MELTY ONION TOASTS

Make the onion topping for this simple gastropub-style starter up to two days ahead

50g butter
6 onions , sliced
2 tsp golden caster sugar
splash of brandy (optional)
6 slices sourdough bread
300g mature cheddar , sliced
watercress and your favourite dressing, to serve

Steps:

  • Heat the butter in a sauté pan, add the onions, then sprinkle over the sugar. Sweat the onions for 20 mins over a medium heat, stirring them occasionally, until sticky and golden. Add the brandy, if using, reduce down to nothing, then season to taste. This onion topping can be made 2 days ahead and kept covered.
  • Heat oven to 200C/fan 180C/gas 6. Toast the bread, spread the onions over, then top with slices of cheese. The toasts can be made up 1 hr ahead. Place on a baking tray, then bake for 15 mins until bubbling and golden. Serve each piece of toast on a plate with a sprig of dressed watercress next to it.

Here's the very best cheese toast: you won't believe the flavor! This easy recipe is a great fast meal or snack: it takes only 5 minutes to make.

1 large slice bread (artisan, no knead, whole wheat, etc)
1/2 tablespoon mayonnaise
1/2 teaspoon Dijon mustard
1 pinch kosher salt
1/3 cup shredded cheese (we used a mix of mozzarella, sharp cheddar, and Parmesan)
1 pinch dried oregano

Steps:

  • Preheat a broiler. Place the bread on a baking sheet and broil it 1 to 2 minutes per side, until lightly toasted.
  • Spread the bread with a thin coating of mayonnaise, then Dijon mustard. Top with 1 pinch salt. Add the shredded cheese and sprinkle with oregano.
  • Place the toast bake on the baking sheet. Broil again for about 1 to 2 minutes until the cheese is melted. Enjoy!

3/4 cup chopped sweet onion such as Vidalia or Walla Walla
1/2 cup mayonnaise
14 slices party (cocktail) rye or pumpernickel bread
1/4 cup freshly grated parmesan

Steps:

  • Preheat broiler.
  • Stir together onion and mayonnaise. Arrange bread slices in 1 layer on a baking sheet and broil 6 inches from heat until lightly toasted (watch carefully). Remove from oven and turn toasts over. Spread evenly with onion mixture and sprinkle with cheese and freshly ground pepper.
  • Broil hors d'oeuvres until topping is bubbling and lightly browned, 1 to 2 minutes (watch carefully to prevent burning).
  • Serve warm.

ONION SOUP WITH CHEESE TOASTS

2 tablespoons unsalted butter
2 tablespoons olive oil
4 pounds onions (about 8 medium), halved and thinly sliced
4 garlic cloves, thinly sliced
Coarse salt and ground pepper
1/2 cup port or Marsala wine
2 cans (14.5 ounces each) low-sodium beef broth
2 cans (14.5 ounces each) low-sodium chicken broth
2 cups water, plus more if needed
Cheese Toasts (recipe follows)

Steps:

  • In a 5-quart Dutch oven or other heavy pot, heat butter and oil over medium. Add onions and garlic; season with salt and pepper. Cover and cook, stirring occasionally, until onions have softened, 12 to 15 minutes.
  • Uncover and continue to cook, stirring occasionally, until onions are dark golden brown, 25 to 30 minutes more. (If bottom of pot gets too dry, add about 1/4 cup water and scrape up browned bits with a wooden spoon.)
  • Add port and cook until syrupy, 2 to 3 minutes. Stir in both broths and 2 cups water, season with salt and pepper, and bring to a simmer. Cook 20 minutes. To serve, divide among eight bowls and top each with a cheese toast.
  • Freezing Soup
  • Let soup cool completely, then pour into airtight containers, leaving 1 inch of space at top. Freeze up to 3 months. Thaw in microwave or overnight in refrigerator and reheat over low.

2 ounces unsalted butter
1/4 cup whole milk
1 tablespoon cornflour
fresh ground pepper

1/2 cup unsalted butter
3 tablespoons all-purpose flour
2 large white onions, chopped into small pieces
4 cups homemade or low-sodium canned chicken stock
4 cups homemade or low-sodium canned beef stock
1 teaspoon salt
1/4 teaspoon freshly ground pepper
18 thin slices French baguette
2 cups shredded Swiss cheese (1/2 pound)

Steps:

  • In a large, heavy-bottom saucepan, melt the butter over medium heat. Add flour and chopped onions; saute, stirring occasionally, until onions are soft and translucent, about 15 minutes.
  • Pour chicken and beef stocks into the saucepan, and stir to combine. Bring mixture to a boil. Reduce heat to low, and simmer 15 minutes. Add salt and pepper.
  • Heat broiler. Ladle soup into six 16-ounce ovenproof bowls, and float 3 slices of bread on top of each. Sprinkle the cheese over bread slices in each bowl, dividing evenly. Place bowls on a rimmed baking sheet, and broil until cheese is melted and bubbling, about 2 minutes. Let soup cool slightly before serving.

bunch spring onions , finely sliced
100g cherry tomato , quartered
100g gruyère , grated
1 tbsp dried chilli flakes
splash Worcestershire sauce
green salad , to serve

Steps:

  • Heat grill to high, put the bread onto a baking sheet, then grill until just golden on both sides. Mix the onions, tomatoes, cheese and chilli flakes in a bowl, then scoop onto the toast. Shake over a little Worcestershire sauce and grill again until golden and melted. Serve with green salad.
