Roasted Butternut Squash Soup with Goat Cheese image

Tender and sweet roasted butternut squash with tangy goat cheese, aromatic thyme, little heat, and crunchy pumpkin seeds! Just bring the bread, my friends, because dinner is ready! Summers are still far from over in my part of the world..... but with yesterday's Caprese Focaccia Bread a.k.a Transition Recipe, I have decided to declare 'fall'. (finally!) :) Starting today with one of my favorite food of the season - 'Roasted Butternut Squash Soup'. Seriously, when Butternut squash is in season, I can't have enough of this soup! 'Roasting' is by-far the BEST way to make any squash extra special. It brings out natural sweetness and nuttiness of squash.... Plus also make'em very tender and extra delicious. Once roasted, squash is ready for any transformation- from creamy soup, pasta sauce to a flavorful salad..... options are endless. But today we are talking Roasted Squash Soup. For soups, other than roasting, I have few more tricks to bring out 'squash' flavor even better! Let's me share with you, how?!To make a best tasting butternut squash soup every-time, I take care of following:1. Cook squash properly (such as roasting) because proper cooking brings out sweetness of squash.2. Add little tang in soup to complement the sweetness. Such as lemon and/or goat cheese.3. Add aromatics and spices for flavor and little kick. Such as aroma of thyme and hint of pepper flakes. Not just Butternut squash, or any squash..... any creamy soup needs some textural contrast! So, always add some crunchy surprise to a creamy one-note soup. Like for this one, I added crunchy toasted Pepita Seeds (pumpkin seeds) and some fresh pomegranate seeds for burst of freshness in every bite.It feels perfect to snuggle with a warm bowl of comforting soup.... watching TV on a cold winter evening! Isn't it?However, I think the best time to enjoy 'spiced soups' is during changing season. I know, many of you will say, 'soups are for winter season only'. In my humble opinion, soups.... specially spiced and vitamin-loaded vegetable soups are very useful during 'changing weather'. Such soups provide warmth and abundance of Vitamin C to support immune health and makes you strong against changing weather conditions. No doubt, soups are good during winters. They are even better during changing season. (Especially during summer to fall and fall to winter.)Here are few of my favorite Butternut Squash and other soups which are mostly on my dinner table during this time of the year.1. 1.5 lbs Butternut Squash, 1 average size Butternut squash, peeled and diced
3-4 Thyme, thyme sprigs
1 tbsp Olive Oil
Salt and Black Pepper
1/2 Yellow Onion, peeled, rough chopped
1 tbsp Olive Oil
2 Garlic, cloves, minced
1/2 Cup Goat Cheese
3-4 Thyme, fresh or frozen, thyme sprigs
Salt and Black Pepper
1/3 Cup Pomegranates, seeds
2 Cup Vegetable Stock, low-sodium, or use water
1 tbsp Lemon, juice
1/4 tsp Red Pepper Flakes, use 1/2 tsp if you like little more heat
1/4 Cup Pumpkin Seeds, or papita seeds
1 tbsp Olive Oil
Salt and Black Pepper, as per taste

Steps:

  • Preheat oven at 400 degrees F (200 degrees C). Toss butternut squash with olive oil and garlic in a large bowl. Season with salt and black pepper. Arrange coated squash on a baking sheet.
  • Roast in the preheated oven until squash is tender and slightly browned, 20 to 25 minutes. Add onion, half way through cooking.
  • Discard thyme sprigs. Transfer content to a food processor in batches and puree using 1-2 vegetable stock (or water). Be careful, it will be hot.
  • Once squash is pureed smooth. Set it aside.
  • Heat 1 tbsp oil in heavy bottom pan. Add garlic, red pepper flakes, and thyme and saute for 30 seconds. Add pureed butternut squash, lemon juice, and remaining vegetable stock. Bring to boil. Reduce heat and simmer for 10 minutes (covered). Now, add goat cheese and mix well.
  • Mix well so as to fully melt goat cheese in soup.
  • While soup is simmering, coat pumpkin seeds in oil, salt, and pepper. Spread on a baking sheet and bake in oven for 7-10 minutes or until are lite brown and toasted. Keep an eye as these burn quickly.
  • Taste and adjust salt. Also add black pepper to taste. (add more stock if soup is thick for your liking.) Serve hot garnished with toasted pumpkin seeds and pom seeds. Enjoy!

