and set aside. Repeat with the remaining potatoes. Place the empty potato shells back into the baking pan. To assemble the baked potatoes, fold in the reserved potato flesh with the ground beef mixture. Fill the prepared potato shells with the mixture and bake for 45 minutes.

- Preheat oven to 425 degrees. Wash potatoes and poke 2 or 3 vent holes in each with a fork. Bake potatoes in oven until done, about 1 hour. (Poke with a fork and if fork goes in easily they are done). Remove potatoes from oven and allow to cool for 10 minutes. Slice potatoes in 1/2 lengthwise and scoop pulp into mixing bowl being careful not to break skin. Mash potatoes with butter, cheese, milk, and chives. Taste-test and adjust seasoning if necessary with salt and pepper. Spoon mashed potatoes back into skins and place in a 9 by 13-inch dish. Return to oven and heat thoroughly.
HAMBURGER STUFFED BAKED POTATOES
This is one of my favorite meals that my mom taught me to make. She taught me to cook, but she seldom used a recipe. So when I ask her how much of an ingredient to use, she often answers "until it looks right"! So I think this is the first time this recipe has been written down. So if it doesn't look right, add a little more of this or a little less of that!

- Preheat oven to 400 degrees. Clean potatoes. With a fork, poke each potato 3 times on both sides. Generously rub each potato with olive oil then lightly salt entire potato. Place potatoes in oven directly on middle rack. Bake 45 minutes to an hour, or until tender, turn potatoes over ½ way through baking. Baking the potatoes this way will ensure that the skins are crunchy so they won't tear when stuffed.
- After potatoes are done. Remove them from oven and set aside to cool. Reduce oven temperature to 350 degrees.
- While potatoes are cooling, in a large skillet brown ground beef and chopped onion on medium heat, breaking ground beef apart into small chunks.
- Dice the mushrooms into small chunks. Add mushrooms and garlic to cooked ground beef, salt and pepper the mixture. Cook mixture until mushrooms are tender.
- Mix in cream of mushroom soup and approximately a ¼ of the soup can of milk (to rinse out the remaining soup in the can and thin the soup a little. Add a little more milk if the mixture is too thick to stir easily.). Heat to near boiling then reduce heat to simmer.
- While the ground beef mixture simmers, slice each potato lengthwise. If possible, try to cut the potatoes so that each half has a flat side so they won't tip over when stuffed.
- Carefully spoon out the white of the potatoes and place in a mixing bowl. Don't scrape out all of the white, leave a little so that the skins aren't flimsy. Place the skins in a 9.5 x 13.5-inch baking pan and set aside.
- Add the butter and cream cheese to the potatoes and beat with an electric mixer. Slowly add milk until the potatoes are fluffy and creamy. I test for the correct consistency by taking a spoon full of potatoes and turning the spoon sideways. If the potatoes stick to the spoon, then they're done.
- Fill each potato skin to the rim with the ground beef mixture. Spoon mashed potatoes on top of each filled potato then top them with the shredded cheese.
- Bake uncovered for 20 minutes or until the cheese is melted and the mashed potatoes are hot. Sometimes, just before I remove them from the oven, I broil the potatoes to make the cheese a little crispy on top.

- 1. 1. Preheat oven to 450°F. Prick potatoes several times with a fork and place them directly on oven rack. Bake until tender, 50 to 60 minutes. 2. While potatoes are baking, heat the oil in a deep skillet over medium heat. Add the onion and cook until slightly translucent, about 10 minutes. Add the beef, stirring to break it up, and cook about 5 minutes, until browned. 3. Stir in the Worcestershire sauce, tomato paste, Parmesan cheese, 1/2 tsp salt, and pepper to taste. Cook another 5 minutes. 4. Remove potatoes from oven and set aside until cool enough to handle. Cut them in half lengthwise and carefully scoop out the flesh into a mixing bowl, leaving some behind to keep the shells intact. Mash potatoes lightly with a fork, then mix in the butter, yogurt, and 1/4 tsp salt. Set aside. 5. Fill each potato shell with about 2 Tbsp of the cooked hamburger mixture, then top with about 3 Tbsp of the potato mixture, mounding slightly. Top with a slice of American cheese and bake until melted, about 5 minutes. Serve immediately.

- Heat garlic and olive oil in skillet, add ground beef. Cook over medium heat until browned. Drain fat, add salt and pepper to taste. Scrub and prick potatoes. Bake at 400' for 1 hour or until done.
- When cool enough to handle, cut a thin slice from the top of each potato, scoop out the pulp, leaving a 1/4" shell. Place the pulp in a medium bowl and set aside.
- Place the potato shells on a baking pan.
- Add milk and butter to pulp and beat until smooth. Add 1/2 cup of cheddar cheese. Place into a storage bag, express air form bag and zip close. Cut a tip from the corner of the storage bag. Fill potatoes with cooked ground beef. Pipe potato mixture atop hamburger. Sprinkle with remaining 1/2 cup cheddar cheese.
- Return to oven and bake at 400' for 10 minutes, or until heated through and cheese is melted.
