PITA SIRNICA (BOSNIAN CHEESE PITA)



Pita Sirnica (Bosnian Cheese Pita) image

Sirnica is a Bosnian Cheese Pita made from phyllo pastry dough with fresh cottage cheese, mozzarella cheese, and melted butter.

Number Of Ingredients 6

1 lb (450 grams) of Cottage Cheese.
11 oz. (310 grams) of Mozzarella Cheese.
7 tablespoons (100 grams) of Melted Butter.
14 oz. (400 grams) of Phyllo Pastry.
2 Eggs.
Salt to taste.

Steps:

  • Take a large bowl and put in it cottage & mozzarella cheese. Two eggs and salt to taste. Mix well all the ingredients.
  • Spread a phyllo sheet on the table. Grease it with melted butter and cover it with another layer of phyllo pastry.
  • Spread a little bit of filling over the shorter edge of the dough.
  • Roll the phyllo sheets like a cigarette.
  • Put the phyllo sheets on the baking tray and rotate them as a spiral.
  • Repeat steps 2-5 until you will use all the filling and phyllo pastry.
  • With a brush, spread all the remaining butter evenly on the entire surface of the Sirnica.
  • Optionally, for an extra taste and texture, pour some of your favorite seeds over. I used sesame, flax, pumpkin, and sunflower seeds.
  • Preheat the oven to 350°F (180°C). Bake the Bosnian Pita for about 35 minutes.

4 whole wheat pita pocket halves
1/4 cup reduced-fat margarine, melted
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons grated Parmesan cheese
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Split each pita pocket in half. Cut each into two triangles; place split side up on a baking sheet coated with cooking spray. , In a bowl, combine the margarine, garlic powder, onion powder, salt and pepper; stir in the Parmesan cheese. Spread over triangles. Sprinkle with mozzarella cheese. , Bake at 400° for 12-15 minutes or until golden brown.

2 whole wheat pita bread
1/4 cup reduced fat margarine
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons parmesan cheese, grated
1/2 cup part-skim mozzarella cheese, grated

Steps:

  • Seperate each pita into 2 rounds, making 4 rounds of bread.
  • Cut each round into 4 triangles - you will have 16 triangles total.
  • Place each triangle inside up on a lightly greased or sprayed baking sheet.
  • Combine remaining ingredients except for mozzarella and spread over triangles.
  • Sprinkle with mozzarella.
  • Bake at 400 degrees for 12 - 15 minutes or until golden brown.
  • Watch carefully so they do not burn.

Although this is called Cheese Pita, it is actually made with phyllo. My kids just call it cheese pie.

1 lb phyllo dough (1 pkg.)
1 lb cream cheese, or
1 lb ricotta cheese
3 eggs, beaten
1 teaspoon salt
1/2 lb butter, melted

Steps:

  • thaw phyllo.
  • preheat oven to 350 degrees.
  • lay thawed phyllo on a flat surface and cover with damp tea towel.
  • mix cheese, eggs and salt - set aside.
  • on an 11" x 17" greased baking pan lay phyllo to cover.
  • brush with melted butter.
  • repeat until there are six layers.
  • spread cheese filling evenly over phyllo, leaving about 1/2" around the edges.
  • cover with phyllo brushed with butter.
  • repeat until there are eight layers.
  • tuck in egdes.
  • brush top lightly with butter.
  • bake until top browns, approximately 30 minutes.