4 small baking pumpkins (such as hooligan or sugar pie), acorn squash or sweet dumpling squash
2 teaspoons sugar
Kosher salt
3 tablespoons unsalted butter
1/2 small onion, chopped
Kosher salt
2 sprigs thyme
1 medium butternut or kuri squash (about 2 pounds), peeled and cut into 1-inch pieces
1 teaspoon sugar
3 tablespoons heavy cream (optional)
Freshly ground pepper
Pepitas (hulled green pumpkin seeds)
Sourdough and/or pumpernickel croutons
Paprika, chili powder or Spanish pimenton
Crisp prosciutto, serrano ham or bacon
Fried onions
Fried sage or parsley leaves

Steps:

  • Make the bowls: Preheat the oven to 400 degrees F. Use a paring knife to cut a large circle around the stem of each pumpkin (make a zigzag cut, if desired). Remove the lid and scoop out the seeds and fibers. Sprinkle the inside of each with 1/2 teaspoon each sugar and salt. Place the pumpkins and lids on a baking sheet; roast until tender, 20 to 35 minutes, depending on their size.
  • Meanwhile, make the soup: Melt the butter in a large saucepan over low heat. Add the onion and 1 teaspoon salt. Strip the thyme leaves into the pot, increase the heat to medium and cook, stirring occasionally, until the onion is soft, about 5 minutes. Add the squash and sugar and cook, stirring, until glazed, 3 to 4 minutes. Add 5 cups water and bring to a boil. Reduce the heat to low and simmer, uncovered, until the squash is tender, 15 to 20 minutes.
  • Working in batches, transfer the soup to a blender, crack the lid to let steam escape and puree until smooth; return to the saucepan (or puree directly in the pan with an immersion blender). Stir in the heavy cream, if desired. Season with salt and pepper, and top as desired.

1 large butternut squash, peeled and cut into 1-inch cubes
2 cloves garlic, or more to taste, peeled

5 tablespoons avocado oil, divided

1 cup milk, or more as needed
½ cup half-and-half, or more as needed

4 ounces crumbled Gorgonzola cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Toss butternut squash, garlic cloves, and salt together in a bowl.
  • Combine 4 tablespoons oil and 1 tablespoon butter in a saucepan over medium heat; cook until butter melts. Pour over butternut squash-garlic mixture and stir until squash is evenly coated. Spread squash out on the prepared baking sheet.
  • Roast in the preheated oven until squash is soft and lightly browned, about 30 minutes.
  • Meanwhile, heat remaining 1 tablespoon avocado oil and 1 tablespoon butter in a pot over medium-high heat. Add onion and cook until soft and translucent, about 5 minutes. Add roasted butternut squash and 1/2 cup chicken broth. Bring to a boil, reduce heat, and simmer for 10 minutes. Remove and let soup cool slightly until warm, but no longer steaming hot. Stir in 1 cup milk, 1/2 cup half-and-half, and pepper.
  • Puree soup with an immersion blender until smooth. Add more broth, milk, or half-and-half if soup is too thick.
  • Ladle soup into bowls and sprinkle with crumbled Gorgonzola. The soup tastes best at room temperature.

4 tablespoons margarine
6 cups peeled and cubed butternut squash
3 cups water
4 cubes chicken bouillon
½ teaspoon dried marjoram
¼ teaspoon ground black pepper
⅛ teaspoon ground cayenne pepper
2 (8 ounce) packages cream cheese

Steps:

  • In a large saucepan, saute onions in margarine until tender. Add squash, water, bouillon, marjoram, black pepper and cayenne pepper. Bring to boil; cook 20 minutes, or until squash is tender.
  • Puree squash and cream cheese in a blender or food processor in batches until smooth. Return to saucepan, and heat through. Do not allow to boil.

