2 pounds ground beef
1/2 yellow onion, diced
1 cup breadcrumbs
1 egg
2 tablespoons Worcestershire sauce
1 teaspoon salt
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon ground pepper
1/3 cup milk
8 ounce mozzarella cheese, cut into chunks

Steps:

  • Preheat oven to 350 F. Lightly spray a 9 by 13 pan with nonstick cooking spray.
  • In a large mixing bowl, combine beef, onion, breadcrumbs, egg, Worcestershire, spices and milk. Knead with hands until combined.
  • Divide the meatloaf in half. Press one half into the prepared pan.
  • Place the cheese down the center of the meat. Top with remaining beef and press down to seal sides.
  • Bake for one hour in preheated oven.
  • Let rest 5 to 10 minutes before serving.

1 medium-large loaf of bread, not pre-sliced
1/2 cup (1 stick) butter, melted
3 tablespoons Bartenura Olive Oil
3 cloves garlic, minced or 3 cubes Gefen Frozen Garlic
1/2 red onion, finely diced
1 teaspoon Haddar Dijon Mustard, or more to taste
1 chili pepper, finely chopped
handful of chopped parsley
salt
pepper
9-10 ounces (250-300 grams) shredded mozzarella cheese, or any other type of shredded cheese

Steps:

  • Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • In a bowl, combine the melted butter with the olive oil, garlic, onion, mustard, chili, parsley, and salt and pepper to taste.
  • Slice the bread, but don't cut it all the way through to the base, so the slices remain attached at the bottom. Next slice lengthwise, again not all the way through, to get small diamond-shaped pieces.
  • With a spoon, pour the seasoned butter between the slices and over the bread.
  • Working carefully, fill the cuts evenly with shredded cheese, so that the whole loaf is full of cheese but still retains its shape.
  • Wrap the loaf well in aluminum foil and bake for 15-20 minutes. Remove from the oven and unwrap the top half of the bread. Return to the oven so the cheese turns golden and bubbly, about five to eightminutes more. Serve hot, straight from the oven, on a wooden surface or a nice serving platter.

ITALIAN CHEESE-STUFFED MEATLOAF

1 1/2 lb lean (at least 80%) ground beef
2 cups soft French bread crumbs
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 cloves garlic, minced
1 can (8 oz) pizza sauce
1 1/2 cups shredded provolone cheese (6 oz)
1 jar (7.25 oz) roasted red bell peppers, drained, chopped
1/4 cup chopped ripe olives

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
  • On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.
  • Bake 40 minutes. Remove from oven; spoon remaining pizza sauce over loaf. Insert meat thermometer so bulb reaches center of loaf.
  • Return to oven; bake 15 to 20 minutes longer or until loaf is thoroughly cooked in center and thermometer reads 160°F. Let stand 10 minutes before slicing.

1 1/2 lbs ground beef
26 -28 ounces spaghetti sauce, ragu chunky garden style is what I recommend
1 egg
1/4 cup plain breadcrumbs
2 cups of shredded mozzarella cheese
1 tablespoon finely chopped fresh parsley
salt and pepper, however much desired
wax paper

Steps:

  • Preheat oven to 350°F.
  • In large bowl mix beef, 1/3 cup of sauce,egg, and bread crumbs.
  • Season with salt and pepper.
  • Roll out wax paper on table and flatten mixture on it.
  • Shape into a rectangle.
  • Sprinkle 1 1/2 cups of cheese and parsley down center leaving 3/4 inch border.
  • Then roll the meatloaf like a jelly roll tightly and be sure when rolling to pull the wax paper off.
  • Press and seal the ends closed put in to pan.
  • Bake uncovered 45 minutes. Pour remaining sauce and cheese on top and bake an additional 15 minutes or until cheese is melted.

2 eggs
1 cup breadcrumbs
1/4 cup onion, chopped

Steps:

  • Combine ground beef, one cup spaghetti sauce, eggs, breadcrumbs, onion, parsley, salt and pepper.
  • Mix well.
  • Divide meat mixture into thirds.
  • Spread 1/3 in the bottom of an ungreased 9x5 inch loaf pan.
  • Cover with half of the Mozzarella cheese.
  • Repeat layers, ending with meat.
  • Bake at 350 degrees Fahrenheit for 30 minutes.
  • Spread meatloaf with reserved sauce.
  • Bake for an additional 30 minutes.