2 tablespoons unsalted butter
5 ounces small diced onion (approximately 1 cup)
5 ounces small diced carrot (approximately 1 cup)
5 ounces small diced celery (approximately 1 cup)
1/2 teaspoon salt for sweating vegetables, plus more if needed at end of cooking
3 tablespoons all-purpose flour
1 quart chicken broth, heated to a simmer
1 tablespoon minced garlic
1 bay leaf
1 cup heavy cream
10 ounces Fontina, shredded
1 teaspoon Marsala wine
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
1/2 teaspoon white pepper

Steps:

  • Melt butter in large heavy-bottomed soup pot over medium heat. Add onion, carrot, celery, and salt. Sweat for 5 to 10 minutes or until the vegetables begin to soften, stirring occasionally. Sift the flour over the vegetables and cook, stirring constantly, for 2 to 3 minutes.
  • Gradually add the chicken stock and bring to boil, stirring constantly. Reduce heat to low and add the garlic and bay leaf. Cover and simmer for 30 minutes or until vegetables are soft.
  • Remove bay leaf. Turn off the heat, add the heavy cream, and then puree with an immersion blender or in a conventional blender*. Gradually add the cheese, 1 small handful at a time, and stir until melted before adding next handful. Stir in the Marsala, Worcestershire sauce, hot sauce, and white pepper. Taste and add additional salt if desired. If soup is not hot enough, return to a low heat until warmed through.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

1 large white potato, diced

2 tablespoons all-purpose flour
1/3 cup apple cider
4 cups low-sodium chicken broth
1 cup milk
2 ounces thinly sliced prosciutto, torn into bite-size pieces
2 cups grated sharp cheddar cheese, plus more for garnish
Chopped chives, for garnish (optional)
Crusty bread, for serving (optional)

Steps:

  • Melt 4 tablespoons butter in a large pot over medium-low heat and add the onion, apples, potato and squash. Season with salt and pepper and cook until the onion is soft, about 8 minutes. Stir in the sage and flour. Add the cider and cook over high heat, stirring, until thickened. Add the broth and milk, cover and bring to a boil; reduce to a simmer and cook, stirring, until the potato is soft, 8 to 10 minutes.
  • Meanwhile, heat the remaining 1 tablespoon butter in a large skillet over medium-high heat. Add the prosciutto and cook until crisp, turning occasionally, about 2 minutes. Drain on paper towels.
  • Add the cheese to the soup and stir over medium-low heat until melted. Puree in a blender in batches until smooth; season with salt and pepper. Garnish with the prosciutto, more cheese and chives, if using. Serve with bread, if desired.

ACORN SQUASH SOUP IN A SQUASH BOWL

6 acorn squash (5 to 6-inch diameter)
2 green apples, peeled, cored and cut into wedges
1 yellow onion, cut into wedges
2 tablespoons plus 1 teaspoon olive oil
2 sprigs fresh thyme, leaves picked
Kosher salt and freshly ground pepper
2 sprigs fresh sage, leaves picked and torn, plus more for garnish
Vegetable broth, as needed

Steps:

  • Preheat the oven to 400 degrees F. Halve the acorn squashes widthwise and scoop out the seeds and any loose fibers. Discard the fibers and reserve the seeds for garnish, if desired. Set aside the bottom halves of the squash as these will be soup bowls. Cut the top halves of acorn squash into large chunks and place on a baking sheet along with the apples and onions. Drizzle 2 tablespoons of the olive oil over the veggies, tossing to coat. Sprinkle with the thyme and some salt and pepper, and then scatter the sage leaves on top. Roast until dark golden brown, about 40 minutes.
  • Let the squash cool slightly, and then peel off the skin. Blend the squash chunks with the apples and onions in a blender until smooth, adding broth until desired consistency is reached. Pour into a saucepan and keep warm over low heat until ready to serve. If using the squash seeds as a garnish, turn the oven temperature down to 325 degrees F. Place the squash seeds on a baking sheet, drizzle with the remaining olive oil and sprinkle with salt. Bake until crispy, about 25 minutes.
  • Remove and let cool for 10 minutes before using. To make the squash bowls, slice about 1/2 inch from the bottom of each squash half so they will stay upright and not wobble around, spilling hot soup all over your guests. Place the squash in shallow bowls and fill with hot soup. Garnish with a fresh sage leaf and a sprinkling of roasted seeds.