1 large egg
3 tablespoons whole milk
1/2 cup dry bread crumbs
1/2 teaspoon Italian seasoning
1/2 teaspoon salt

Steps:

  • In a bowl, combine the first seven ingredients; mix well. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 10x6-in. rectangle. Sprinkle with mozzarella cheese to within 1/2 in. of edges. Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling. Seal seam and ends. Place seams side down in a greased 11x7-in. baking pan. Bake, uncovered, at 350° for 45 minutes or until meat is no longer pink and a thermometer reads 160°. Let stand 10 minutes before slicing.

¼ teaspoon red pepper flakes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
  • Make a V-shaped cut in the baguette, leaving ends intact. Lift out V-shaped wedge. Hollow out baguette gently to make a long, skinny bread bowl, being careful not to cut through the bottom or sides. Place baguette on the prepared baking sheet.
  • Whisk eggs in a bowl. Add milk; whisk until well blended. Stir in fontina cheese, spinach, bacon, sun-dried tomatoes, black pepper, and red pepper flakes. Pour mixture slowly into the prepared baguette, spreading evenly with a spoon.

HAM, POTATO & CHEESE STUFFED LOAF



Ham, potato & cheese stuffed loaf image

For a casual weekend lunch, bake your own bread stuffed with oozing cheddar

500g pack bread mix
2 tsp mustard powder
500g bag new potato
500ml tub crème fraîche
175g extra-mature cheddar , grated, plus a little extra to scatter on
small bunch parsley , chopped
a little plain flour , for dusting
1 bunch spring onions , sliced
400g thick sliced lean ham , diced, any fat removed
1 tbsp olive oil , for greasing
1 egg , beaten

Steps:

  • Tip the bread mix into a large bowl and stir in the mustard powder, then make up following pack instructions. Cover with oiled cling film and leave to rise in a warm spot for 45 mins-1 hr until doubled in size.
  • Meanwhile, bring a large pan of salted water to the boil, add potatoes and cook for 10-12 mins until tender. Drain, leave in a colander until cool enough to handle, then peel off skins and chunkily dice.
  • Mix the crème fraîche, cheddar and parsley, then season really well.
  • Roll out just under half the dough on a floured surface to a 25cm circle - it's easier to use a rolling pin and stretch it with your hands at the same time. Lift onto a floured baking sheet that will fit into the freezer. Evenly pile the potatoes on top, leaving a good 2-3cm border. Dot half the crème fraîche mixture on. Follow with the spring onions, then the ham, then dot remaining crème fraîche mixture all over the top. Roll out remaining dough as you did the first, to a little bit bigger than 25cm. Brush the border of the bottom of the pie with water, then lift the top onto the pie. Trim if you need, then press and roll up the border edge to seal. Do this all the way around, then press with the prongs of a fork to really seal it well. The pie is now ready to freeze, brush some cling film with a little oil and wrap it up well. Freeze for up to 2 months or, if cooking immediately, bake the stuffed loaf for 1 hr at 180C/ 160C fan /gas 4 until golden
  • Cooking from frozen: Bring the pie out of the freezer in the morning and leave at room temperature for about 3 hrs.
  • Heat oven to 160C/140C fan/gas 3. Brush the frozen pie with beaten egg, scatter with a little more cheese if you like, and cover with foil. Bake for 1 hr, then remove the foil and bake for 1 hr more until golden and crisp - poke a skewer into the middle and check it's piping hot all the way through.

3/4 cup gluten-free white rice flour cracker crumbs (from 4.4 oz box crackers)
1 can (18 oz) Progresso™ Vegetable Classics French onion soup
1 1/2 lb extra-lean (at least 93%) ground beef
1 teaspoon salt
3/4 teaspoon thyme leaves
1/4 teaspoon pepper
1 egg
6 slices (1 1/2 oz each) provolone cheese
Hot cooked mashed potatoes, if desired

Steps:

  • Heat oven to 350°F. In large bowl, stir cracker crumbs and 1 cup of the soup until well mixed; let stand 10 minutes.
  • Add beef, salt, thyme, pepper and egg to cracker crumb mixture until well mixed. Spread half of beef mixture into ungreased 8x4-or 9x5- inch loaf pan. Cut 3 slices of the cheese into 1/2-inch strips. Arrange strips in center of loaf to within 1/2-inch of sides and ends of pan. Top cheese with remaining beef mixture covering completely to sides of pan.
  • Insert ovenproof meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until beef is no longer pink in center and thermometer reads 160°F. Arrange remaining cheese slices, overlapping, on top of meatloaf. Top cheese with 1/4 cup of the remaining soup (making sure to get onion pieces). Bake an additional 5 minutes or until cheese is melted. Let stand 5 minutes; remove from pan. Heat remaining soup until hot, serve with meatloaf and potatoes.