1 spaghetti squash, halved, seeds removed (about 2 pounds)w
Salt and fresh grated black pepper to taste
3 tablespoons butter
1 large butternut squash, about 3 pounds
2 leeks, trimmed, cleaned and split from the white tip to the green
7 tablespoons olive oil
1 cup sliced white onions
6 cups fresh chicken broth (or canned)
4 ounces fresh goat cheese
8 thin slices French baguette, cut on a bias
1/4 cup grated Parmesan

Steps:

  • Preheat oven to 400 degrees.
  • Place the halved spaghetti squash, cut side up, in a baking dish, and dust with salt and pepper. Put a tablespoon of butter in the center of each. Bake for 1 hour. Set aside.
  • Cut the butternut squash into three pieces. Remove the hard outer skin and the seeds. Cut the flesh into 1/3-inch cubes. (You should have 5 cups.)
  • Slice the leeks coarsely widthwise. (You should have about 1 1/2 cups.)
  • Place 2 tablespoons olive oil and 1 tablespoon butter in a pot over medium heat. Add the onions and cook, stirring, until wilted, about a minute. Add the leeks and cook, stirring, for 5 minutes.
  • Place the 5 cups of butternut squash in the pot with the onions and leeks. Cook for 5 minutes. Add chicken broth. Bring to a boil, reduce heat, and simmer for about 20 minutes, or until the butternut squash is just soft.
  • Puree the squash mixture to a fine texture in a blender or food processor. Add a tablespoon of olive oil and adjust seasonings. Keep warm.
  • Place the goat cheese in a mixing bowl. Slice the cheese coarsely. Add 2 tablespoons of olive oil and salt and pepper to taste. Chop up the cheese with a spoon to a rough texture.
  • Scrape the flesh from the spaghetti squash, and place in a bowl. Season with salt and freshly ground pepper to taste.
  • Brush the baguette slices with 2 tablespoons of olive oil, and toast until crisp. Sprinkle Parmesan over the toast. Arrange some spaghetti squash over the bread. Season with salt and pepper to taste.
  • Place some of the crumbled goat cheese in the bottom of each soup plate. Ladle the soup over. If desired, garnish the soup with some of the remaining spaghetti squash.

4 (14 1/2 ounce) cans vegetable broth
1 cup water
1/4 teaspoon ground red pepper
2 tablespoons butter or 2 tablespoons margarine
2 (9 ounce) packages cheese ravioli
2 tablespoons molasses (optional)

Steps:

  • Peel Squash. Halve lengthwise. Remove seeds and discard. Cut squash into 3/4 inch pieces.
  • Combine squash, broth, water, and ground red pepper in a large pot. Cook, covered, over medium heat for 20 minutes or until squash is tender.
  • Transfer 2 cups of the squash-broth mixture to a blender container. Carefully blend, covered, until smooth. Repeat with remaining cooked mixture, blending 2 cups at a tme.
  • Return blended mixture to large pot. Bring just to boiling. Immediately reduce heat. Simmer, uncovered, 5 minutes. Add the butter or margarine; stir until just melted.
  • Prepare ravioli according to package directions.Drain.Ladle hot soup mixture into bowls.
  • Divide the cooked ravioli among individual bowls. Drizzle with molasses (optional).

This recipe comes from my Other Half, We like it in the summertime, although we do serve it up throughout the year--usually hot when first made & then as a cold leftover!

1 1/2 lbs summer squash, yellow
1 1/2 lbs zucchini
1 quart half-and-half
1 (16 ounce) package Velveeta cheese
1 onion, medium, chopped
1 teaspoon garlic salt

Steps:

  • Slice the squash into a large sauce pan & cover with water.
  • Cook until very tender, then drain off the water.
  • Divide the squash & mash half of it, then in the original sauce pan, mix all the squash together with the half-and-half.
  • On medium heat, reheat the squash mixture.
  • Meantime, cut the Velveeta cheese into chunks.
  • When the squash is again hot, add the cheese to the hot mixture, stirring it often as the cheese melts.
  • The chopped onion & garlic salt can be added as the cheese continues to melt.
  • When all the cheese is melted, the soup is ready to serve hot. If it's to be served cold, let it cool, then chill it in the refrigerator.
